Helloooo Sunday! As I’ve gotten older I’ve found that Sunday is actually one of my favorite days of the week.
To me Sunday is the perfect blend of relaxation and productivity — I run errands, do some meal prepping for the week, and of course watch as many episodes of House of Cards as possible. It’s the perfect day to do your favorite hobby, or even learn something new! That’s why today I wanted to share an easy tutorial for your recipes: how to make FOUR different vegan eggs.
I get many requests for vegan recipes, especially healthy treats. Vegan cooking and baking often requires some creativity in order to make swaps and have the recipes hold up the way you want them. This is where vegan egg varieties come in handy! These ones use simple ingredients that you may already have on-hand: chia seeds, flaxseeds, banana, and canned chickpeas.
Here are the recipes for each vegan egg:
Chia Egg: 1 tablespoon chia seeds + 3 tablespoons water
Flax Egg: 1 tablespoon flaxseed meal + 3 tablespoons water
Banana Egg: 1/2 banana, mashed
Aquafaba Egg: 3 tablespoons reserved chickpea liquid (from a can)

The flax egg is always my go-to in baking! Sometimes, I even use canned pumpkin. Anyways, have you ever tried the Follow Your Heart Vegan Egg from those health food stores? It is mainly used as a scrambled egg or omelet substitute, but it works wonderfully in baking supposedly!
Pumpkin is a cool idea! I haven’t tried that brand, but will check them out!
how much canned pumpkin for each egg?
Yes, I’ve used all of these… they are all good in different ways. Have you heard of the ‘super-egg’? Some folks have added flax meal to aquafaba for extra bind!
Some of the ingredients are a bit foreign to me,but it looks like a delicious meal
What if the recipe needs more than one egg?
You can make as many of the vegan eggs as the recipe calls for!
While I’ve not made any of these was wondering if adding a small amount of Black Salt would enhance the “egg” flavor?
I just use these for baking, so they usually don’t need that “egg” flavor in them!
