When I was younger, I despised tomato soup. The flavors never seemed to call to me, nor did I ever crave grilled cheese.
My favorite was Mom’s chunky beef stew that simmered and bubbled on the stovetop for hours in our small yellow duplex kitchen back in Minneapolis. It wasn’t until high school that I began to crave the comfort of creamy tomato soup after Mom started buying Progresso’s hearty tomato.
In fact, I remember us making cheesy pepper jack quesadillas and canned tomato soup on a frequent basis. Mom worked a lot to support our family and during my teenage years, the two of us didn’t have much time to enjoy meals together. Quick and easy was exactly what we needed.
Today, Tony and I still buy canned or boxed soup. We have nights where we’re depleted of energy (especially with our three boys!) and need something quick and easy to nourish ourselves. Even though I have a food blog, it doesn’t mean I’m making dinner every single night.
Sometimes my days are focused on baking, snacks, or breakfast, and by the end of the day, the last thing I’m thinking about is what to eat for dinner.
However, when I do have time to make a good tomato soup, I get a little giddy inside.
And since it’s tomato season, I couldn’t help but present this beautiful bowl of tomato basil soup to you. It’s homemade, made with fresh tomatoes that are roasted to perfection in the oven. Mmmm.

Ingredients homemade tomato basil soup
The best part about this tomato basil soup recipe is how simple the ingredients are. We’re using all fresh ingredients that still create an incredible flavor and texture. This tomato basil soup is wonderfully creamy without any cream or dairy (making it vegan and dairy free too)! Here’s what you’ll need:
- Fresh tomatoes: roasting the tomatoes helps them to sweeten and slightly caramelize leading to a sweet, rich tomato soup flavor.
- Garlic: let’s not forget how delicious roasted garlic is. The sweet, lick-your-finger good flavor is essential to this recipe — and it’s easy to roast right alongside the tomatoes.
- Fresh basil leaves: basil has a slightly sweet flavor and should be added to the recipe before serving, as too much heat can remove its flavor and sometimes turn it slightly bitter. This herb also helps to cut the acidity of the tomatoes.
- Onions: this was one thing I did that was a little different was the addition of caramelized onions! Once they’re caramelized, they’re blended right into the soup. AMAZING!
- Additional soup add-ins: I like to use vegetable broth, but feel free to use chicken broth or even water if you’d like. You’ll also want some dried oregano and plenty of salt & pepper.
- Optional add-ins: I’ve included optional ingredients that you can add to the soup to make it your own in the ingredients below! If you’d like, this is your chance to get a little creative.
Personally, I like to top it off with shaved or grated parmesan cheese and a little extra basil. Sometimes we’ll also stir in a can of light coconut milk for a creamy sweetness. SO GOOD!
What tomatoes are best for homemade tomato soup?
I like to use plum or roma tomatoes for homemade tomato soup because they have the best flavor when roasted. I recommend using garden fresh or organic to keep the soup as flavorful as possible!
Should you peel the tomatoes?
I typically leave the skin on the tomatoes and keep the seeds in as well, but feel free to remove both if you’d like. It’s really about your preference.
Customize your tomato basil soup recipe
While this fresh tomato basil soup recipe is vegan and dairy-free, there are tons of delicious ways to make it even creamier and richer.
- Add some whole milk or heavy cream for a super creamy texture.
- Keep this tomato basil soup vegan & dairy-free by adding creamy regular or light coconut milk.
- Add a sprinkle of parmesan cheese for tangy, cheesy goodness.
- Add a tablespoon or two of butter or vegan butter for an even richer flavor.
Homemade tomato basil soup in 4 simple steps
- Roast your tomatoes. Halve your tomatoes and place them on a parchment-lined baking sheet along with the garlic cloves. Drizzle it all with olive oil, season with salt and pepper, and roast them up.
- Caramelize your onions. While the tomatoes are roasting, you can make your caramelized onions. This takes some patience! Add your sliced onions to a large pot with some olive oil, then cook them over medium heat, stirring occasionally, until they have completely caramelized and turned golden in color.
- Blend it all up. Once tomatoes and garlic are done roasting, allow them to cool for 10 minutes, then add them to a food processor or high-powered blender and blend until smooth. Add basil and caramelized onions and blend again. Alternatively, you can add the tomatoes to the large pot and use an immersion blender. It’s really just about what you have available to you.
- Heat & enjoy! After blending, transfer the soup back to the pot, turn to medium low heat and add in vegetable broth, oregano, and salt and pepper to taste. From there you can mix in any additional add-ins you want (as listed in the ingredients). Let the tomato soup simmer before serving, garnish with parmesan cheese, and serve with grilled cheese for the perfect meal!
How to store homemade tomato basil soup
- In the refrigerator: store any leftover tomato basil soup in an airtight container in the fridge for up to 4-5 days. Reheat it back on the stovetop or in the microwave.
- In the freezer: add the leftover soup to a freezer-friendly, airtight container and place it in the freezer for up to 3 months. To reheat, let the sauce thaw in the fridge before heating it through on the stovetop or in the microwave.
What to serve with this tomato basil soup
Of course, you’re more than welcome to make a grilled cheese sandwich to go with it. My favorite lately has been sprouted bread, pepper jack, turkey, spinach, sliced tomato, dijon mustard and a drizzle of honey. SO GOOD. Here are some more sides to serve with:

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- For the roasted tomatoes
- 3 pounds roma or plum tomatoes, cut in half
- 8 cloves garlic, peeled
- 3 tablespoons olive oil
- Freshly ground salt and pepper
- For the caramelized onions:
- ½ tablespoon olive oil
- 2 yellow onions, thinly sliced
- Additions to the soup:
- ½ cup packed basil leaves
- ½ teaspoon dried oregano
- 1-2 cups water or vegetarian broth, depending on how thick you want the soup
- Freshly ground salt and pepper, to taste
- Optional add ins:
- Light/Regular coconut milk for a creamy vegan soup
- Whole dairy milk/heavy cream for a creamy texture
- Parmesan cheese, for a tangy, flavor enhancing flavor
- A tablespoon or two of butter, for richer flavor
Instructions
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. Place halved tomatoes and garlic cloves on the baking sheet and drizzle with 3 tablespoons of olive oil. Generously season with salt and pepper. Roast in the oven for 40-45 minutes.
- While the tomatoes are roasting, you can make the caramelized onions: Add 1/2 tablespoon olive oil to a large pot and place over medium heat. Add the onion slices and stir to coat the onions with olive oil. Cook, stirring occasionally. Check onions every 5-10 minutes until they have completely caramelized and turned golden in color. This ususally takes 20 minutes.
- Once tomatoes and garlic are done roasting, allow them to cool for 10 minutes, then add them to a food processor or high powered blender and blend until smooth. Next add basil and caramelized onions and blend again. Alternatively you can add the tomatoes to the large pot and use an immersion blender. It's really just about what you have available to you.
- After blending, transfer back to pot, turn to medium low heat and add in oregano, vegetarian broth and salt and pepper to taste. From there you can add in any additional add-ons you want (as listed in the ingredients). Allow tomato soup to simmer 10 minutes before serving. To serve, garnish with parmesan cheese and serve with grilled cheese, if desired. Serves 4.

I just tried this recipe and it is a great combination of wonderful fresh ingredients. Unfortunately the tomatoes I used weren’t as juicy and rich as those in your recipe. So I added a bit of red pepper flakes to add character to it and finished it off with a dollop each of sour cream and basil pesto. That did tre trick. Next time I’m shopping for the best organic juicy tomatoes I can find. Thanks for sharing this great recipe!

I am not a fan of tomato soup … well I wasn’t unti now. Made it tonight with grilled cheese sandwiches. It was delish. I added a bit of heavy cream and grated cheese. My kitchen was a disaster (I am a disorganized cook) but the soup was delicious.

This recipe could be served in a gourmet restaurant. It was absolutely delicious. We used fresh Roma tomatoes, garlic and onions and fresh basil we did not add any cream, cheese or salt and pepper at the end. And it was absolutely delicious! We will be making it often.
This is seriously delicious! I tweaked by using a cup of Better Than Bullion Chicken Bullion, omitting the coconut milk, and adding a cup of cream after blending. My Vitamix blender has a soup setting and the soup is hot by the end of the cycle, so I returned it to the pot I had carmelized the onions in to add the cream and keep hot while I baked my homemade runzas….great combination!

3 pounds is about 20-24 roma or plum tomatoes! This recipe serves 4 people and should yield about 8 cups.

My soup did not come out looking like yours. I wonder could it be that I did not use the Roma tomatoes. Also I wondered how long to blend if you dont want it to be smooth I prefer it to have bits in it.

There wasn’t even a can of Italian tomatoes in the pantry – only half-a-mason jar full in the fridge. Put those in a hot (425) oven in a deep pyrex with a big handful of sun-dried tomatoes; added water to cover to simulate roasting…
Meanwhile, roasted about ten cloves of garlic in olive oil – ooh ah
and carmelized a chopped red onion.
Blended all this once cooked with half another mason jar full of vegetable broth that was in the fridge, which had made from the fiber left from juicing carrots and beets-
plus only dried basil and oregano
And it was creamy with some chunks from the sun-dried tomatoes and out of this world delicious!!!!!

Can you make the Tomato Basil Soup with canned tomatoes? The garlic, onions, and basil along with the other ingredients I can manage this time of year. But garden fresh tomatoes i can’t make magically. Or could i use my homemade V-8 juice? If you can grow it, its usually in my V-8 juice. This looks amazing and I’ve craved it for 2 days. Thought i had some last night, and today, getting out ain’t happening! Ice with snow on top!
I wouldn’t recommend using canned tomatoes, and would roast up some fresh tomatoes if possible (even if they aren’t romas!) Hopefully the ice + snow melts for you soon!
Made this soup yesterday for 14 people. It was a hit! That, BTW, is an understatement. It was think and delicious and the perfect start to a vegan dinner. Next time I’ll try it as a cream of tomato soup but it seems perfect without out anything but the tomatoes, onions, basil, a bit of oregano and salt and pepper. Thanks.

I made this for dinner last night and I love how easy it was to make but it still had all the flavors! I do a lot of reading before deciding on a recipe, and it’s pretty rare to find one that uses all fresh ingredients. The difference is clear, though, MAKE THIS ONE! The only changes I made were adding some nutritional yeast for a cheesy flavor and I served them in homemade bread bowls (double yum!). Thanks for another delicious recipe! I made this last night AND this morning and OMG!!! Last night I used plums, this morning romas and I like it better with the romas. I did add the butter to last nights batch and while it was delicious, I really think this recipe is fantastic as is! The only change I made was 2 heads of garlic as opposed to 8 cloves as my heads were small. Oh and I may have been heavy handed on the basil 😉 but I mean….it’s basil! C’mon! Lol. Absolutely loved this and it has now been added to my binder!!

I haven’t tried freezing this recipe (it doesn’t last long in my house!) but I think it should freeze well, especially because it doesn’t have any cream or dairy in it. It makes 4 servings! Enjoy 🙂

This roasted tomato basil soup is fabulous! I just finished making it and it tastes so fresh and delicious. It is so easy to make, I can’t wait for more tomatoes to ripen to make another batch! This has become my favorite way to use our abundance of tomatoes and basil.

I doubled the recipe. It made three quarts. I have them in the water bath canner at the moment. This soup is delicious! I hope my green tomatoes ripen soon so I can make more. Super easy too!

I use what ever tomatos are ripe and ready in my garden the more verity the better i alway include some cherrys and 1 bradywine and whatever i have its so so good. I found the roasted tomato base with the blended onion is so delicious i use it as a start to pizza sause spaghetti and penne vodka it has changed my world i freeze that part and make anything from there.

