This dish was inspired by a noodle recipe I saw on Bon Appetit and I just HAD to try it out, except you know, with my own few twists here and there. It reminds me of traditional drunken noodles with a rich meaty sauce. The noodles simply drip and bathe in a fabulous sweet and spicy tomato chili sauce that’s incredibly easy to make and addicting. Perfect date night in meal that seems a little fancy, but truthfully takes no time at all to whip up.
Tony and I slurped these hot chili chicken noodles up and couldn’t get enough. Top them with roasted cashews or peanuts and plenty of fresh basil to bring it all together.
What you’ll need to make hot chili chicken noodles
Okay, the flavors in these spicy chicken ramen noodles are out of this world! I lightened this dish up a bit by using less oil and sugar, but the result is equally as savory and delicious. Here’s everything you’ll need to make it:
- Chicken: you’ll need some ground chicken or turkey to cook and add flavor into the sauce.
- Herbs & spices: we’re also using freshly grated ginger, garlic and fresh basil for the perfect flavor boosts.
- For the sauce: the rest of the sauce is made with a bit of coconut sugar, tomato paste, hot chili paste, soy sauce, rice vinegar and water.
- Noodles: I love using ramen or rice noodles in this recipe! See below for more swaps and ways to make this dish gluten free.
- To serve: top your bowls with more fresh basil, chopped roasted cashews or honey roasted peanuts and some extra red pepper flakes if you like more heat. Feel free to omit the nuts to keep this dish nut-free.
Can I make this vegetarian?
Yes! Feel free to use crumbled tofu, cubed tofu, or chickpeas in place of the ground chicken in this recipe. We think crumbled tofu will work best!
Customize these healthy chili chicken noodles
These spicy chicken noodles are super easy to customize with ingredients you have on-hand. Here’s what I can suggest:
- Optional noodle swaps: out of ramen or rice noodles? Feel free to use spaghetti or fettuccine noodles. Using rice noodles will keep this recipe gluten free, or simply choose a gluten free pasta!
- Add a boost of veggies: feel free to add already cooked broccoli, green beans, snow peas, bell pepper, mushrooms or matchstick carrots to the dish when you stir in the noodles. YUM.
- Swap your spice. If you don’t have any hot chili paste you can use a hot sauce like sriracha instead, but I do recommend hot chili paste for best flavor.
Can I make these noodles less spicy?
While these noodles are meant to be a delicious blend of sweet and spicy, feel free to reduce the hot chili paste and replace it with more tomato paste instead if you’re sensitive to spice. Add some red pepper flakes to taste at the end if you end up wanting more of a kick!
How to make sweet & spicy chicken noodles
While these chili chicken noodles look nice and fancy, they’re incredibly easy and quick to make right at home.
- Brown the chicken. You’ll start by breaking up your ground chicken in a pot with sesame oil until it’s nice and golden.
- Season the chicken. Add your ginger, garlic and coconut sugar to the chicken and break it up and cook it until it’s fully cooked.
- Make the sauce. In the same pot you’ll stir in the rest of the ingredients (besides the noodles), bring everything to a simmer and then reduce the heat and cook it uncovered so that the sauce thickens.
- Cook the noodles. In a separate pot cook your noodles until they’re al dente according to the directions on the package. Be sure not to overcook! Drain them and add them to the pot with your meat sauce and stir everything well.
- Garnish & serve. Divide the chili chicken noodles into bowls, garnish with your fav toppings and serve!
Storing & reheating tips
Store any leftover spicy chicken noodles in airtight containers in the refrigerator for up to 3-5 days. To reheat simply do so in a microwave safe dish.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 1 tablespoon sesame oil (or avocado oil)
- 1 pound ground chicken
- 1 tablespoon freshly grated ginger
- 6 garlic cloves, thinly sliced
- 1 tablespoon coconut sugar
- 2 tablespoon tomato paste
- 2 tablespoons fresh chopped basil
- 3 tablespoons hot chili paste (such as sambal oelek)
- 3 tablespoons reduced sodium soy sauce
- 2 tablespoons rice vinegar
- 2 cup water
- 10 ounces ramen noodles (spaghetti, fettuccine or rice noodles will also work)
- For serving:
- Fresh chopped basil (I recommend basil ribbons on top!)
- Chopped roasted cashews or peanuts (honey roasted is delicious!)*
- Extra red pepper flakes
Instructions
- Add sesame oil to a large pot and place over medium-high heat. Add ground chicken to the pot and season generously with salt and pepper. Brown the meat and break up into medium-sized chunks; cooking for about 5 minutes or until nice and golden underneath. Next, add in ginger, garlic, coconut sugar to the chicken and continue to cook about 4-5 minutes longer or until meat is almost all the way cooked, breaking up into smaller chunks as you cook it.
- Once meat is cooked, stir in tomato paste, fresh chopped basil and hot chili paste for 30 seconds to 1 minute, then add in the soy sauce, rice vinegar and water. Bring to a simmer, then reduce heat to low and cook uncovered, stirring every so often until sauce begins to thicken. This should take about 30 minutes.
- While the sauce cooks, you can make your pasta: cook pasta until al dente according to directions on the package. Once pasta is done, drain, then add back to the pot with the meat sauce (once it is done cooking!) and stir well to allow the meat to coat the noodles. Divide noodles into bowls and garnish with LOTS of basil ribbons, chopped cashews/peanuts extra red pepper flakes, if desired. Serves 4.

