I first shared this recipe back in 2020 when I was cooking up one of those clean-out-the-fridge dinners, and I couldn’t believe just how amazing it turned out.
This wonderful stir fry is packed with all the rainbow veggies, a slightly sweet sesame ginger sauce, and roasted cashews for a little added crunch. HOLY YUMMY.
I especially love this meal because you can easily switch up the veggies and protein with whatever you have on hand. I’ve included tons of ideas for customizing below, including ways to make it vegan! This will truly be one of your new fav weeknight dinners.

What kind of sauce goes in this chicken green bean stir fry?
Typical stir fry sauces are made of a few different components: soy sauce, sesame oil, rice vinegar, a sweetener like sugar or honey, and plenty of seasonings. They also usually contain a thickening agent such as cornstarch or arrowroot starch to make the perfect sauce.
In this chicken and green bean stir fry I make a lip-smacking delicious sesame ginger sauce that generously coats all the chicken and veggies perfectly and still leaves a little extra for serving over a bed of rice.
Ingredients in chicken green bean stir fry
Not only is this chicken green bean stir fry paleo-friendly, but it’s also gluten free, grain free and dairy free, which means it basically ticks every box out there. Personally, I love that this healthy stir fry is packed with veggies and comes together in about 30 minutes, making it a great weeknight dinner option. This recipe is also great for mixing and matching what you have in your fridge; don’t be afraid to get a little creative with what you have on hand! To make this green bean stir fry you’ll need the following:
- Chicken: we’re using lean ground chicken, but you can also use ground turkey. You’ll cook it in sesame oil with some garlic powder, salt & pepper.
- Veggies: this beautiful stir fry is packed with carrots, onion, red bell pepper & green beans. AKA a rainbow of veggies.
- For the sauce: that delicious stir fry sauce is made with low sodium soy sauce, garlic, coconut sugar (or brown sugar), sesame oil, rice vinegar, fresh ginger, sesame seeds, red pepper flakes & arrowroot starch (or cornstarch). These will be pantry staples for so many recipes!
- To garnish: I love topping my plate with roasted cashews, sesame seeds, and green onion.
Experiment with your fav proteins
What’s unique about this healthy chicken green bean stir fry is that it uses ground chicken or ground turkey instead of diced chicken breast (or thighs) so that it can simmer in that delicious sauce. It’s seriously better than takeout! Of course, you can also use:
- Diced chicken breast or chicken thighs
- 1 can of drained, rinsed chickpeas for a vegan option
- Or cubed or crumbled tofu for a vegan option
Out of green beans? Try these veggies instead
If you’re out of green beans or aren’t a fan, feel free to sub in any or a combo of the following:
- Broccoli
- Asparagus
- Snow peas
- Mushrooms
- Extra bell peppers
How to make chicken and green bean stir fry
- Make the stir fry sauce. In a medium bowl, whisk together all of the stir fry sauce ingredients and then set it aside.
- Cook the chicken. Add sesame oil to a large pot or deep skillet and cook your ground chicken with garlic powder, salt and pepper. Transfer the fully cooked chicken to a bowl.
- Cook the veggies. Start by cooking the onion and carrots for a few minutes so they start to get soft, then add the rest of your veggies. Cook them until the green beans are slightly tender but still have a bite.
- Combine the stir fry. Add the cooked ground chicken back to the pot with the veggies, turn the heat to low, and add in the sauce. Cook over low heat until the sauce begins to thicken.
- Garnish & serve. Top the stir fry with roasted cashews, sesame seeds, and scallions/green onions. Enjoy!
How do you cook green beans for stir fry?
In this easy stir fry recipe, you’ll cook your green beans in a pan with the bell pepper for just about 6-8 minutes. This allows them to absorb flavors while still maintaining a nice crunch, which is essential. The key is not to overcook your green beans! You’ll know when your green beans are cooked when they turn a beautiful bright green color.
What to serve with stir fry
This stir fry is delicious as is, but I recommend serving it over:
- Brown rice
- My famous coconut rice
- Quinoa
- Cauliflower rice
- Rice or ramen noodles
Storing tips
Store any leftover green bean chicken stir fry in an airtight glass container in the refrigerator for up to 3-4 days.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- For the sauce
- 1/3 cup low sodium soy sauce or coconut aminos
- ⅓ cup water
- 3 cloves garlic, minced
- 2 tablespoons coconut sugar or brown sugar (or sub 1 tablespoon honey)
- 1 tablespoon sesame oil (preferably toasted sesame oil)
- 1 tablespoon rice vinegar
- 1 tablespoon fresh grated ginger
- 1 tablespoon sesame seeds (or sub 1 tablespoon tahini)
- ½ teaspoon red pepper flakes
- ½ tablespoon arrowroot starch (or sub cornstarch)
- For the chicken
- 1/2 tablespoon sesame oil (preferably toasted sesame oil
- 1 pound lean ground chicken (or ground turkey)
- ½ teaspoon garlic powder
- Freshly ground salt and pepper
- For the veggies
- ½ tablespoon toasted sesame oil (preferably toasted sesame oil)
- 2 large carrots, thinly sliced
- 1 white onion, chopped
- 1 red bell pepper, chopped
- 12 ounces fresh green beans, trimmed and cut in half
- For serving
- ½ cup roasted cashews, chopped
- Scallions (green part of the onion only)
- Extra sesame seeds
Instructions
- First make your stir fry sauce: in a medium bowl, whisk together the soy sauce, water, garlic, coconut sugar, sesame oil, rice vinegar, fresh ginger, sesame seeds, red pepper flakes and arrowroot starch (or cornstarch). Set aside.
- Add ½ tablespoon sesame oil to a large pot and place over medium heat. Once oil is hot add in ground chicken and season with garlic powder, salt and pepper. Quickly begin to break up the meat and cook until no longer pink. Once cooked, transfer meat to a bowl and set aside. Keep heat in pan.
- In the same pot, add ½ tablespoon sesame oil. Add in chopped onion and sliced carrots and cook for 2-4 minutes until onions begin to soften. Next add in green beans and bell pepper and cook, stirring frequently, for an additional 6-8 minutes or until green beans are slightly tender but still have a bite. Add cooked ground chicken back to the pot with the veggies. Immediately turn the heat to low and add in the sauce. Cook for an additional 2-4 minutes over low heat until the sauce begins to thicken.
- Serve with brown rice or quinoa for a healthy dinner. Garnish with roasted cashews, a few extra sesame seeds and scallions. Serves 4.