Seriously….. whyyyyyy have I been using my food mill my whole life?! This is sooo much easier to blend the roasted tomatoes up with a stick blender! Wow I can’t tell you how happy I am with my tomato soup this year. It’s going into the freezer in jars with the other batches I did!

I bought 3lbs of vine ripened tomatoes recently, ‘cos they were on sale, and roasted them first with olive oil, s&p, balsamic vinegar and a sprinkle of sugar, then I looked for roasted tomato soup recipes, and stumbled upon this one.
I did seed and peel the tomatoes, but next time, I won’t bother. I like my soups fiber rich and chunky.
Other than the slight difference in roasting technique, and the above, I made the soup as per the recipe, adding fresh basil, a little heavy cream, and some Parm-Reg cheese.
It was fabulous! I ate all of it myself in two meals.
I will make this over and over again.

This was absolutely delicious!! My husband loved this. I used vegetable broth, but left out the coconut milk. It didn’t need it. I did add a little pecorino cheese on top and it really made the flavor pop. I love the that I now have something I can confidently serve my vegan/Vegetarian friends. The only thing I would try to do differently is to take the skin off the tomatoes. I did not like the mouth feel of the little skin pieces. I used an immersion blender to mix. Would a blender do better?

Just delicious! I also roasted 2 red peppers with the tomatoes and garlic. Plus seasoned these with dried thyme. Also added fresh parsley with the fresh basil. At end added a pint of half and half. Just fantastic! Will be bringing to my father who turns 90 today! Thank you so much!

I made this soup today and i REALLY had to doctor it up. Added a whole 48oz carton of vegetable broth, at leadt a half of can of tomato paste, and ton more salt and pepper as well as garlic and onion powder. I did follow the recipe word for word. I’m not sure whether the roma tomatoes were just flavorless or what but without my add-ins, i don’t know whether i could eat it. Husband totally agreed.
Hi Brandy – it sounds like the tomatoes most likely were not in season or not ripe enough. With flavorful roma tomatoes this soup should be perfectly delicious as-is!

I make broiled Roma tomatoes to get a slightly charred surface plus broiled fennel (instead of onions) plus garlic, oregano, a teaspoon of tomato powder and chicken broth. Garnish with dried basil and parmesan. Toasted cheese sandwich in an iron skillet tops it off.

And my only additional add in (besides a sprinkle of vegan parm to serve) was cayenne pepper and we like a little kick! This was the perfect tomato soup to pair with my vegan grilled “cheese” sandwiches. Definitely will be making again. This soup is absolutely delicious and I didn’t even follow the recipe exactly nor did I use any special tomatoes! I was in a rush so I roasted the onions along with the tomatoes and garlic and then followed the rest of the steps. Absolutely one of the best tomato soups I’ve ever had! Really easy and guaranteed delicious. The soup is delicious with some additional herbs as well, particularly if you add thyme while roasting the tomatoes. Highly recommend!

This soup is absolutely delicious! I mean you don’t want to stop eating it. My daughter, who is 41 and has never liked tomato soup, begs me to make this. Whenever I am given a lot of tomatoes I know exactly what I’m going to do with most of them. I actually used cherry tomatoes the last time because I was given a huge amount of them. Also, this soup freezes well, so you can save some for another day. Thank you so much for this recipe.

The soup has great flavor just as it is. I am having tomato skin issues. Every bite has a tomato skin curl in it. Was I supposed to remove the skins or didn’t I puree it enough?
I never remove the skins; it sounds like perhaps you just need to puree it a little more! Of course you are more than welcome to remove the skins next time if they are bothering you.
Thank you for this delicious and EASY recipe. I had no idea it was so simple to make, and I had a single rogue tomato plant which insisted on growing in the most inhospitable of places giving me tons of lovely fruits which I didn’t know what to do with. I made this using the Big Boy hybrid beefsteak tomatoes, but it worked just fine. I ended up not having enough for 3 pounds, so I used 1 can of diced tomatoes. My husband suggested those should have roasted as well, but overall I thought it came out just fine. Thank you again!

This last time we had some extra heat left in our outdoor pizza oven so I threw in my tomatoes, a bunch of peppers, garlic and onions and roasted them all in one cast iron pan. Dumped the roasted veggies in my instant pot with the remaining ingredients using unsweetened almond milk, heated on sauté, applied the immersion blender and snap….delicious roasted tomato and pepper basil soup is served! Added garlic croutons and Parmesan (for the non-vegans) and everyone was happy! Anfain, thank you for making your recipe available!

Do you think this recipe would can well? I’d like to make triple batch to can/bottle some for future meals. I would leave out the extra add ins until just before serving.

I used my homegrown early girl tomatoes (8 of them) and homegrown basil, plus I added a red pepper from the farmer’s market to my roasting sheet. Used chicken broth instead of veggie broth (‘cause that’s what I had) and coconut milk (about 3/4 cup of each). Everything else I followed the recipe!! Couldn’t find one with exactly all the ingredients I wanted to use, but this one was definitely the closest. It was my first time partially “winging it.” It made a little less than I expected, but I think that’s ‘cause I didn’t have a ton of tomatoes. I should have used the cherry tomatoes I had too.
Oh and I didn’t give it any stars ‘cause for some reason it wouldn’t let me give 5 and I didn’t want to only give it 3 (that was the max it would let me give).

The flavor of the soup is awesome! Next time I would modify it by peeling the tomatoes before roasting then as I don’t like the skins texture, I will also hold back half of the basil and add it 5 minutes before it’s done simmering with thaw oregano. I added about an 1/8t of lemon juice to my bowl to brighten it up.
Great tip with a squeeze of lemon juice – yum! And yes, feel free to peel your tomatoes next time if the texture is coming through to you.