I made this recipe last night and it was delicious! I used ramen noodles and added chopped peanuts on top. It was on the spicy side for me but still delicious and my husband didn’t find it very spicy at all, so basically a perfect balance for us 😉 Another AK hit!
Oh and I added green beans, matchstick carrots, and finely diced onions for extra veggies 🙂

Loved!! We like some spice but not a lot, so substituted Kame brand sweet chili sauce for the chili paste, and worked perfectly. Made a cucumber salad to have on the side to balance out the heat. Another AK winner!

I modified quite a bit based on time and what I had on hand but turned out well. Subbed the sambal oelek for Sriracha, coconut sugar for brown sugar, only 1 cup of water, about half the garlic, used Tagliatelle noodles and only let the sauce thicken for about 5 mins. Very spicy but tasty. My partner can’t handle spicy but inhaled it anyway, said “its so tasty but it hurts my mouth” – next time will half the spice!

I made this tonight and it was delicious! I made a few swaps based on what I had on hand: two packets of raw sugar for coconut sugar, white wine vinegar instead of rice and Crystal’s hot sauce instead of chili paste (gangster, I know). Will definitely make again!
This was really good although I had to leave out the spicy sauce because my four-year-old would not eat it. I added it after the fact and still enjoyed it very much. I wish it was a little more saucy, so next time I’d lower the gas all the way. I served it with a side salad with your sesame ginger dressing and it made for a great meal.

My mouth watered every time I saw this recipe since Monique posted it, and I finally made it! I could not find sambal oelek despite two different grocery store stops (#fail), so I made this with sriracha and it came out well. I used the Hame brand Chinese noodles and added in some broccoli. I made the dish with crumbled tofu, and I would recommend that anyone who does the same not over-crumble their tofu like I did. Lastly, I was low on rice vinegar so I subbed in 1 T white vinegar for half of what the recipe called for. Another winner, Monique!

So delicious!! I love spicy food so it was a perfect amount of spicy for me. I added snow peas and red bell pepper for some veggies and everything turned out great! I was worried my sauce wasn’t thick enough after the 30 minutes of cooking but I was wrong! I added the noodles since I was so hungry and it came together perfectly. Such a great, easy recipe! You definitely have to like spicy food. I did not top with red pepper flakes and it was spicy enough for me. I also only used 9 oz ramen noodles since they come in 3 oz packages. Would make this again!

