Rewind to when I was pregnant with Sidney: I was making this exact recipe in a crop top when I bumped my 9-month belly into the HOT baking sheet. I can STILL see the scar and that’s one of the reasons why I’ll always remember making these delicious little tender bites.
Another reason I love them? Tony said they’re officially his favorite chicken nuggets. He couldn’t stop raving about them. And that’s saying a lot considering he basically lived off fast food for a few years post-college.

What can I say — they’re truly the BEST healthy chicken nuggets ever.
The first time I tested this recipe I was blown away by just how crispy and flavorful these baked chicken nuggets were. The seasoning is based off my paleo chicken tenders (which I LOVE) but this time I was going for a version that was a little crunchier and one that could even give Chick-Fil-A a run for its money.
The results were FANTASTIC. Seriously tender. So flavorful. Crispy. Perfectly dippable. Outrageously good. ALL THE ADJECTIVES.
Ingredients in baked chicken nuggets
Not only is this healthy baked chicken nuggets recipe quick to make, dairy free, perfectly spiced and requires minimal ingredients that you might even have in your kitchen right now! Here’s what you’ll need:
- Chicken: I use boneless, skinless chicken breast and cut it into 1 inch cubes.
- Breadcrumbs: the outside of the chicken nuggets get nice and crispy thanks to panko breadcrumbs!
- Olive oil cooking spray: using cooking spray is a KEY to the crispy outside as well. You’ll learn why below.
- Spices: these chicken nuggets get their flavor from onion powder, paprika, a bit of cayenne pepper (if you like a little heat), garlic powder, salt & pepper.
- Eggs & milk: you’ll need both to help the breadcrumbs stick to the cubes of chicken. I used almond milk to keep the recipe dairy free!
- Dipping sauces: have fun with aaall of the sauces like honey mustard (try the homemade one in this recipe!), ketchup or your favorite BBQ sauce for dipping!
The secrets to crispy baked chicken nuggets in the oven
- Toast your breadcrumbs. This is essential for making crispy baked chicken nuggets. You’ll just need to toast the breadcrumbs in the oven for 5 minutes or so before tossing them with the spices and then the chicken. This is a crucial step for getting that deliciously crispy texture on the outside that tastes even better than the fried version.
- Use a wire rack. This will not only prevent sticking but will also allow the chicken nuggets to bake up nice and crispy on all sides. If you don’t have a wire rack, that’s okay, you can just flip them halfway through baking.
- Use cooking spray. You’ll want to not only spray the breadcrumbs with olive oil cooking spray before baking them, but you’ll also want to spray the assembled chicken nuggets once more before tossing them in the oven. This will ensure that they get that wonderful, golden brown color!
How to make healthy chicken nuggets
- Toast your breadcrumbs. As I mentioned above, this is essential to getting perfectly crispy chicken nuggets. Add your breadcrumbs to a large baking sheet, spray them with nonstick olive oil cooking spray, and bake them for a few minutes (stirring halfway through).
- Add your spices. Transfer your baked breadcrumbs to a bowl and mix in all of those delicious spices.
- Make the egg mixture. In a separate bowl whisk together the eggs and almond milk.
- Assemble the nuggets. Use tongs to dip each chicken cube in the egg mixture, then toss it into the breadcrumb mixture until it’s completely coated. Transfer the nuggets to a prepared wire rack.
- Bake & serve. Lastly, spray the tops of the chicken nuggets with more cooking spray and bake them up! Serve with your fav dipping sauces and our suggested sides below.