Can you tell us what the amount of sodium is in this recipe? I want to make it for my dad, who just had heart surgery, but I need to verify its within his limit.
I don’t calculate sodium in recipes because all brands have different amounts that they usually add. However, since this uses fresh ingredients, it should be low in sodium. You can use a low sodium broth, or water instead and salt according to your father’s needs. Hope this helps!
I made this today and followed the recipe pretty closely. I was amazed at how much flavor the roasting added! And I used tomatoes I had frozen from my garden and it still worked! I had tried a recipe with a friend last year and she was adding all kinds of unnecessary and unhealthy ingredients trying to get good flavor. Now I see it’s because roasting them gives all the flavor we need! Awesome!! Thank you 😀

If someone is going to use the optional add-ins, how much would you use? I especially like the idea of adding heavy cream but what would be an appropriate amount – 1/2 cup, whole cup? That would be in addition to the water or vegetarian broth correct? Thank you
It really depends on how thick you want your soup. I recommend 1/2 cup and that can either be in addition or replacing some of the broth, but just depends on what kind of thickness you prefer 🙂

I loved this soup with the addition of the caramelized onions, which gives it a different depth of flavor. I did feel on a personal note that something was missing though, so I added chilli seeds which really boosted the flavors and a half can of coconut milk. I also personally love leaving the skins on and seeds in, which some recipes have you faffing about to unnecessarily remove them. Sometimes, depending on the tomatoes used, a quarter teaspoon of sugar can really bring out the sweetness in them. A wonderful warming tomato soup which I’ll definitely make again. Thank you 😊.

I really love this soup and it’s my go-to for tomato soup! I am a bit lazy, so I roast the onions with everything else instead of caramelizing, though one day I’ll do the right thing and I’m sure I’ll love it even more! Since this is made using fresh tomatoes which aren’t super flavorful all year round, I’ve found that adding a couple of tablespoons (or more, to taste) of tomate paste really helps amp up that wonderful tomato flavor. Very easy and quite tasty. I inlcuded the caramelized onion–I only used one onion and would use two next time for a little more sweetness. I also added a litle heaavy cream. I didn’t strain the seeds this time, but I might try that next timie as well. I served it with Disney’s Woody’s Lunch Box grilled cheese recipe–perfect combo. This soup would certainly complement cheese souffle as well.

I had a craving for tomato soup and this one turned out fantastic! Ended up using the nutri-bullet to blitz but had to treat the mixture in half to make sure it was chunky enough at the end. I used the veggie stock (1.5 cups) and it ended up being the perfect consistency. Asked for the ripest tomatoes at the fruit shop – not from the garden but next best thing.

Made it – FIRST of all, let me just say you are absolutely right that if you ever make tomato soup this way, you won’t want to go back to any other way. Unless you are in a hurry. I’ve known for so long about how roasting veggies/tomatoes makes them so much better, richer, brings out any natural sweetness – but had never yet done it with tomatoes. OH OH OH OH OH SOOOOOO GOOOOOD. The flavor was just unbelievable. Some homemade ‘garlic bread’ made with ciabatta rolls, and in heaven was I.

Used only garden fresh vegetable and added 1 teaspoon of sugar to curb the acidity. Wow was this a good soup. It was such a good soup my crew asked me to can it .
My food processor was broken so only used the immersion blender and the soup still came out great.

My question is, do you roast the tomatoes skin side up or the cut halves up? I have roasted tomatoes for years for canning, salsas, etc. But I roast skin side up and I blacken the skins and remove them. Would you use blackened skins in the puree, or not? Thank you. BTW, I roast basil stalks w/o leaves among tomatos & EVOO. Lots X flavor.
You can if you want but if the skins are blackened I might recommend not using them. Although, fire-roasted tomatoes are pretty delicious so who knows, it might be great! Totally up to you to experiment!
Hello! I was searching for a delicious tomato soup for canning, as I have a counter full of great harvest and have already canned or frozen other tomatoey goodness. So, I wanted to know your feelings on canning this amazing sounding soup. (I know safety precautions, so no worries), I guess my concern is would the fresh basil become bitter in the high heat canning process? I use dried in my canned marinara with no bitterness, so would you suggest using dried? Thanks for any advice, and I will try this recipe canned or fresh using big boy and pineapple tomatoes.

This will definitely be my new go-to recipe for tomato soup. I’ve made it twice this week! I used whole milk with better than bouillon instead of broth and it came out so creamy.

Excellent recipe. Used farm fresh end of season “bruised” tomatoes. Definitely add the caramelized onions. Made it twice.
Second time substituted light cream for 1/2 of the vegetable stock. Absolutely delicious.

Terrific recipe. I added about 2x the amount of fresh basil called for & I used a little butter when caramelizing the onions. Served with a dollop of sour cream. Excellent.
PS watch the garlic when roasting them with the tomatoes — if they start to burn, pull them out & let the tomatoes continue cooking.

just made this! i had to substitute dried basil for fresh and next time i make this i will be sure to use fresh because i think that will turn out smoother. also, i left the skins on and only blended for ~20 seconds so i had pieced of curled up tomato peel in the final product too.

My husband and I both have never liked tomato soup, but this is a game changer for sure! I added a roasted jalepeno pepper and heavy whipping cream. I was wondering if I could freeze this soup or can it without using the cream of course. Best tomato soup we have ever had!

Wonderful and easy! I used almost two heads of normal-sized garlic and a variety of tomato types from my garden. I added half a can of full-fat coconut milk and served the soup with grilled Gruyere and Fontina on thick sliced whole grain bread. Great game night dinner!
While the roasting and carmelizing may take more time than what it takes to make other tomato soup recipes, the flavors in this recipe cannot be matched! It is SO tasty and full of freshness! I will make this one from now on with all my garden tomatoes!

I just made this soup. Tastes great but I would recommend removing the seeds. I have used food processor and immersion blender and can still feel the seeds. Thanks for the recipe!!!

I am up to my eyeballs in fresh tomatoes. Making things to can or freeze. Which would you recommend for this recipe if I wanted to make a large batch while already roasting? Or could also use roasted tomatoes that had been frozen for later use as well?