I made this the other night and LOVED it. It will make your kitchen smell so good, with the aroma of ginger and garlic and other savory and sweet spices. I did modify the amount of chili paste I used to take the heat down a notch. I used 2 tablespoons of chili paste and 3 tablespoons of tomato paste and it came of great! I can’t wait to make it again.

Another winner from AK! I was a little worried because the broth seemed thin (even after simmering for a half hour), but once I added the ramen noodles, everything really came together. I added steamed broccoli & sugar snap peas, which were both great, but I think next time I would add red pepper or carrots for a little more color! My lips were burning from the spice and my husband was sweating a little, but we both really enjoyed this and will be definitely adding it to our meal prep rotation.

Sooo delicious and spicy!! I probably didn’t need the chili flake at the but I added them anyway. I used sweet potato starch noodles and threw in some (pan fried) peppers and zucchini. I wanted to add broccoli too but didn’t have room in my pan! It’s 90 degrees here on the west coast and I had no trouble polishing off my bowl (while sweating). Make this!

I have made this recipe a few times and it is SO good. The first time I followed the recipe exactly and it was great, it defiantly has some heat but it is so flavourful. The second time I made it, I added in some veggies (peppers, mushrooms, shredded carrots, water chestnut’s) to make it a bit more substantial and it was great this way too. This recipe is a regular menu item in my household and I highly recommend it.

I would definitely recommend lowering the amount of chili paste. This is almost inedible for me. And I used 2 tablespoons instead of 3. I’m disappointed because I normally love your recipes but my mouth is on fire.

I finally made this for dinner the other night. Used almost all ingredients as directed (was also making it for my 18 month old, so I only used 1TBSP chili paste) and the flavour was amazing! Towards the end the sauce wasn’t as thick I prefer, so I added a small slurry and that made it perfect for us! Used Thai style rice noodles.

This recipe was delicious. I love spicy foods, and the amount of heat in this recipe was perfect for me! I subbed coconut aminos for the soy sauce to make it GF. I will definitely be making this recipe again!
I made this and it was yummy! I didn’t have the hot chili paste so subbed sriracha. I’m not huge into spice so ended up only doing 1 tbsp sriracha and upping the tomato paste to 3 tbsp. I just found the sauce never thickened up though, following with the exact amount of water. Any tips? I also used spaghetti noodles as that’s what I had on hand. I will definitely make it again, playing around with the protein and noodle. Highly recommend making this one!! It’s wonderful as leftovers too.
Hi, Kayla! The sauce sometimes takes a bit to thicken, but if you leave the lid off, it will thicken as the liquid evaporates.
One of the few AK recipes that did not land in our house.
I think it would’ve been better if we did not make it gluten free – and maybe we did more spicy than sweet (definitely believe it was user error, not AK) but, I recommend sticking to true ramen noodles, or gluten-full noodles and go into this realizing it isn’t necessarily street spicy noodles. but more a sweet and sour situation.

Absolutely amazing! This has become a staple in our dinner rotation. Very easy to make, and the flavor is out of this world. I top mine with some chopped honey roasted peanuts for some added texture.

Yummmmmm – that was the most repeated word by everyone when we had this for the first time yesterday for supper! We followed the recipe exactly but toned down the spice a bit for our 13 year old daughter and just added extra to our personal servings. We also put it on top of some shredded iceberg lettuce and topped it off with sliced cucumber, cilantro, green onion and cashews. It was Monday so we thought it could benefit from some extra veg. Will definitely make again!

So delicious! I used spaghetti and didn’t have chili paste so I swapped in my favorite hot sauce (Hank’s Sauce Linger). I added a little extra hot sauce since it wasn’t as concentrated and it seemed to work well. So so good! In the future I might toy with adding some veggies (broccoli or edamame maybe). Definitely coming back to this one again!

SO GOOD. Better than takeout. We used ground Turkey and added broccoli and carrots. The sauce is phenomenal. The second time we made it we doubled the sauce for extra, YUM!
I like spice, but this was way too spicy. Would recommend 1 instead of 3 table spoons. Good flavor.

