Ready for another DAMN GOOD recipe to start your week off right? I know I am! And this time, I’ve got a savory, healthy dinner recipe that’s perfect for two people (hello date night in!) and only takes around 45 minutes from start to finish.
I developed this recipe over 4 years ago when I wanted to do something a little different to use up the last Alaskan-caught wild salmon filets in our freezer. I thought, why not make a chipotle-style burrito bowl but with salmon instead of chicken or steak? A few jazzed up ingredients later, like sofrito rice, and delicious, heart-healthy salmon taco bowls were born.
Similar to my damn good tahini cookies and damn good peanut butter cake, you know if I’m calling it DAMN GOOD, then you know it’s gotta be out of this world delicious.
Everything you’ll need to make salmon taco bowls
These damn good salmon taco bowls are filled with delicious sofrito rice, perfectly seasoned salmon, and all of the toppings your heart desires. Here’s what you’ll need:
- Salmon: because this recipe serves 2, you’ll need 2 wild salmon filets that are about 6oz each.
- Taco seasoning: we’re using my famous homemade taco seasoning to perfectly season the salmon filets.
- Rice: I like to use jasmine or basmati rice because it turns out super fluffy and delicious. You’ll cook the rice with warming spices like cumin, coriander, turmeric & garlic powder.
- Sofrito: what makes the rice extra special is that you’ll also cook it in a homemade sofrito, which is a sauce used in Hispanic cooking. Read more on it below!
- Toppings: what’s a taco bowl without delicious toppings?! I like to add avocado, hot sauce, Greek yogurt, green onion and a squeeze of lime juice.
Customize your taco bowls
Here’s what I can recommend for ingredient swaps in these salmon taco bowls:
- Choose a new protein: feel free to use 2 6oz chicken breasts or 1 lb shrimp instead of salmon filets. You’ll add the taco seasoning the same way, then you can bake or grill the chicken, and bake, grill or cook the shrimp in a skillet!
- Swap your grains: instead of jasmine rice, you could also use brown rice or quinoa. Please note that you’ll need to cook brown rice longer according to the directions on the package, but quinoa should work with the same cooking time.
Want to make it vegetarian?
This recipe would also work well with tofu! To swap the salmon for tofu:
- Cut your tofu block into 2×3″ rectangular strips to bake or grill your tofu, or cube your tofu to bake or pan fry it.
- After cubing or cutting your tofu into 2×3″ rectangular strips, toss it in the taco seasoning until each cube or strip is well coated.
- Then grill it with these tips, bake it at 400 degrees F for 25-30 minutes flipping halfway through, or pan fry the tofu until it’s golden brown on all sides.
What is sofrito?
In Spanish, sofrito means sauce, and it’s very traditional when it comes to Puerto Rican foods. My version is a mixture of garlic, onion, green bell pepper, cilantro and tomato sauce. Some do it with fresh tomatoes and culantro, but this is how I normally make it.
Tips for making the homemade sofrito rice
I’m pretty much obsessed with the flavors in this sofrito rice (and you will be, too.) Here’s how to make it super fluffy sofrito rice:
- First saute your onion, green pepper, cilantro and garlic for just about 2-4 minutes. You’ll want to make sure they are all VERY FINELY DICED. This is important.
- Then you’ll add in tomato sauce, cumin, coriander, turmeric, garlic powder, salt and pepper and simmer until sauce comes together (this is the sofrito!)
- Next, you’ll add in water, bring it to a boil, stir in your rice, and reduce the heat to low to cook it right in the pot for 15-20 minutes.
- Lastly, you’ll remove the pot from the heat, stir the rice with a fork and place the lid back on for 20 more minutes to allow the rice to steam. The rice will be fluffy and perfectly seasoned to make the perfect base in these salmon taco bowls.
How to cook the perfect salmon in the oven
My absolute favorite way to cook salmon so that it’s moist, flavorful and stays together is to bake it right in the oven. In this recipe, you’ll time your salmon just right to go along with the fluffy seasoned rice that goes in the bowl. Cooking the perfect salmon is easy! Here’s what you’ll need to do:
- Preheat your oven to 400 degrees F.
- Generously season your salmon. In this recipe you’ll use an incredible, homemade taco seasoning with coconut sugar, cumin, chili powder, garlic powder, paprika, a pinch of cayenne and salt & pepper.
- Line a large baking sheet with parchment paper or foil and grease lightly with olive oil or nonstick cooking spray.
- Place marinated or seasoned salmon skin side down on baking sheet.
- For every inch of thickness, bake for 15 minutes. My salmon is usually perfect around 18 minutes. Flake salmon with a fork and serve!
Pro-tip: always err on the side of undercooking rather than overcooking salmon to keep is nice and moist!

