There’s truly no better combo than peanut butter and jelly.
Peanut butter jelly breakfast toast with extra crunchy chia seeds. Peanut butter on a cinnamon raisin bagel (omg). Peanut butter and fresh strawberries spread on banana muffins. Peanut butter and jelly stuffed french toast.
Peanut butter and jelly forever and ever, amen.
It’s funny, but PB&J doesn’t feel like a nostalgic food to me. My parents never excessively packed my lunch box with it, nor did they buy me those weird little pasty white crustless frozen PB&J sandwiches from Smucker’s. So I actually have no real reason or knowledge of why the flavor has been a necessity in my life; however, I can’t help but CRAVE it.
Speaking of PB&J, what’s your favorite combo? I usually go with crunchy peanut butter and raspberry jam. The grape tends to be way too sweet for me, but I realize it’s what many grew up on and will forever adore. Last week I tried apricot preserves on peanut butter toast, which was fantastic. So many variations, so little time.
Today I wanted to share a recipe I created for all you PB&J lovers: peanut butter and jelly baked oatmeal. It’s baked to perfection and I’m seriously having a moment with this beautiful breakfast skillet because it’s FULL of peanut butter flavor, healthy fats and provides over 8g of protein per serving.
What you’ll need to make this peanut butter & jelly oatmeal bake
Not only is this PB&J baked oatmeal delicious, but it’s also SO easy to make and uses super simple ingredients. Here’s what you’ll need:
- Coconut oil: to give the oatmeal bake the perfect amount of moisture you’ll need a little coconut oil. Feel free to use melted butter or vegan butter as well.
- Peanut butter: gotta have that rich peanut butter flavor! Be sure to use a natural, drippy peanut butter and feel free to use creamy or crunchy.
- Maple syrup: we’re naturally sweetening this oatmeal bake with just a touch of pure pure maple syrup. You can also use honey.
- Egg: you’ll need one egg in this recipe to hold the oatmeal together. I haven’t tested with a flaxegg but let me know if you do.
- Milk: I use unsweetened almond milk in this recipe but feel free to use any milk you’d like.
- Oats: the bulk of this recipe is made with old fashioned rolled oats. Feel free to use gluten free!
- Baking staples: you’ll also need some baking powder, cinnamon & salt.
- Jam: use any jam or jelly you like! I love using a low sugar strawberry or raspberry jam.
Customize your oatmeal bake
- Mix up the nut butter. If you’re not into peanut butter or are allergic, feel free to use almond butter or cashew butter.
- Add some fresh fruit. I have also found that adding 1/2 cup diced strawberries to the recipe is exceptionally tasty. It’s also delicious with sliced/chopped bananas on top or baked right in.
- Go nuts. This PB&J baked oatmeal would also be delicious with chopped peanuts, pecans or walnuts stirred in the batter or sprinkled on top.
Can I make this peanut butter and jelly oatmeal bake vegan?
Yes! I think a flax egg or a chia egg will work well in this recipe but haven’t tested it to be sure. Let me know if you give it a try.
Can I use steel cut or quick oats?
I would not suggest using steel cut oats or quick oats in this recipe as the texture will not be the same.
How to make peanut butter and jelly baked oatmeal
- Prep your pan. Grease a large 9 inch skillet or 8×8 inch pan with cooking spray or coconut oil and preheat your oven to 350 degrees F.
- Mix the wet. In a large bowl mix together all of your wet ingredients until there aren’t any large lumps of peanut butter.
- Stir in the wet. Fold in all of the dried ingredients and mix until well combined. Pour the mixture into your pan.
- Dollop the jelly. Drop teaspoonfuls of jam onto the oatmeal bake and gently swirl with a knife.
- Bake & serve. Bake it up until it’s barely golden brown, cut into slices and serve!
Make it into oatmeal cups
For easy, on-the-go PB&J baked oatmeal cups: simply pour the mixture into a prepared muffin tin (I recommend using liners AND spraying with cooking spray) and bake for 20-25 minutes until the oatmeal cups are set and barely golden brown. You’ll likely only get 8-10 baked oatmeal cups.
Meal prep this oatmeal bake
This peanut butter and jelly baked oatmeal can easily be prepped ahead of time! I suggest making it either the morning of or the night before, then cutting it into individual servings for easy reheating throughout the week.
Storing & freezing tips
- In the fridge: be sure the peanut butter and jelly oatmeal bake has completely cooled, and then cover the pan with tinfoil before transferring it to the refrigerator. It will stay good covered in the refrigerator for 4-5 days. Reheat individual slices in the microwave for 30-60 seconds.
- In the freezer: once the baked oatmeal has completely cooled, cut it into 6 squares/slices and wrap each square in plastic wrap and tinfoil. You can also freeze the entire PB&J oatmeal bake for later by wrapping it well and placing it in the freezer. When you’re ready to eat it, place the unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. To reheat the entire baked oatmeal, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 1 1/2 tablespoons melted and cooled coconut oil (can also sub melted butter)
- 1/2 cup natural drippy peanut butter (creamy or chunky)
- 1 tablespoon pure maple syrup or honey
- 1 egg, slightly beaten
- 1 1/2 cups unsweetened almond milk
- 1 1/2 cups old fashioned rolled oats, gluten free if desired
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
- 1/4 cup low sugar strawberry or raspberry jam
Instructions
- Preheat oven to 350 degrees F. Grease a large skillet or 8x8 inch baking pan with coconut oil or generously spray with nonstick cooking spray.
- In a large bowl, add in melted and cooled coconut oil, peanut butter, maple syrup, egg and almond milk. Whisk together until well combined and no large lumps of peanut butter remain.
- Fold in oats, baking powder, cinnamon and salt. Pour into prepared skillet/pan and make sure oatmeal is evenly spread out.
- Drop jam by teaspoonful onto oatmeal bake, then very gently swirl with a knife.
- Bake for 30-35 minutes until barely golden brown. Cut into 6 servings and enjoy with almond milk.