This tasted just as i imagined from the photos. We made it for our new year eves dinner. Followed the recipe and turned out great. The heat was just enough to feel but still enjoy. Will make again.
Well this was super tasty! We made it exactly as listed, but I can already imagine other ways to have the meat and sauce without the noodles. It’d be great with lettuce wraps, or with some cabbage added and eaten on its own! Yummy!
Made this last night for dinner and my husband and I LOVED it. I double the sauce since my husband likes extra sauce to dip bread in and we like spice so I added more hot chilli paste! I also substitute the ramen for a lentil fettuccini!! So delicious!!

Such an easy and delicious recipe!! My only problem was that the sauce did not thicken so my end result was a little soup-y. Not sure if I did something wrong but still really enjoyed the flavors and hoping the sauce will thicken in the fridge.

This recipe is so delicious! It definitely brings the heat but we ate every bite. We used rice pad Thai noodles and they were the perfect pairing!
This was amazing and truly better than takeout – the noodles have SO much flavor! I did end up adding a little water/cornstarch combo towards the end (roughly 1 T) to get the sauce to thicken up a bit more but otherwise followed this recipe to the letter. Will be making this one again and again. My husband loved this one too – we were both angling for leftovers the next day!!!

I was so excited that this is the #AKDinnerParty recipe of the month because it’s one of my favorites to make when we want something spicy! I used hearts of palm “noodles” so I only added 1 cup of water and added red bell pepper. It’s better than takeout in my opinion!

Really flavorful and easy. I added broccoli, mushrooms and carrots to it and I used lotus foods rice ramen. I found the sauce needed a little extra soy and an extra tbs of coconut sugar and then it was just perfect.

The sauce was a little watery for my liking so I added a cornstarch and water mixture to help thicken it up, Other than that slight addition, the recipe was perfect as written and I will definitely be making it again.

I made this last night and love this recipe! My
boyfriend couldn’t get enough of if, I’m fairly certain he took fourths. The chicken makes it nice and filling, and the flavors complement each other amazingly. I sprinkled a little cayenne on the top as a garnish to pack an extra punch.

I have made this recipe a few times since it was first posted and it is a hit every time. I just made it again a few days ago and it was so delicious. The spice level can be tailored to suit, which I love for my young kids. I typically add in 1 1/2 Tablespoons of chili paste and use spaghetti noodles (I always have some on hand) and my kids and husband gobble it up. We like to serve steamed edamame on the side! #AKDinnerParty

Great, easy recipe! Used thai curry paste in place of chili paste and definitely muted the spice but held delicious flavor! Served with linguine noodles, chopped peanuts, and basil on top! And plenty of leftovers for my husband and I to enjoy for lunch this week!

Loved this so much. Such fantastic flavor!! I would use more of a ramen noodle instead of the brown rice noodles I used. I served it with a side salad with candied pineapple super nice compliment to the all star main dish! If you like spice and flavor this is a must make!

This was a hit! I was skeptical about the two cups of water but it cooked down nicely and made a tasty sauce. My husband loved it and wants it in the regular rotation. Definitely on the spicier side but we liked that.
I was so excited to see that this was the recipe for the #AKDinnerParty! I’ve made it before and this time it turned out even better. Only changes I made were using boneless, skinless chicken thighs chopped up instead of ground chicken and sugar in the raw instead of coconut sugar, because that’s what I had. I also topped with some cilantro at the end in addition to the basil and cashews. Love the dinner party idea, Thanks for all the amazing recipes and content!