The recipe was amazing! I am always amazed at how the roasting can bring out more flavor. my creative add-on was pesto. I made fresh basil that morning and placed a dollop on finished soup. Wonderful!

I have NEVER liked tomato soup.
This recipe has changed that opinion entirely.
I watched Love Island where they were making a ton of grilled cheeses and my partner insisted we make tomato soup to go with them. I refused any other recipe other than Ambitious Kitchens because I don’t think I’ve ever made a recipe of hers I didn’t like. This one was no exception. In fact I made a whole second batch of it to give to my cousin who just had a baby and hasn’t had a home cooked meal in a bit and she just about fell out of her chair.
For mine and my partners batch we used a homemade spicy veggie stock that gave it a tiny bit of heat and loved how that paired with grilled cheese!
Delicious soup. I just cut my onions into wedges and roasted them with my tomatoes to save a step and it makes them delicious soft and sweet. Made a pot for a family member who just had a heart attack and it was appreciated.
Greatest tasting tomato soup, Easy to prepare, able to get garden fresh Roma tomatoes and basil.
Excellent taste, only disappointment is that the recipe doesn’t make a lot, and I am not sure if doubling would taste as good.
Have made it twice, second time the Roma’s came from grocery store not a market stand, it did taste just as good.

Soup came out wonderful- was a little too thick with only 2 cups of broth so I used 3 and that made it a more soup-like consistency. I also added a little bit of smoked paprika and subbed the vegetarian broth for chicken broth.
My soup did come out kind of orangey, I honestly am not sure why that is, but its still delicious!

I made this recipe this summer and then canned the soup using a pressure canner. I can’t tell you how delicious it was. The carmalized onions and roasting the tomatoes was key!!! Wow. I’m still amazed. Grilled cheese!!!!!! Best soup ever.

This was legit the best soup I’ve ever tasted. And I messed up towards the end, adding the broth and oregano while it was still in the blender. Ah well, I transferred it to the pot and simmered it with parm and some milk and it was legit amazing. I cant wait to tuck into the left overs!

Please forgive me for the changes…but WOW, did this take me back! And starting completely from scratch, SO MUCH FUN!
So a few years ago, my now husband woke me up in the middle of the night telling me he had a surprise for me and I needed to get ready to take a special day trip. He never told me where we were going, but I soon figured it out as we were boarding a train out of DC headed to NYC! He had surprised me with a trip to NYC to see it in its Christmas cheer and celebrate my birthday while we were there. In NYC, I stumbled across a soup restaurant called “Hale and Hearty.” I fell in love with their Creamy Tomato Basil soup with Chicken and Orzo. I’ve been trying to copy it for years, and today, thanks to you, I finally got pretty close. 😉 I used your recipe as a base, then added about a pound of cooked chicken, 8 oz. of cooked orzo, and a combination of extra broth and milk to make it go further/thin out a bit. As I ate dinner tonight, I was taken back to that magical experience of NYC at Christmas time, walking the streets, drinking a cup of warm soup, all bundled up and busting at the seems with excitement. Thank you for helping me re-live a special experience during these crazy covid times!

Wow. Simple yet brilliant. Roasted the tomatoes with an entire head of garlic (about 13 cloves), and left out the oregano (didn’t have any on hand). Tomatoes were fresh from the garden, and basil from the window. No added water or cream, as the thickness without removing the middle of the tomato was absolutely perfect. I did blend in about a spoonful of mascarpone. Probably the best tomato soup I’ve ever had, and I dont usually care for tomato soup.
This soup is exceptional and easy to make. I add two parmesan cheese rinds to the final product and let is simmer for a bit for a creamy texture and added depth of flavor. I like to also add a few carrots to the tomatoes and garlic when they are roasting for the texture and sweetness from the carrots in the final immersion.

Here how good this recipe is: I ordered nearly 50 lbs of roma tomatoes from my farmers market to make enough of this soup to get is through the cold, SD winter.

OMG I made this last week as we have a very productive tomato crop and I wanted to use them up. This soup is absolutely to die for. We ate it twice last week and I am making it again tonight as I have thought about nothing since. I didn’t change a thing from the recipe. This recipe is great, The only change I made was to add a can of cannellini beans and a pinch of red pepper flakes before I puréed it. It ended up being creamy and smooth without cream.

Absolutely amazing! Didnt have fresh basil so I used dried. Didnt add anything after finishing. So rich and flavorful, like an expensive tomato bisque. Used tomatoes from my garden- romas, black krim heirloom, yellow cherry tomatoes. It all worked out!

The five stars is, admittedly, based on potential. The recipe looks killer. The problem is that tomato soup is a cold weather wonder, but fresh Roma tomatoes are….not. Does this recipe freeze well? If so, any tips?

I had a ton of garden tomatoes, fresh basil and onions so this was the PERFECT recipe to try out tonight and boy I’m glad I did! Delicious, easy, nutritious, and will go into my “keeper” book of recipes to make over and over! I used as many romas as I had, but added Cherokee purple tomatoes to my sheet pan as well. The roasted garlic and caramelized onions add such a great depth of flavor to this recipe! Thank you and I’m glad to find this website, as I will be looking for other yummy recipes on it too now!

Wow, I’m not a cook, but I had garden tomatoes to use up so tried this recipe. I used red pepper olive oil for the roasted tomatoes and garlic, and I added spinach at the end when boiling the broth. This was the best tomato soup I have ever tasted! It was fancy restaurant quality. My only complaint is that there were no left-overs! Delicious, will definitely make again!

Delicious!! My family LOVED this so much I decided to can it! Question however, how would you recommend canning this recipe?? I’ve looked through my books and they suggest a water bath, I’d prefer a pressure canning option. It’s not all THAT different from a spaghetti sauce so I plan on processing via that recommendation. Thoughts???

I have used waterbath method with great sucess for 2 years now. If you can it properly it should do just as well as spaghetti sauce. The acit in the tomatoes acta as a preservative. I do not add any dairy until I open and reheat it.