More ways to use this taco seasoned salmon
One of the best parts about this recipe is that not only can you use the homemade taco seasoning as a marinade for things like chicken (and even tofu!) but you can cook the salmon according to the instructions and create even more delicious recipes with it. Please note: I recommend doubling the spices for 1 pound of taco meat.
Try this salmon in actual tacos with corn or flour tortillas, scrambled with eggs (sounds strange but it’s amazing!) or in a yummy taco salad like this one for extra protein.

Ingredients
- For the salmon:
- 2 (6 oz each) wild salmon filets
- ½ tablespoon olive oil
- ½ lime, juiced
- For the taco seasoning:
- 1 tablespoon coconut sugar (or brown sugar)
- ¾ teaspoon cumin
- ¾ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ⅕ teaspoon cayenne pepper (or just a pinch!)
- ¼ teaspoon salt
- Freshly ground black pepper
- For the rice:
- 2 teaspoons of olive oil
- ¼ cup very finely diced yellow onion
- ¼ cup very finely diced green bell pepper
- ¼ cup finely diced cilantro
- 2 cloves garlic, minced
- ½ cup tomato sauce
- ½ teaspoon cumin
- ½ teaspoon coriander
- ¼ teaspoon ground turmeric
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- Freshly ground black pepper
- 1 ¼ cups water
- ¾ cup uncooked jasmine or basmati white rice
- For serving:
- avocado, sliced
- Greek yogurt
- Salsa or hot sauce
- Cilantro
- Diced green onion or red onion
- Lime wedges
Instructions
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper or foil and grease lightly with olive oil or nonstick cooking spray. Place salmon skin side down. Drizzle salmon filets with olive oil and a squeeze of lime juice.
- Next, prepare your salmon seasoning mix: in a small bowl mix together the coconut sugar, cumin, chili powder, garlic powder, paprika, cayenne pepper and salt and pepper. Sprinkle your taco seasoning on the salmon. Use your fingertips to rub the seasoning in evenly all over the salmon. Set aside.
- Next prepare your rice: add olive oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions and green peppers soften, about 2-4 minutes. Bring heat to medium-low and add in tomato sauce, cumin, coriander, turmeric, garlic powder, salt and pepper. Simmer for 2 minutes until sauce comes together. Next, add in water and bring to a boil. Once it boils, stir in rice, cover immediately and reduce heat to low and simmer for 15-20 minutes or until rice is tender. After 15 minutes, remove pot from heat, stir rice with a fork and then place cover back on. Allow rice to steam covered for another 10 minutes off the heat.
- As soon as you put the lid on the rice (allowing it to steam), it’s time to get the salmon baking. Place salmon in oven for 15-20 minutes or until salmon easily flakes with a fork. Mine is always perfect at 16-18 minutes.
- When you are done, pile rice into two bowls, then add salmon filet on the side. Serve with avocado slices, greek yogurt, cilantro, salsa or hot sauce, green onion and lime wedges. YUM. Serves 2.

This is a really good dish. I used brown rice cause I prefer them and also made some adjustments like instead of tomato sauce I used salsa. It worked very well. I’ll be making this again!

Welp… the second we saw this recipe go live yesterday, we knew we HAD to make it for dinner tonight. This may be a new record for me. But this meal is so amazing & so easy.
The salmon is so flavorful and the texture is perfect. The coconut sugar with the spicy herbs is such a great combo. I’m pretty picky on salmon, but I loved it baked actually.
And the rice!!! So flavorful. If you like an extra kick of heat, we added jalepeno (with seeds) to the veggies we sauteed and it gave it a great kick. I also gave the veggies a rough chop and then “pulsed” in the food processor a few times to make sure they were chopped really fine (and save some time).
Basically, make this now 🙂 You’ll love it!

The rub for the salmon..AMAZING. I ended up having extra rub so I plan to save and make again in a few days! I didn’t have everything for the rice mix, but used onions, garlic, and most of the spices. I also used plain Greek yogurt for the sour cream. Highly recommend for a quick and super healthy meal!

I have made this recipe twice now, and will be making it many times over. The only change I have made is doubling it so that we have leftovers for lunch- it actually reheats quite well! The salmon, rice, and toppings are a perfect marriage of flavors and easy to make.
This was fantastic! I only started liking salmon a few months ago and I’m very picky about the flavor but I would make these again in a heartbeat. Only modification I made was using an orange bell pepper instead of green because it was what I had but the rice still had a lot of flavor. Adding this to our go-to recipes!