It definitely took me more than 30 minutes to make – more like an hour. We both loved it; hubby even went back for seconds. This one is a winner and will go into the rotation for nights when I have a little extra time or when I plan ahead and prep the veggies the night before.

Absolutely loved this recipe. It reminded me of lettuce wraps (minus the lettuce) and stir fry combined into one. I agree with the below comments of building in a little extra time to prep the veggies if you think you might need it.. However, overall it was simple and delicious!

I made this tonight with what I had and turned out excellently. I followed the sauce recipe exactly. Veggies I used broccoli, asparagus and red bell pepper. I found I had to steam the broccoli for a few minutes and then added the pepper and asparagus to get it to be the texture I prefer. Topped with toasted peanuts. Turned out awesome! This recipe was delicious. Shared some with my daughter and family who all loved it and my mom who also loved it. Basically it appealed to 3 year olds and a 90 year old. I have to admit that i did not have the seasame oil in my kitchen so didn’t use it but the fresh ginger and garlic made it. I did use great beans although I worried they might be too crunchy but they cooked well. I used carrots and onion and added some zucchini cause I had it as well as some red pepper. The veggies and chicken should freeze just fine! I’d recommend cooking the rice once you’ve thawed the chicken & veggies and are ready to eat.
Your recipes are always amazing, and this one is no exception. The sauce was the star of the show, and I loved how versatile the recipe is. We used crockpot shredded chicken instead of ground chicken and didn’t even season it – just tossed it with the sauce and cooked to thicken it. So tasty and easy! A great Tuesday night meal for our family! Loved the sauce so much! Didn’t have any red peppers, so subbed mushrooms. It was perfect that way! I did not have low sodium soy, so I used a little less than 1/3 of a cup and added some water. Great choice as it was the perfect amount of flavor without tasting salty!

I made this because I was looking for an easy dinner that included a veggie, protein, and carb; it did not disappoint! The flavors in the sauce are delicious and so much better than bottled sauces. I love that the veggies are versatile. The only thing that didn’t work out was the sauce thickening at the end. I’m not sure what happened, but the rice soaked it the extra sauce and it was still delicious!

I have made several AK dishes and loved them all! This one, however, takes the cake! So easy to modify and make your own – I added snow peas, mushrooms, and celery, in addition to the green beans and bell peppers, and used leeks instead of onions. I’m not a fan of cooked carrots so I used butternut squash – it “squished up” a bit, but the entire dish was absolute amazing! My husband loves all the dishes I have made from AK, but this one he could not stop raving about! Definitely a 10/10, but honestly, so are all the other dishes I have made! ‘Can’t thank Monique enough for sharing such deliciousness!