How to store & freeze homemade chicken nuggets
In the fridge: leftover chicken nuggets can be stored in an airtight container in the fridge for a week. To reheat, place the chicken nuggets on a baking sheet and broil them on high for a couple of minutes until heated through and crispy on the outside.
To freeze & reheat:
- Let the chicken nuggets cool completely before transferring them to a cookie sheet.
- Freeze them on the cookie sheet to ensure that they don’t stick together, then transfer the frozen chicken nuggets to a freezer-safe bag or container and place in the freezer for up to 2-3 months.
- To reheat, I’d recommend heating them in the oven so that they’re nice and crispy.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 1 ½ cups panko breadcrumbs
- Nonstick olive oil cooking spray
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 1/4 teaspoon cayenne pepper*
- 2 large eggs
- 2 tablespoons almond milk (or milk of choice)
- 1 pound boneless skinless chicken breast, cut into into 1 inch cubes
Instructions
- Preheat oven to 400 degrees F.
- Add panko breadcrumbs to a large baking sheet and spread out in an even layer. Spray breadcrumbs with nonstick olive oil cooking spray. Bake for 2 minutes, then stir breadcrumbs (or just give the pan a shake) and then bake for 2-3 minutes or until breadcrumbs are golden brown. Keep heat in the oven.
- Transfer breadcrumbs to a medium bowl. Whisk in spices: salt, black pepper, onion powder, paprika, garlic powder and cayenne pepper. Set aside.
- In a separate medium bowl, whisk together the eggs and almond milk. Set aside.
- Line the large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.
- Dip each chicken cube into the egg mixture, then use a tong to grab each chicken nugget and toss into the breadcrumb mixture to completely coat with breadcrumbs. Use tongs to transfer to the wire rack, placing about 1 inch apart.
- Generously spray the tops of the chicken nuggets with nonstick spray. Bake in the oven for 15-20 minutes until cooked through and temp reaches 165 degrees F with a meat thermometer. Serves 4. Serve with BBQ sauce, honey mustard, ketchup or whatever sauce you’d like!

Amazing! I have tried many chicken nugget recipes and 2 things made all the difference: toasting the crumbs (why has no one else mentioned that before) and also using the wire rack. My two teenage boys were impressed and they thought they were better than the fried ones I’ve made in the past! We like things on the spicy side, so I used a garlic seasoning with a blackened red pepper seasoning in place of spices in the recipe. Bye Bye unhealthy fast food chicken nuggets! This is easy to make, just a few ingredients and delicious.
The toasted bread crumbs + wire rack are a game changer! So happy the boys love them too.

I made these tonight and they were amazing!!! I used to use a different recipe where instead of an egg mixture you dipped the nuggets in butter. I felt like I could never get them crispy enough and the were always a little greasy. These were perfect!! Crispy and so much flavor! My 7 year old said they tasted and smelled like Wendy’s nuggets!! This was amazing! It was SO much easier and healthier than frying them in oil – and they actually came out crispier bc of the toasted panko and the wire rack. Yum! I would never have thought to toast the panko first and it made all the difference. I skimped a smidge on the spices as I was worried that my kids would think they were too flavorful, but next time I’ll go exactly by the directions. These are easy, tasty and crunchy! The leftovers are getting tossed into a Caesar salad for my teenage daughter’s lunch tomorrow.

These baked chicken nuggets are the BOMB! I had my hesitations when making them because so many other baked chicken nugget/tender recipes online come out soggy. I think the trick is in toasting the breadcrumbs…extra flavor and extra crispy…GENIUS! I dont have an oven safe wire rack so I just baked them directly on the pan, flipping them halfway. They came out divine. Seriously can’t say enough about these nuggets. But, it’s Monique, after all. She never lets us down!

I didn’t have Panko so I used my food processor to crush up salt and pepper kettle chips. Didn’t spray them with oil since they were already oily. They were delicious!!! I will be making these again 🙂

We made this recipe last night. So good! Toasting the bread crumbs prior to coating the chicken is fantastic and never occurred to me to try. I make these a few times a month, especially when I have chicken I don’t know what to do with. The chicken comes out PERFECTLY tender and juicy, while still crispy on the outside. My toddler loves these too!
These are really excellent and you should make twice as much because you/your family/friends will love them and ask for more! I seemed to need more panko to coat all the chicken but I think I used closer to two pounds rather than 1.5 pounds.

I haven’t eaten frozen chicken nuggets since I was a little kid. So when I saw the recipe for this grown up version, I was pretty excited to try it. They did not let me down. They are fun to eat when you want a finger food and don’t want to feel guilty about it. I did think the spices were a bit aggressive for my taste, so I halved them and thought it was much better.

