I gotta tell ya, when Monique begins a recipe description with “the best ever”… believe her, lol. I can’t understand what took me so long to make this but my husband was out of the blue craving chicken soup tonight. I just knew, “our girl” Monique would have me covered. The flavors are truly delicious and I can’t believe I have never used fresh turmeric before, game changer for sure. I doubled the herbs, and everything else as written. The peas…wonderful addition, and we love pearl couscous. Thank you so much for your beautifully crafted creations. I am now rolling up my sleeves to make my way through your cookbook.

I tripled this recipe when I made it. I did use avocado oil instead of the coconut because I didn’t have any, made my own oat flour (had never done this before, just put oatmeal in food processor), subbed one cup of the oat flour with coconut flour and used 1:1 GF flour and these are a hit! Make them for sure. Even my husband liked them and he is picky when it comes to GF.

Really yummy – I doubled the recipe because muffins freeze so well. I made some without the topping for the non-nut eaters and just added a tiny bit more maple syrup to increase the sweetness for those. I used sliced almonds on the ones with topping b/c I didn’t have macadamia nuts and they worked great.