The taste was a great combo of sweet heat! My sauce did not thicken much, I am not sure what I did wrong. It had a little too much tomato flavor for my usual liking, but I still enjoyed it!
That can happen, so I suggest using a bit less water to start, or adding cornstarch to thicken it 🙂

Holy flavor explosion in my mouth!!! Just finished eating this for dinner and I’m so happy with how it came out. All of the different aromas it gave off while cooking made it enjoyable too. I like spice but I will say for me I’ll maybe do 2Tbps of the chili next time. Also not sure if it’s my oven or what but it didn’t really thicken you much even after 45 mins, so next time I’ll do one cup of water! Surprised but also happy there are actually leftovers for tomorrow 😁

This was delicious but very spicy! I added a little honey to the plate to sweeten a little more. Next time I might cut the Sambal in half. However, we loved the bold flavors for an easy weeknight meal! #AKDinnerParty

I like some kick but this dish was definitely spicy! My husband liked the extra heat but next time I would sub more tomato paste instead of the chili, as suggested. I forwent the fresh basil and wish I didn’t because it would have added a nice, lively element. I used rice noodles and added in red pepper and carrots for some extra vegg. All together it was a very yummy dish and would definitely recommend trying!

We loved this recipe. We made a few substitutions: beyond meat instead of chicken, puréed fresh cherry tomatoes instead of tomato paste, dried basil instead of fresh basil, chopped cilantro on top instead of fresh basil, and we added broccoli to pump up the veggies. Yum! We will be making this again!

Another super easy and tasty dish to put on rotation! Thank you! My kids loved it too, which is a win! I used a little less of the chili paste and flakes since they are sensitive, but added sriracha to my serving to make up for it! 👍
I forgot to add, I diced up some green beans and added them to the sesame oil and sautéed a few minutes before adding the chicken…love sneaking in veggies whenever I can!

I made these noodles for the #AKDinnerParty. I liked that it was a non complicated dish that didn’t involve much chopping! The noodles were the perfect balance of sweet and spicy, as the name implies.

Seriously a perfect recipe. My fiance and i LOVED it. I substituted ground beef since that’s all I had on hand and it was delicious. I drained some of the oil from the ground beef so it wouldn’t be too greasy and it came out perfectly savory and spicy. I also added cooked broccoli, matchstick carrots & some sliced bell peppers (I sauteed the veggies first). This will definitely stay in my weeknight rotation! #AKDinnerParty

This dish is INCREDIBLE. It tasted like I could’ve gotten this at a restaurant and seriously so easy! I made mine vegetarian with crumbled tempeh and used banza pasta for some extra protein and it was perfect. Will be making again!

This is not the type of recipe I usually gravitate toward, but I am glad I made this. The sauce is perfect. I used ramen noodles, and added in some pan-fried bok choy at the end. I’ll be making this again.

I used crumbed tofu sauteed w/ soy sauce in place of the chicken and it worked out great! I would recommend adding the noodles when it still looks a bit saucier than you think – my noodles really soaked up the sauce and I wish I had more. But taste was awesome! #AKDinnerParty

This is a new favorite in our home! I used one less tablespoon of the chili sauce since my 1 year old has been a little sensitive to spice but did everything else exactly as the instructions say and everyone loved it! Loved this recipe and how easy it was! Ended up prepping the sauce ahead of time (mom life) and cooked spaghetti noodles to go with it for the kids and ramen noodles for my husband and I! This recipe is AMAZING! 100/10!!! I made it exactly as described but roasted some broccoli and red peppers on the side for extra veggies and topped it with some crushed cashews. It was SO fantastic and flavorful. Spicy, savory, sweet, and absolutely delicious! My family said it was “super tasty” and requested that it be added to the regular dinner rotation. I really enjoyed the versatility of this meal. The texture was great! I would say if you can add sesame oil, I’d recommend to use it. My son is allergic to sesame, and I really did miss the flavor of it in this dish. #AKDinnerParty

Made this for the February dinner party and at first thought it was just ‘ok’ (boyfriend called it “Asian Spaghetti’) – it didn’t get nearly as saucy as in the photos. But we ate it leftover the next day and OMG it was so good. The flavors intensified and justified an added star. Would make again just for the leftovers.

We loved this recipe! Used coconut aminos instead of soy sauce, apple cider vinegar instead of rice vinegar, and Jovial cassava pasta to keep it paleo-friendly. Amazing flavors, just wish I’d topped it with cashews for some crunch!