Thank you for making a salmon recipe that my husband and toddler would eat! I love salmon…them…not so much. I thought a taco flair would do the trick, and it did! Love the little bit of sweetness from the coconut sugar. We used green onion instead of yellow onion in the rice since that was what we had. I think next time I might play around with adding more bell peppers in the rice.

The flavor is amazing! I think this may be one of my favorite salmon recipes ever. I put lime zest in the taco seasoning and it worked wonders! This was soo good! A great new way to mix up making salmon with different seasoning/flavor. This satisfied my boyfriends weekly chipotle fix, and I added some extra mixed greens to my bowl so it was a mixed rice / salad bowl. Topping with avocado was perfect! Will make again for sure!

Although I don’t use this recipe in its entirety, the rice is a go-to of mine. I make it weekly for my family (including my infant son, who loves it!). It has just the right amount of spice/flavor and veggies, and it reheats very well. I toss mine in tacos, salads and quesadillas. It’s also just delicious on its own.

This was totally delicious. I stretched the rice to serve 3 by upping the rice to one cup, added a bit more onion and green pepper, and 1/2 cup more water because we had a guest (and an extra piece of salmon). Instead of lime wedges on the side I added lime zest and juice of half a lime to the Greek yogurt for a lime crema. So damn good…thanks for the recipe!

Hi, Daniella! I think cauliflower rice would be great in here! You just won’t need much liquid since it doesn’t absorb it like regular rice. You can add in your cauliflower rice and maybe just a touch of liquid so it’s not dry, and cook it until it’s done. Hope this is helpful!

Amazing! I love that this recipe is perfect for two. It was a hot summer day, so I did the salmon on the grill. I followed the cooking instructions for the salmon very similarly (grill around 400), and put the salmon on a piece of foil on the grill. It turned out great.

Holy wow! The salmon seasoning is incredible!! I am trying to eat salmon more often to get more Vitamin D in my diet, but I haven’t found a recipe that I actually like… until now! Super easy and amazing, definitely adding this to my recipe rotation.
I voted for this for the March dinner party and decided to make anyway when another was chosen. Lol. Glad I did! This was absolutely delicious! I followed the recipe and used another commenters tip of pulsing the veggies in the food processor to save time. It took me about an hour all said and done. My kitchen smelled like my grandmas while making the rice 😋 My husband said it tasted as good as a restaurant and my 1.5 year old asked for more of the rice (she didn’t love the salmon).

Loved this dish, even though there is a long list of ingredients, it was straight forward and delicious.
Next time I would not include the sugar or the tomato sauce as it made everything slightly sweet. I prefer a more savoury dish. Also I would prepare the seasoning, then do the veggies for the rice, then when you put the lid on the rice pan, I would put the taco seasoning on the salmon and into the oven – the seasoning sunk into the salmon rather than being a topping.

This was an awesome dish!! I made it tonight for myself – will freeze the second piece of salmon to have later. The spices that top the salmon are similar to another recipe for salmon that I make fairly often. The rice is deee-lish and all of it put together in an antique bowl that came from my mom’s kitchen made for a wonderful, tasty and special dinner! Made this tonight for #AKDinnerParty and it was delicious! Since the sofrito doesn’t need a whole onion or pepper, I sliced what was left of them and roasted them alongside the salmon with the taco seasoning. They made a great addition to the bowls! Homemade sofrito rice is not that much more effort than plain rice and the results are so tasty, it’s definitely something I’ll be adding to more meals.

My husband made this delicious recipe for us on Mother’s Day. You definitely named it right…it was sooo good! My husband added some Spring mix greens dressed with a drizzle of olive oil and a sprinkle of salt to the bottom of our bowls. We found it to be a nice addition that a added a new texture to the bowl. Also, we didn’t have any yogurt so he substituted chipotle lime cashew cream. It worked well with the other flavors. I absolutely LOVE this recipe!! It’s one of my favourites to make because it’s straightforward and doesn’t make a lot of dishes. I have the tiniest excuse for a kitchenette (I don’t even have an oven!) and this has been a go-to because I can make the rice on the stove and the salmon in my toaster oven simultaneously. I also genuinely believe it helped me get over COVID– the salmon’s packed with nutrients and the spice cleared my stuffy nose! Pro tip: when I’m lazy or out of spices, I sub out the chili and cayenne pepper and instead use Trader Joe’s can of diced and fire roasted tomatoes with green chilies for a similar kick!

