I say…FRIDAY NIGHT PIZZA NIGHT EVERY NIGHT.
About our Weber Grill
I got Tony the Weber Genesis II for his birthday earlier this year because our old grill went kaput and frankly, it was just way too small. I had heard great things about Weber from my sister-in-law and decided to give it a shot. After using it the past few months, we really appreciate how it has plenty of space for grilling and is also great for entertaining. With three burners and three separate temperature controls you can easily monitor temps and cook everything super evenly. The grill fits about 20 burgers, so it’s perfect for feeding a crowd! My personal favorite thing? It’s easy to clean!
Step 1: prepare your grill
Preheat your grill to 425 degrees F. Once the grill is preheated, scrape off any bits with a grill brush that were left behind when you last grilled. I love using my Weber Genesis II gas grill because it has 3 burners for super even heating at each part of the grill. Preheating your grill will ensure that your pizza gets nice and golden brown, and that the dough does not slip through the grill grates.
Step 2: get your pizza dough + toppings ready
- Whether you’re making pizza dough from scratch or buying it pre-made, it’s important to use pizza dough that’s at room temperature so that’s it’s easy to work with. You’ll want to use about 1 pound of pizza dough per pizza, which means you might have to cut your store-bought dough in half.
- At this point you’ll also want to get all of your pizza toppings out, measured, and near your grill so that you can easily top your pizza when the time comes.
- Place parchment paper on a hard surface (like a cutting board) and add plenty of olive oil to the parchment paper. Use your hands to coat the parchment paper with olive oil
- Add your pizza dough onto the oil coated parchment paper, and stretch it out into a rectangle or circle until the dough no longer pulls back. Drizzle the top of the dough with olive oil to prevent sticking.
Step 3: add your dough to the grill
To easily add your pizza dough onto the grill grates, simply take your parchment paper where the dough has been stretched out, and flip it over so that the dough lands safely onto the grate. Then, peel your parchment paper off of the back. This takes practice the first few times, but I’ve found it’s the easiest way to do it!
Step 4: grill your pizza
- Once your pizza is safely on the grill, close the lid and let it cook for just about 2-3 minutes until it’s nice and golden brown on the bottom. The pizza may produce some bubbles on the top, but those will settle once you flip.
- After 2-3 minutes carefully check the underside of the dough using tongs. The bottoms should have nice grill marks and be golden brown. If it is, go ahead and flip your pizza.
- Quickly and carefully top your pizza with all of your desired toppings. Head to the end of the post for some delicious combinations and recipes!
- Close the lid of your grill to allow the pizza to fully cook and cheese to melt – about 3-4 minutes more. At this point you’ll want to check the temperature gauge of your grill to be sure it climbs back up to 425. The Weber Genesis II makes it super easy to adjust the temperature using the three control knobs. To keep your pizza from burning on the grill be sure to utilize the temperature gauges and adjust as necessary.
- After a few minutes your toppings should be nice and melted, and the bottom of your pizza should be golden brown. To remove from the grill, simply grab your pizza with tongs and slide it onto a cutting board. Allow the pizza to cool for a few minutes before cutting into slices or squares!

I use my BBQ all summer long to beat heating up the kitchen. I never would have thought of grilling pizza. It looks awesome though.
We do, too! Hope you get a chance to try grilling pizza – it’s so fun and SO delicious.
I tried this over the weekend and it was perfect. I love a crispy crust!
Amazing! So happy to hear that. I’m all about that crispy crust.
Just made this. It was the first time I ever grilled a pizza. instructions were simple, Parchment paper was an outstanding shortcut. pizza was crispy and delicious.
Amazing! So happy to hear that 🙂
Great idea! I’ve done this a few times and it does take some practice to get it right. I’m slowly getting the hang of it, though, and each batch keeps coming out better. Loved the BBQ chicken pizza idea! Thanks for including the topping suggestions at the end of the post and posting such a versatile how to recipe! This is one I will keep coming back to.
Absolutely! One of my go-to’s in the summer 🙂 Enjoy!
Great article you shared. Always i made pizza on my oven but didn’t make it in a grill. In my home, I have a charcoal weber grill. I want to make a pizza on my grill. Thanks for your recipe. Of course, I shared my experience with you. I hope it will be a better experience.
Perfect! Let me know if you give it a try!
I never post on recipes but this is a first… definately deserving. We have been grilling pizzas for quite a few years and have always used flour to roll out our dough. Your suggestion for parchment paper and olive oil just brought the pizzas to a whole new level and made is soooo much easier!!! Thanks so much for sharing!
So easy and fun! Glad you enjoyed 🙂
great recipe, but if i may suggest the PizzaQ from bbqpizzagrill you can control the temperature applied both to the bottom and the top so it doesnt burn, woks amazing
Great tip!
Perfect!!! My husband and I were super intimidated by grilling the dough, but it was so easy and left our grates clean. I think this is going to be our new summer Friday night dinner. We both preferred it to most take out pizzas and we’re talking about all the topping combos we were going to try next! 11 month old loved it as well- but if he didn’t like pizza we would have to look into a return policy
It’s easier than you think! So glad it was a hit. Haha gotta love the pizza!!
This is the quickest and easiest pizza recipe ever. I get the store bought dough in a bag and you have a super delicious pizza with perfect crust in like, 10 minutes. Life changing method, been craving it already this Spring.
I’m SO glad you love it, Violet! Isn’t grilled pizza just the best?!
if adding vegetables, do they have to be cooked first?
It depends on the veggies you use and how thinly you slice them! If you’re worried about them not cooking enough, you can definitely saute them ahead of time 🙂
Love this idea! Do you think it would work the same with your cauliflower crust or would I need to adjust the grilling time at all?
Hmm I’m not so sure the cauliflower crust would hold together well on the grill, sorry to say! You could definitely grill any toppings you put on that crust though 🙂
This was absolutely one of the best grilled pizzas I’ve made. The crust was perfect!!
This is so great, glad you are loving this recipe!
Hello! Love this recipe and just bought a new Weber Genesis Grill 2. Can you advise about exactly which settings you use on each burner? My Weber heats up super quickly to 500 plus with all 3 burners set to high and I noticed in the video you had the burners set to half way ( medium?) When you were adding the toppings. Thanks again!!!
Hi! I preheat my oven to 425 degrees F, so they should be around medium / medium-high! Be sure to just keep an eye on the temperature gauge and adjust accordingly 🙂
We use our Weber grill to make pizza all the time – it’s the only way to make pizza! I got my husband the Weber pizza stone insert and we love it!
Came out so good! Instructions were excellent!