Super yummy!!! Second time making these in two weeks. My family of 5 (and one of my 3 kiddos who is picky) LOVED these. Hi Monique, these were indeed the best crispy nuggets i’ve ever tasted. I’ve tried a lot of recipes but all tested so blunt. My whole family loved them, especially the kids. I have a question though. Do i have to bake them and then freeze them? Can’t i freeze them as they are and then bake them?

I’ve made these in the past but haven’t left a comment. These are great and so easy to whip up. Love the toasted Panko. Just made these and I forgot to spray them with oil, and they weren’t as crispy as they usually are – so don’t forget that last step!

These are to die for!!! I treat myself to chick fil a nuggets every once in a blue moon, and these are so much better! They’re so tasty, crunchy, and guilt-free. I’ve been reheating them in the air fryer and they taste good as new.

This recipe was delicious! Loved the combination of spices and toasting the breadcrumbs gave a nice extra crisp. My boyfriend and I like things a little spicier so we doubled the seasonings in this recipe but the ratios were perfect. Will make this again!

These were seriously the best chicken nuggets. I was shy a half cup of panko so I added crushed up croutons and they were out of this world. The entire family loved them (and I have very picky teenagers). Will definitely be making these again.

I have made this recipe probably 10 times now, it never fails and it is always super delicious! The only chicken nugget recipe you need!
I am making this as I type and just realized that I left out the spices. I marinated my chicken in Italian salad dressing, so we will see if the flavor from the marinade compensates. Either way, I am excited for the outcome as this was comparatively quicker than other recipes that call for double dipping the chicken in the flour mixture. I will post again to let you all know how they come out.

My fiancé and I had so much fun with this recipe. We cut up the chicken into larger chunks to make them the size of boneless wings and did our own “hot ones” challenge by putting a different spicy sauce on each one haha. I only had 1 egg but it ended up being plenty to coat all the pieces and didn’t have a wire rack but they crisped up perfectly.

This recipe is excellent! We made 1/2 of our chicken nuggets exactly as written in the recipe. And, we made spicy buffalo nuggets with the other 1/2 of the chicken pieces. For the spicy batch, instead of the egg/milk mixture as written, we used 1 egg, 1 Tbsp of butter, and 1/2 cup of buffalo sauce. Otherwise, we used the same panko/spice mixture as well as the cooking technique as written. Both versions had a crispy crust and tender chicken. Yum!
My family REALLY enjoyed this chicken. My husband is super picky. And he said it was the best chicken. I followed the recipie exactly. However they took about 45 mins to cook.. will be doing fried chicken this way going forward.

I just tried these for lunch today; my first time ever making home made chicken nuggets! I thought they were pretty good! I didn’t have any cooking spray, so I had to carefully drizzle a bit of olive oil on each nugget, but they still turned out good and were crispy on the outside.
Mine turned out ever so slightly dry, but I think that may have been because I might have accidentally cut my nuggets a little smaller than the author did. When I checked them at the 15 minute mark, the internal temperature was already in the 170’s, so the smaller size may have meant they just cooked a little faster and dried out slightly. However, I still really liked them and so did my 1 year old daughter. I will make them again, and really like the idea of making a batch and freezing them. Thanks for the recipe!

Great recipe! Easy and delicious. MUCH better tasting than the frozen nuggets from the store. My 4 year-old granddaughter gives two thumbs up! Only change I made was to leave out the cayenne, as I was worried she might not like the heat, even though it’s slight. Oh–I also used 2% milk, as that was what I had on hand. This is by far the best chicken nugget recipe I have found! They are crispy and very favorfull. I love the fact there is no frying and yes the key to this recipe is to pre-toast the panko. I used seasoned panko and regular spray since that is what I had on hand. The breadcrumb portion are true to the 1-1/2 lbs of chicken nuggets so if you have more then I would adjust accordingly. I have been looking for a recipe that can be made ahead without losing the crispness and this does the job as long as you reheat in oven on the rack. I must say I rarely leave reviews on recipes but this is well worth the small effort. They are very quick to make and delicious

These nuggets are fantastic – very crispy on the outside and moist on the inside. My son and I devoured them! Thank you for creating such an easy and healthy version of a favorite fast food. Is there a reason (besides convenience/calories) that you use olive oil cooking spray vs liquid form? I used ghee to brown the crumbs and liquid oil for greasing/topping – it worked out great, but surely upped the calories. I’ll definitely be making these again and trying out more recipes from your ambitious repertoire.