I make this recipe probably once a month because it’s so good and pretty simple to make. I usually use whatever pasta I have on hand. It reheats great both on the stove and in the microwave when I take it to work. Highly recommend. #AKDinnerParty

Absolutely delicious!!! Made this for lunch today as a test to see if it would be a good family dinner option. So flavorful and just the right amount of spicy (heat but not burning, ha). I used brown rice noodles and let them soak in hot water while I was cooking and they were the perfect consistency by the time I added them to the chicken mixture. Served with honey roasted peanuts on top!I may ratchet down the spice slightly for family dinner with a toddler but absolutely perfect as-is for me and looking forward to delicious leftovers all week!

My husband and I really liked this. It was a low effort and fast weeknight recipe that I’d definitely make again. I used a little less sambal because my husband doesn’t like things too spicy, but it was still flavorful and had enough spice for me. My sauce didn’t really thicken, but the liquid did reduce. I added a tiny bit of cornstarch to thicken it some more. I normally would have used rice or ramen noodles but we had some whole wheat spaghetti to use up and it was still good with that! And it was flavorful enough to hide the whole wheat for anti-whole wheat pasta folks, haha.

I kept seeing this posted on your IG for the dinner party and added it to my meal plan. I made it last night and it lived up to the hype. I’m a spice wuss so I did 3 tbsp tomato paste and 2 tbsp siracha as a sub for the chili paste. It was SO spicy, but had great flavor. I hate when the spice overpowers the flavors but that wasn’t the case here. I used 4 blocks of rice ramen from Costco and served broccoli on the side. My husband said this is a make again meal! Yum!

This is the first AK recipe I stumbled across, and it became my gateway recipe because I cook from your site at least 3x/week! This is still my fave, and I love that it comes together so fast with minimal effort. I usually add a touch more Sambal Oelek because I like a bit more heat – this recipe is my absolute FAVE!!!

Have made this twice and it’s so good. Love that the ingredients are things I always have on hand. The hubby and kids really enjoyed it as well. If your family doesn’t like spice, you may need to use a little less chili paste but it’s pretty much perfect as is.
Easily one of our favorite AK recipes. We pretty much always have the ingredients on hand which makes it an easy go-to when we don’t know what to have for dinner. We often swap 1T of hot chili paste for tomato paste (so it’s 3T tomato paste and 2T hot chili paste) to change the spice level to everyone’s tolerance.
These noodles are INSANE!! So freaking tasty. I use the Trader Joe’s gluten free egg fettuccini and it’s just so satisfyingly spicy. Load it up with basil and serve it with cold cooling cucumbers on the side. UGH make it it’s so good.

How to make with chicken breast?
You can cut it up into bite-sized pieces and saute it in step 1, just like you would with the ground chicken 🙂
YUM – This recipe came together very easily and quickly!
I didn’t have any rice vinegar so I had to substitute with ACV and used aminos instead of soy sauce. The flavor was DELISH but I felt it was a bit too salty. Next time I’d reduce soy sauce to 2TB. I also Added in bell pepper and edamame for some extra veggies and served over rice noodles!
This will certainly be on our regular rotation!

This is the worst noodle dish I have eaten. Not only did it not taste good, but it was a pain to make. The prep time was in no way 15 minutes…it took almost that long to assemble the ingredients. I can’t give it any stars!
Easy to make and really tasty. I used Udon Noodles not sure if that is different from Ramen. I added fresh red and yellow peppers to the sauce for the last fifteen minutes of simmer and then steamed a bag of mixed frozen veggies (broccoli, snow peas, water chestnuts carrots).

I made this and sauce looked nothing like picture and was watery and I cooked way past 30 min not sure what did wrong but wasn’t right was so excited for it too!!
Sorry to hear that! The sauce should thicken up nicely as you simmer it because the liquid will evaporate. I would double check your ingredient measurements to make sure there wasn’t too much liquid!