I made this for the #AKDinnerParty and it was delicious! I would make the salmon again in a heartbeat. The brown sugar in the spice rub made it soooo tasty. The rice was yummy but stuck to the pot, so for a quicker weeknight meal I might just go white rice next time. The salmon has enough flavor all on its own! Thanks for sharing.

Good recipe that was flavorful and a different way for us to have Salmon Sundays. Due to trying to cut back on extra sugar in our diets, I omitted the sugar from this recipe. I added an extra veggie to the meal, but overall, a good choice. We will add this to our regular recipe rotation.

Loved this family friendly meal! The salmon is sweeter vs a straight up taco seasoning, which was really different and wonderful! The rice is great too. My 4 year old gobbled it up. We added fresh mango to our bowls…it was a great topping! #AKDinnerParty

Wow, the rice is so delicious and flavorful in this dish! We grilled the salmon and added grilled vegetables (zuchinni, peppers, onions) to our bowls as well. Easy recipe and great for meal prepping. #AKDinnerParty

This salmon recipe will be my go to recipe! This recipe gave me the confidence that I can cook fish! The basmati with all the add ons were spot on and complimented the spices/lime juice on the salmon so well. Once everything was plated my kitchen table looked like I was at a restaurant! Also an added bonus is that I got 2 dinners out of this and it tastes just as good the next day. #AKDinnerParty

This recipe is amazing! We’ve made it twice and we love it! My husband said 5 star restaurant quality! I didn’t adjust anything except the rice. We use Seeds of change in the microwave bag so I just microwaved the rice, sautéed the veggies the same as directed, added the sauce and spices and then threw the rice in! Easy peasy!

Just made this last night! It was simple to pull together which is always a huge plus and it was absolutely delicious! The taco seasoning for the salmon was especially amazing. I was missing lime juice and just used lemon which turned out great, excited to re make it with the lime though.
My 11 year old made this for dinner tonight (just doubled the recipe for a family of four) and it is AMAZING. So packed with flavor, we devoured it. Thank you!

First made this for the AK dinner series and have made it multiple times since. The spice mix for the salmon is delicious and it’s an easy one to put together.
This dish really was damn good! Loved the spices on the salmon, with the sugar almost giving it a candied taste. And the rice was packed with flavour and veggies from the peppers. Greek yogurt and avocado were the perfect garnish to add a layer of creaminess and balance out the whole meal!
Very good recipe! Its a bit time consuming and several steps but the end result is a tasty dinner. I like a veggie heavy dinner so I added extra 1/4 cup bell pepper (red) + spinach + carrot to the rice and it was great! Will make again
This is one of my FAVORITE things to make for weekday lunches. I make the rice and salmon in advance and then quickly throw together day of. There is no issue reheating the salmon so long as you don’t put it in the micro on high. Reduce the power down and heat till thru not scalding.
What I also LOVE about this recipe is how adaptable it is. Don’t have tomato sauce? Use a tablespoon of tomato paste with a little water added. No salsa? Chop up some tomatoes and red onion instead. There are truly no rules.
Today I had a bit of a mango leftover from breakfast and thought hey why not. The actual question is why have I not done this sooner! The sweetness adds a brightness that blew this dish out of the water! Especially with the lime and cilantro. I think pineapple would do the same.
This was one of the most delicious meals I’ve ever made! And I cook a lot! Will definitely save this one for “special occasion” meals for two! We savored every mouthful. Worth the time it takes to put together! Used Jasmine rice but want to try it lower carb next time!

These taco bowls actually were SO damn delicious! I doubled the recipe for my family and everyone loved this dish – even my two kids (11 and 13). I followed it exactly. Topped it with guacamole, sour cream, green onions, cilantro, and hot sauce. We all said this is a keeper!

This was amazing!! I used brown rice instead of basmati and it worked great. There are so many variations on tacos and taco bowls out there but this blew my mind, it’s so flavorful. My husband took one bite and said “WOW!” Every time he does this with an Ambitious Kitchen recipe I have to say “it’s from the lady that also makes …(then list the recipes of yours I make on repeat. That list is getting quite long!)

No, you can buy tomato sauce in a can here, not sure what it would be in Europe.

More than once I have noticed that the times at top of page are different from those listed with the recipe. On this one, prep time is 10″ at top, but doubles to 20″ further down. Important if one has a time crunch for getting a meal on the table.

I have made this so many times and I never get tired of it. I cook the salmon in the air fryer which makes is perfect every time. Can’t say enough good things about it! Don’t forget the avocado. The creamyness is a game changeer! Enjoy!