I made the nuggets in air fryer and came out perfect. My family particularly my 6-year-old son who is fussy around food, loved them so much.
I made this with boneless thighs because I had extra from your delicious honey mustard chicken recipe 😉 was not sure it would be ok, but it was great. All family members including the picky eater enjoyed and I will have to make a double batch next time. Will maybe try chicken tenders so I don’t have to spend so much time prepping the meat.

Not sure what I did wrong. Though the nuggets were super crispy on the outside and nice and soft on the inside the coating just didn’t taste right. I mixed everything exactly per recipe and even though I backtracked and took some pepper out the nuggets came out super peppery and too papriky. I had to remove the coating and basically serve baked chicken cubes with ranch sauce to mellow out the heat. Will definitely try again as I liked the quality but not the flavor.

We loved this recipe and if I had followed the directions more carefully it would have been better. My problem was that there is so much around the recipe and ingredients listed in two different ways i never found the real list of ingredients until after i made it.
Made this in the air fryer (cooked on 200c for about 10 mins, flipping halfway) and my 20m old son vacuumed them up. will definitely make again

I made ersatz buttermilk (skim milk starting to sour with a good splash of vinegar). I cut the ( bnls, sknls) chix breasts into pieces larger than 1″‘ cubes and marinated the pieces overnight. I used a traditional 3-dish breading method: AP flour, some of the marinade with a beaten egg, and toasted homemade bread crumbs with most of the listed seasoning. Came out great! Although my recipe varied from yours, I voted 5 stars for the basic technique.

By baking the crumbs ahead of rolling on chicken, they burned too easily, I have used crumbs before and did not have to precook them.
Other than the recipe being simple, I did not like it.

This has got to be the easiest, minimal prep way to get restaurant-style crispy chicken nuggets at home. My husband and I had a hankering for some this Sunday afternoon – And making this recipe took us way shorter than ordering some takeout!
We added some rosemary and some garam masala – cos we had them in the cupboard – nd a teaspoon of rice flour to ensure maximum crispitude. And these additions did not dissappoint!

This recipe is AMAZING! The nuggets always come out flavorful, crispy, and delicious thanks to the preliminary seasoning & toasting of the panko, This recipe is a quick go to for my wife and I when we don’t want to do much meal prep after an exhausting day. We typically make these chicken nuggets and add them to mixed greens with chopped cucumber, then drizzle it with a super simple spicy apricot glaze. Spicy apricot glaze is a really good dipping sauce for these nuggets if you like a sweet and spicy sauce. To make it: mix 1/2 cup apricot jam with 2-4 tsp sriracha (to desired taste) and 1/4 – 1/2 cup warm water (to desired consistency).

Seriously amazing. I stumbled across this recipe several months ago and it was a huge it with husband, 7 year old and 4 year old. Super easy to make, I usually double the recipe for the 4 of us and then have leftovers for kid’s lunch (yes, these are so tasty they will eat them cold and un-cripsed). You have to watch the bread crumbs carefully so they don’t burn but that was easy. Highly, highly recommend! I bet you could do this same with cod for fish sticks or shrimp.

Hi Sharon – So sorry for the late response. You can prep the breadcrumbs and wet ingredients a few hours before and when you’re ready, you could dip them. Or you could prep them all ahead of time and reheat them on broil for a couple minutes to reheat and re-crisp them. Hope that helps!

Hi! Great question – I don’t think I’d recommend coating the chicken nuggets and storing them in the fridge ahead of time because I don’t think they’ll get as crispy.
My favorite chicken recipe! The seasoning is unreal, spicy and perfection. This recipe is so fantastic! My husband and I love this chicken so much, we now have a spice container with these ingredients so we can use it for a variety of different recipes! You have out done yourself Monique!

These are a little bit of a labor of love but worth it! I usually use these to put over a salad but let’s be honest, I’m snacking on them as they come out fresh out of the oven. The wire rack over the baking sheet is a must! I would also love it if there were air fryer directions in addition to the conventional oven, but ultimately it’s probably no easier for this particular recipe.