This is the most Amazing Tomato soup you will ever have. I made it 3 times last August with farm fresh tomatoes and invited different friends over each time to try it. They loved it so much they all made the recipe and it became their favorite too.
My favorite tomato soup recipe ever. In the colder months, I make it at least every other Saturday for lunch, served with parmesan cheese of course and some fresh ciabatta or focaccia bread as a side .. YUM!

Holy moly this soup is delicious! I used Roma tomatoes from my garden. The onions we used were so juicy that my toddler got his first experience with onions making you cry lol. I added a half a cup of heavy cream and only 1.5 cups of chicken bone broth. It’s rich and delicious!
Incredible recipe! If you need a homemade tomato soup recipe, look no further. I’ve made other tomato soups before, and they always taste too acidic….but not this one! The carmalized onions gave the soup some sweetness without added sugar, and I opted for veggie broth over water (about 1.5 cups). I went the immersion blender route to maintain a bit of texture, and I added in some cream at the end because…duh! 🙂 I will definitely be making this again!

Absolutely incredible soup! Cannot wait to make it again (and again!), especially this coming fall/winter. I have always been a little intimidated by the thought of roasting my own tomatoes for some reason… but this recipe made the entire process so easy and fun!! I added butter to the caramalized onions, as well as a touch of cream to the soup after it was blended. Also had our guests top their bowls w fresh parmesan. Served w homemade focaccia. A surprisingly very filling meal!
I’m very thankful I had the foresight to double the recipe, as my entire family, including my very picky toddler, devoured it. Can’t wait for leftovers!!

This recipe turned out unbelievable, cannot wait for cold weather! I used chicken broth because I did not have vegetable broth and not vegan so that works. . I think it is the Roma tomatoes and the fresh basil leaves that really make this dish outstanding!

I canned it but didn’t add the broth. I followed the canning instructions for a different tomato soup. I’ve eaten it since and thinned it out with half cream and half broth. Absolutely amazing! I carmelized the onions in my instant pot, immersion blended it all and strained it. I’m looking forward to eating it and canning more when I get home.

I just made this for the first time. I used my Ninja Foodi to roast tomatoes and garlic. I used chicken broth. I used more garlic than called for but it ended up being too garlicky, my bad. This turned out just fantastic! I will keep this for the next batch of tomatoes from the garden.

I love this recipe!! I have used it many times exactly the way that it is written. But, I found a really helpful shortcut if you don’t have the time to roast the tomatoes and garlic. I used fire roasted canned tomatoes. I added the garlic to the onions to carmalize instead of roasting with the tomatoes. Just wanted to share.

I made this soup tonight and ended up using it as pasta sauce. Not for me for a soup recipe but made an absolutely lovely pasta sauce! The flavours and texture are perfect for it.

Absolutely delicious soup! Agree keeping skins on! Only negative is it is so yummy, we didn’t have leftovers to freeze for the winter so had to wait for more tomatoes to ripen and make a double batch! Lol!

Hi! I have cooked this soup for maybe 50 times, but just now have a chance to leave a comment. I hated tomato soup because all I had ever tried were always one dimensional: sour. My husband loves tomatoes in any kind. He asked if I could make tomato soup that I DONT hate. I tried yours and we LOVE this. I think why it suits to my taste is, how it is not only sour, but has the sweet-savory taste from the caramelized onion. I am a big fan of savory, caramelized, roasted flavor and this is really spot on. So thanks for your recipe!!

I had so much fun making this soup! It was so rewarding to roast everything myself and watch it come together. I cut the top off a whole garlic bulb and roasted it that way and the cloves just melted out and smelled amazing. I also added coconut milk and it really helped mellow out the acidity from the tomatoes. My only addition that I think should really be apart of the recipe is balsamic glaze: I added about 2 tsps and it made all the flavours come alive. Loved this!!!

Absolutely perfect! I used some very ripe fresh plum tomatoes and a can of San Marzano tomatoes. I did slice onions thickly and just roasted lots of them along with everything else on a sheet pan. Onions were the best addition, makes a difference!
I went to a really nice restaurant a couple of years ago and they had a roasted tomato and garlic soup as a special. It was the best tomato soup I’d ever had. For years I’ve tried to replicate it with no success. Until I found this recipe. Amazing flavors! I followed the recipe exactly and added 1/2 cup cream, 1 1/2 cups vegetable broth and butter as suggested. It’s outstanding.
I planned on making tomato soup so I already roasted tomatoes, garlic and thyme in the oven. Your recipe was easy to follow. I liked the caramelized onions and I added some pepper flakes for spice and shaved parmesan to the soup at the end. Thanks for the recipe…:)

This soup is amazing! I’ve never written a recipe review before but this one is so good I had had to let anyone reading this know. I followed the recipe exactly and used my immersion blender. I used Roma tomatoes and finished the soup with a splash of heavy cream. I served it with a basil leaf garnish and some grated Parmesan. My husband raved about it. Next time I’ll change one thing, I’ll double it to have leftovers. This would be great for company. Definitely a keeper!

Very good. It’s June in Maryland and our garden tomatoes are beef stake at the moment. Different varieties are growing as I write and I am looking forward to the mix and match of the different varieties. Don’t be afraid, use what you have and do add the dark roasted spots on the tomato skins to the mix. Followed recipe and added about a teaspoon of preserved lemon and one tablespoon of cane sugar. Used a Vitamix to pulverize everything making the mix so smooth and thick. Yum! Had some, shared some and froze some. Will definitely make again. End results aprox. 7 cups. Would give it 5 stars but the website will only let me give it four or less.
Caramelized onions without sugar?? Not possible. What you make is not ‘caramelized’ onion.
You actually don’t need added sugar to caramelize onions! The natural sugars in the onions caramelize when you cook them down low and slow 🙂
Has to be five stars, because I hate tomato soup. Lol. But we had beautiful heirloom tomatoes from our garden and I wanted to do something special with them. Only differences we made were I replaced a half a cup of the vegetable broth with half a cup of red wine and use dried marjoram instead of dried oregano. Yum!