Can I use steel cut oats for this?
I haven’t tested it with steel cut oats. If you try it, I would recommend decreasing the oats (steel-cut) to 3/4 cup and possibly increasing the milk a bit.
On my third attempt, i used 3/4 cup oats, 2 cups skim milk, and baked75 min on 375, covered with foil first 50 min. Turned out wonderful except the oats that stuck to bottom of skillet are crunchy and not cooked. Rest of oats were soft. We devoured it as always, but wondering if you think it’ll set-up right if i stir occasionally while it bakes? I’ve got 2 months to use up 9 lbs of oats.
So, my fourth attempt at using steel cut oats was perfect! Did everything as described plus stirred after 15 min and at 30 min, added jam after last stirring.

Every summer when the fruits are cheap and plentiful I make my own version of freezer jam. Just cooking down the fruit with sugar to taste until super thick. I have some raspberry or blackberry peach that would be perfect with this baked oatmeal dish. The weather is finally getting cooler and this will definitly be on the menu. Love all your recipes <3

If you’re using a flax or chia egg to make the recipe vegan, be sure to use maple syrup as well because honey is not vegan. Hope you love it!

You definitely have to be gentle with the jelly when adding it to the oatmeal bake. And yes, the bake should be liquid when pouring it!

Hi, Monique: would almond butter or sunflower butter work as a substitute for the peanut butter? Not for any dietary reasons, I ran out of PB. Almond butter gets a weird texture when it’s heated so I wasn’t sure if it would result in a product that is too liquidy.

I did this on am 8×8 glass pan, and it takes longer than the recommended time.
All ovens are different and it always depends on the heat source of the baking pan you are using. Since you used a slightly smaller pan, it makes sense that it took a bit longer.
OMG. I had to wrap it up and put it in the fridge right away otherwise I would’ve eaten it all in one sitting. Delish!!!

This recipe is seriously so good. I bake mine in a muffin tin (3T of mixture per cup and I can get 12 cups) to have an easy breakfast for the rest of the week. I put one teaspoon of jelly in the middle of mine (Bonne Maman strawberry and blueberry are the best) and I bake them for 30 minutes. Easy and delicious 🙂

This is very tasty and a good recipe however the jelly just sank to the bottom instead of staying on top like yours – I think the recipe neglects to mention that you should make sure the jelly is either room temperature or even melted (then cooled) for it to cook better.
I don’t have an issue with the jelly needing to be at room temperature. It probably just depends on the jam/preserves you use! Sorry it sank for you.
The recipe is a brunch favorite with my family and can easily be changed up for the seasons. I’m currently I obsessed with using wild friends pumpkin peanut butter and bonne manam pumpkin preserves.

I doubled this recipe and put it in a 13 inch skillet for Christmas brunch. I used homemade cherry jam and it was delicious. We argued over who got to take the leftovers home! We will definitely make again!

Made this recipe after trying the Chunky Monkey version, and while my husband and I both loved it, I think we both wanted more jam. I ran out before getting to the full 1/4c the recipe calls for, but I still make add some to it when serving next time we make. Otherwise, love these baked oatmeal recipes form AK!

Peanut butter has got to be one of my all time favorite foods. I made this recipe this morning and it was so delicious and filling. I used Oat Milk instead of almond milk and grape preserves instead of strawberry jelly. Just because that is what we had on hand. I am excited for tomorrow when I can have it for breakfast again!

Couldn’t find a square pan or muffin liners for my tray so went with an 8” round. I baked for 34 mins, checking after 32 and when I went to serve it warm, it fell apart. I had thought this would be more of a bar/pie- something my toddler could hold in his hand. Was it supposed to be?
I have made this for the past two weeks for breakfast and I love it!
So stinking delicious! Eating this still warm from the oven is my favorite. I’m planning on making it again for the 3rd time in 2 weeks.
I was craving peanut butter and jelly and this oatmeal bake did the trick. This is the best oatmeal bake I’ve ever made! I halved the recipe and baked in a smaller dish since I’m the only one eating it. It worked perfectly. My jelly sunk and wasn’t as pretty as your pictures but the flavor was SO GOOD! Will make again!

Super tasty recipe, I would highly recommend it.
I tweaked it and added a ripe medium sized mashed banana and a teaspoon of vanilla extract.
I like that the recipe also provides you with alternatives too and explains how you can make ahead and store it etc!
It makes 6 good sized pieces, perfect with latte.
You could even serve it as a dessert too with some custard.