The food was really good and tasty! I served mine with cauliflower rice and put the low sodium soy sauce in the rice while it cooked. I’m not complaining but this is not a 30 minute dish. From start to finish it took me and my husband 2 hours. 😬 So if you are cutting everything up as far as the veggies and the chicken it will take longer than 30 min.

I’ve made this recipe twice, and it was absolutely delicious both times. I used chicken breasts cut in small pieces instead of ground chicken. However I will say that it does NOT take 30 minutes to make this – in fact I don’t know in what world it could possibly take this little time, even if somehow all the ingredients were prepped ahead of time. It literally took me 4 hours each time (most recipes on this site take me about twice the time to make, I guess I’m slow). So if you’re looking for a quick recipe, this is probably not a good choice.

This meal has become a staple meal for our household. I use 1/2 the amount of red pepper flakes to reduce the heat for me, but my husband adds it back in on his plate. We add the meal to brown rice or use it to make lettuce wraps.
I loved this dish, as did my husband & picky toddler! It was healthy but very satisfying. I chopped all of the veggies and made the sauce earlier in the day so all I had to do at dinnertime was throw it all in a pan. My toddler loved “helping” by breaking the green beans in half during prep. I subbed lean grass-fed beef and served over rice noodles — definitely don’t skip the roasted cashew garnish! Red peppers cook fast, so I delayed putting it in until the beans were almost peak green.. Instead of ground chicken, used a leftover chicken breast from Saturday’s grilling. The sauce is quite good — used chicken stock instead of the water. Overall, very delicious.

I loved making this dish today. It was full of flavor. I followed the directions and ingredient list, but I did sub a white onion for half a red onion and half a yellow onion because it was all we had. The only part of the recipe that I think I could improve on was the thickness of the sauce. My sauce seemed a little runny and I was wondering if that was the same for anyone else? If not, do you have any tips on how to make it thicker?

I made this on a whim because I had some green beans I needed to use so I didn’t shop for this recipe, but used what I had at home. Turned out great with ground turkey and missing the onions. The flavor was delicious and cooking it was easy. I reduced the red pepper flakes by half and it was prefect level of spice for me. My husband loved it too.

Made it exactly as written other than ground turkey instead of chicken, served it over brown jasmine rice and it was easy and delicious! We will definitely be having this again.
Delicious!!!! We’ve been trying to find recipes to use all the vegetables from our garden. We will definitely make again over the winter with the vegetables we put in the freezer.
Followed the sauce recipe exactly, but used whatever else I had on hand for the chicken (boneless thighs) and a package of frozen stir fry veggies. So delicious! I cut the chicken into 1 in pieces and cooked in the sesame oil and avocado oil, adding s&p and garlic powder, as the recipe calls for. Removed, added veggies until they were cooked then added back the chicken and sauce. Really one of the best stir fry sauces I’ve had! Sadly no leftovers!
Sooo delish!! I followed the recipe except instead of serving on rice or quinoa I mixed in those skinny rice vermicelli noodles! Better than any “take-out” stir-fry dish, the sauce is unreal! I made with coconut aminos and honey and topped with scallions and cilantro 🤤

Loved this recipe! I made it for the first time this evening, but while the cook time was 30 minutes, the prep time was equally as long, So I think it is important to plan for this, at least initially. Prepping the vegetables and storing in your refrigerator until needed for the meal.
The sauce was the best I’ve ever made. I think the toasted sesame oil made all of the difference from others. I also used honey as the sweetener instead of brown sugar or coconut sugar.
I plated over brown rice, and the colors made the meal attractive and appetizing. My husband loved it and I’ll make it again!
I made this recipe with ground turkey. My husband said it was even better the second day! Packed full of veggies and flavor this recipe is a keeper.
I’ve made this several times and it is always SO good! The sauce is delicious with a great balance of meat and veggies. It comes together quickly and my whole family enjoys it.

My family loves this meal. I add extra chicken. I love that there are so many veggies. Veggies take a long time to chop, but cooking time is quick and easy.

This is an excellent, healthy meal! It’s also very good left over. It does definitely take longer than 30 minutes – that’s about how long the chopping takes, if not longer. The sauce is extremely flavorful and I like how you can sub in different veggies. I make the following modifications: I significantly reduce the red pepper, I find even halving it it’s way too spicy (so I do about 25% of the recommended amount). I do a little less ginger than called for too, since the ginger doesn’t really cook and soften flavor wise. I add 1.5 lbs ground chicken instead of 1 lb, and find that’s a better balance since I add additional veggies. I add finely sliced mushrooms and broccoli florets, and it’s a really yummy mix! Thanks for such a great recipe.

This dish was amazing! I wasn’t sure about the tahini instead of sesame seeds but the sauce was sooooo flavorful. My whole family including kids loved this. I served it with rice. Delicious!
