I LOVE kabocha squash, butternut squash, sweet potatoes, pumpkins, kale, cauliflower and dates (YESSSSSSS)! Eggplant is another superb ingredient. Seriously craving some air-fried eggplant with tomato sauce–it tastes like Italy to me!

As much as I love summer, I do look forward to fall cooking with all the layers of flavors and textures. The biggest challenge is “where on this list to start?” Thanks for compiling it.
Awww yeah! I forgot about the pumpkin peanut butter soup! As soon as it cools back down here in the south (we just had false fall) I’m putting it on the menu!