Hi! In step 3 you’ll see that you’ll add the basil and the caramelized onions to your food processor or blender with the roasted tomatoes and garlic. I hope that helps!

This is now my very favorite tomato soup recipe. I have printed it off and handed it to friends, that’s how good it is! Freezes in quart jars just fabulous for a winter treat.
This soup was absolutely delicious!! I did use plum tomatoes from the farm stand and basil from my herb garden, but it was so flavorful! I didn’t add any milk or cream as it wasn’t needed.

This soup came out amazing! It was a great way to use up some of my end-of-the-season tomatoes. I opted to add in coconut milk, and it certainly added some creaminess. Mine did come out burnt orange in color, but tasted as you would expect. Move over, canned tomato soup!

Holy mother of all summer vegetables, this was THE BEST tomato soup I have ever made and ever had. I followed the instructions pretty close but I did add probably 1/4 tsp of sugar to the onion. And when it came time for adding broth, I, added just one cup of vegan mushroom broth, and skipped the dairy/plant-milk and butter add-ins. Seriously freaking phenomenal. After I blended it, I tried it and was blown away. It didn’t need to simmer or season it at all. It was piping hot and INCREDIBLE.

This soup is amazing! My daughter gave me this recipe. I have a lot of tomatoes from my garden, so I make this & freeze it. I have even given it as gifts! A very special treat during the cold north winter months!
I made this with all varieties of tomatoes from my garden and it came out beautifully! This recipe is the best recipe for tomato soup! You do not have to blanch the tomatoes. So easy to make and very tasty! I will make this a legacy recipe for future family generations.
I never rate any recipes but this one is simple and amazing. I think caramelizing the onions deeply as well as the tomatoes makes the difference. I used regular tomatoes instead of roma tomatoes.

Great recipe for using your home grown tomatoes! I don’t think it matters what kind of tomatoes you use. I made the soup twice (I freeze my soups to have through the winter.) The first time I used yellow onions and really packed the fresh basil, which turned the soup a little tinge of green. I used early girl tomatoes both times. The next time I used sweet onions and did not pack the basil, which I liked a lot more. I used the Better Than Bouillon vegetable base. Oh, and I roasted the tomatoes and garlic in a roasting pan without parchment paper, which worked just fine. I’ll definitely make this soup again!

This was my first attempt at homemade tomato soup and it was fantastic. I made it for out of town guests along with a build your own panini set-up and everybody raved about the soup. It was simple to make, very similar to homemade spaghetti sauce. I left out the broth and used the optional light coconut milk add-in to make it a cream of tomato soup. The flavor was amazing and it was so creamy and smooth. It was well worth the effort. Nothing from a can could compare.

This soup is so simple and delicious! It is exactly right for a light supper. I din’t grow my own basil and couldn’t find any in the store. So I used basil paste instead of the fresh basil, and it still turned out great! It is perfect with a grilled cheese sandwich! Thank you for posting this amazing recipe!

I used a little more garlic, some thyme, and about a teaspoon of Lovage. This recipe is beyond AMAZING! My husband wanted luck his bowl. Other than the added seasonings, I followed the recipe exactly. Loveage is a seasoning you can get on Amazon.

This recipe was so easy and SO delicious!! I followed the basic recipe, but didn’t have enough fresh basil, so I added a bit of that Gourmet Garden stir in basil paste. That worked great! Also used chicken broth since that’s what I had open in my fridge. For the add-ins, I used butter, and more than the 2 TBS recommended (but I didn’t use any milk or cream). Also added a bit of Parmesan. I used my new immersion blender, so it was a little chunky, which was fine by me. Probably more liquid could’ve been added, but I thought it was delicious! Definitely gonna be my homemade go-to recipe. YUM!

Great recipe. I make double the recipe and freeze in separate containers. The taste is great and all ingredients are natural. I have to eat gluten free and I love to be able to cook a good soup that I can eat. I will make this often.

I roast my tomatoes with bell peppers, garlic and vidalia onions – all lightly coated in olive oil and dusted with pepper, dried oregano and rosemary then puree in the food processor to make a tomato sauce. (basically roasting the onions instead of carmelizing them in a skillet)
that sauce is about a billion times better than any canned tomato sauce i’ve ever found and makes an excellent base for tomato soup and many common sauces, i usually make a big batch of sauce that i then use for several different dishes over the next few days – and you can freeze whatever you don’t expect to use right away.
Just made this and it’s really good even though it’s January and tomatoes are not in season. I used clustered tomatoes on the vine. Not super flavorful however, the soup turned out great! I only carmelized one onion which was a mistake – definitely should have done two because it adds amazing flavor. I added water and heavy cream and a lil sugar. Thank you!

I grow a lot of tomatoes in my garden. I often end up roasting and then freezing them. This recipe was a perfect use for the multiple packets languishing in my freezer. I used everything from Roma to heirloom to cherry tomatoes, red, yellow and green. It’s delicious!
I omitted the added salt at the end – the acidity of the tomatoes was plenty of flavor. I also added a tablespoon of Parmesan on top.
So good on a blustery winter day!

I’ve made this soup several times now…it is really tasty!! Today’s version included the recipe above with a few modifications: two garlic heads roasted (oiled, salted, peppered, top cut whole heads in a Pyrex cup covered with tinfoil) with the tomatoes, fresh basil, about a cup and a half of chicken broth and a splash of half and half. I also reduced the amount of the onion to about 1 1/2 yellow and made sure to really caramelize them. Family loved it!

Oh no! How close to the heating element was your baking sheet? Were your tomatoes burnt too?
Mine was pink and flavorless. Tasted more like onion soup
So fresh and delicious! I didn’t caramelize the onions, I was lazy and just threw them on the baking sheet with the tomatoes and garlic. I went to a produce rescue so I had tons of tomatoes to use up. This is an easy yummy recipe.

I made this with some heirloom beefsteak tomatoes out of my garden and I’ll never need another tomato soup recipe ever again. This is perfect. I added a splash of heavy cream at the end and shaved some parmesan on top to finish it off. A++

I would like to know I have a half bushel of tomatoes & how much tomatoes would equal that amount? I know it says 3lbs, but how much would it be 3x or 4x the recipe?
1/2 a bushel is roughly 25lbs of tomatoes. If you used them all you would make about 8x the amount of soup. Hope that helps!

Can this soup be canned?
I caramelized the onions with water instead of oil. And I did not add oil to roast the tomatoes and garlic. I broiled them instead which was quicker. I followed everything else. I find the flavor is more rich when I don’t use oil for cooking. I will make this again. I harvested the tomatoes and basil from my garden the evening I made the soup, so fresh and delicious.

My first attempt at tomato soup. This was an excellent recipe and very easy to follow. My amendments:
1. I added about 10g butter to the olive oil that I used to caramelise the onions.
2. After I added the 1 cups of vegetable stock and oregano, it tasted a bit watery. So I let it stand for 2 hours and then it tasted fantastic. My tip is if you want to eat it straight away, just add 1 cup of stock. If it can wait 2 or more hours, add 2 cups of stock.
I made it for a dinner party, and all the guests loved it. Two young guys wanted the recipe! Well done Ambitious Kitchen!

Where are the 35 carbs coming from? I know tomatoes have carbs and cream has carbs, but 35 in one serving?
that is a majority of the carbs in this recipe, the tomatoes and cream.

Sure – that should be fine!
This recipe is very tasty, nutritious, and easy to make! The onions take much longer than 20 minutes to caramelize than recommended -more like 45 minutes. The garlic flavour is quite subtle so I would also add a few more cloves. Just a heads up: after just a brief look at the nutritional analysis, I noticed that at least one component it is incorrect. There is less than 10 g sugar/serving using roma tomatoes, not nearly the listed 26 g/serving. A lot of sugar/tomato paste would be needed to boost the sugar content to this amount. I would make this again but it definitely needs a food processor for a soup texture. My immersion blender made it more of a stew as the onions did not blend very well. It was still quite yummy.

So good and so flavorful!! I made it just a few days ago with store bought, out of season tomatoes and still it was such a good taste. I added in heavy cream for a creamy soup and loved it. Also added in extra basil (can never have too much fresh basil in my opinion)!

I’m sorry you thought so! I would caution against buying / using fresh tomatoes during the winter months because tomatoes are not in season and don’t have as much flavor.
Wasn’t a fan of the oregano dominating the flavor of the soup. Would leave more texture next time.

I think so! I’d recommend thawing them and draining off the excess liquid first.

Solid recipe. I did find, however, that it needed a little more depth for my liking. I opted for chili flakes (~2 tsp) to bring some heat which gave it what I was looking for. Roasting the fresh tomatoes creates a nice and acidic soup, which was nice being paired with a grilled cheese on sourdough.

This was so delicious! I didn’t have enough fresh tomatoes so used a combo of fresh and tinned whole tomatoes and it turned out great. I also improvised a garlic confit in the same pan with a ramekin and some foil – the garlic flavour in the soup was delish! Had it with some grilled cheeses and it was perfect. Will definitely be making it again!

Feel free to roast 1 red bell pepper (halved, with seeds and stem removed) along with the tomatoes! You may need to increase the broth a bit as well.
Absolutely incredible. This was easy to make and delicious! I had to roast my tomatoes in my air fryer because my oven doesn’t work so well. Other than that I followed the recipe exactly. This soup is so comforting. Saving this recipe to make many more times in the future.

I found this quite bland. Used some cream and added a little more salt. I would cut back the onions and perhaps add a jalapeño for some additional flavour. My 11 year-old who dislikes strong flavours liked it. My 19 year-old did not. Wouldn’t make this again.
Sorry to hear that! For a soup like this I always specify to add salt to taste, as everyone’s salt preferences are much different. The flavor is even better when tomatoes are super ripe – if your tomatoes weren’t flavorful yet this season that would make a difference as well. I have a few other flavor-enhancing suggestions listed in the recipe, too!

OOOH THAT WUZ GOOD!!! Hubby whined “soup in August?!” Boy was he converted. I dumped all roasted/carmelized ingredients with basil leaves in a pot and used my immersion blender. I used 1 cup Oatmilk and 1 cup chicken broth and some additional water to thin soup at the end.

Super easy and delicious!! Next time I may use a little less garlic – i’ve become sensitive to it lately – but this is really good! I used an immersion blender and it worked well. No real need to dirty the processor unless you want it really smooth.

Basic recipe is ok – I skinned the tomatoes for a smoother texture.
I’d have to say this soup is good, not great. I think the roasted garlic makes it bitter, and garlic seems to overwhelm the beautiful tomato flavor. The recipe is easy enough, and I’d probably try it again, but with less or no garlic.
So strange! Roasting the garlic should add a deep, sweet and savory flavor (not bitter). Let me know if you like it better with less roasted garlic!
What a wonderful and easy recipe! I made this without a blender as I didn’t have one on hand, I just mashed the roasted tomatoes with a fork into chunky pieces and cut the roasted garlic into small pieces. Added a bit of water and had a delicious, heart-warming , chunky soup! I thought I might need to add some more spices to it at the end, but this soup is already so full of flavor that salt and pepper are compltetely enough. Thanks for this great recipe, I will be making this again!

My go-to tomato soup receipe. I make a few changes
– I add chicken stock instead of vegetable – gives it a bit more richness and flavor
– I add calabrian chillis (1/4-1/2 teaspoon) to give it a kick
– I use clarified butter to cook the onions – the carmelization is great
– Depending on richness I’ll use Campari or Dry-Farmed tomatoes if they’re in season to make the soup sweeter/more intense.
