Having a little nostalgia moment here as I rework and reshare this incredible pancake recipe from 2017. Yes, SEVEN whole years ago! Before Tony and I even got married let alone had 3 amazing little boys. For perspective, here’s a little snapshot from 7 years back:
“Listening to the new Drake album gives me pure inspiration to get my booty out of bed in the morning, throw around twenty pound dumbbells at the gym (not literally throw) and make some legit protein pancakes topped with all da berries and nut butter. Yesterday Abra and I went through and did a major brainstorming session for May. We’ve got our content calendar all mapped out including recipes and videos. The most trouble I have when it comes to blogging is deciding on which recipes to share because if I had it my way (and enough time), I’d share a recipe every single day because well, I love food, obviously.”
It’s safe to say the days here at AK (and my workout routine) look quite a bit different, but the recipe testing and planning is very much the same. That’s why we’re bringing back this fluffy stack of cottage cheese pancakes that are flourless, naturally sweetened with banana, packed with 20g of protein, and perfect for piling high with your fav toppings.
Cottage cheese pancakes: your new favorite breakfast
Besides being incredibly fluffy and delicious, you’re going to fall in LOVE with this healthy cottage cheese pancakes recipe because it’s:
- Easy to make right — the pancake batter is made in your blender!
- Packed with 20g of protein per serving (thank you, cottage cheese!)
- Naturally gluten free and flourless
- Great for both kiddos and adults!
Ingredients in these fluffy cottage cheese pancakes
These cottage cheese protein pancakes are made with 7 super simple ingredients (including baking powder) and seriously taste like your fav banana bread. Here’s what you’ll need to make them:
- Rolled oats: these pancakes are nice and hearty thanks to old fashioned rolled oats. No flour needed! Be sure to use gluten free rolled oats if you want to keep the pancakes gluten free.
- Banana: you’ll need just half of a banana to naturally sweeten the pancakes.
- Egg: this recipe calls for 1 egg to give the pancakes the right texture.
- Cottage cheese: the key to fluffy, protein-packed pancakes!
- Baking staples: you’ll also need baking powder, vanilla extract and a little cinnamon.
What do cottage cheese pancakes taste like?
Whether you’re a big cottage cheese fan like our whole team or it’s not your thing, you won’t even be able to taste it in these protein pancakes. The banana gives these cottage cheese pancakes a lovely banana bread flavor, and you can feel free to add fun mix-ins in toppings (ideas below!)
Make them ahead & keep the pancakes warm
Feel free to make these cottage cheese pancakes ahead of time (or store leftovers) and keep them warm in the oven! Simply place your oven at 200 degrees F, add your pancakes to a baking sheet or oven-safe plate, and place them in the oven until you’re ready to serve.
Have fun with mix-ins & toppings
The best part about pancakes? All of the delicious mix-ins and toppings you can add! Here’s what we like to add to our cottage cheese pancakes:
- Fresh berries
- A dollop of yogurt
- Nut butter
- Chocolate chips
- Chopped nuts
- A drizzle of maple syrup
Freeze them for later
If you want to make these healthy cottage cheese pancakes ahead of time and serve them at a later date, you can place the pancakes on a baking sheet so they aren’t touching and place in the freezer for 30 minutes (this is called a flash freeze), then place them in freezer safe bags or an airtight container and freeze for up to 3 months. Once ready to reheat, simply add pancakes to a plate and microwave for 30-60 seconds or until warm.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- ½ cup old-fashioned rolled oats, gluten free if desired
- ½ medium banana
- ½ teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- 1 egg
- ¼ cup low fat cottage cheese
- Optional add-ins/toppings: Fresh berries, chocolate chips, peanut butter
Instructions
- Place all ingredients in a blender and blend until completely smooth, about 30 seconds.
- Lightly coat a large nonstick skillet or griddle nonstick cooking spray and heat over medium low heat. Drop batter by 1/4 cup onto skillet. Add desired toppings such as chocolate chips or blueberries.
- Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside.
- Wipe skillet clean and repeat with more cooking spray and remaining batter. Makes 3-4 pancakes

My toddler and I love the flavor of these (my husband thinks they are too healthy tasting), but I have made these multiple times and my pancakes are never fluffy like the ones shown. I always get flat discs, despite following the recipe exactly.
Also, I am not sure how this recipe makes 4 servings as I make a double batch which gives me 8 pancakes (4 corners of a square griddle, twice).
The recipe should not make 4 servings it is supposed to be 2! Not sure what happened there. This is updated! So sorry that you only get flat discs. I’m wondering if your banana is too large or your cottage cheese too watery?

Would these work in a food processor? The only blender I have is a rinky dink magic bullet from ages ago!
I think that it would be best to use a blender because a food processor won’t process the oats as well.
It may not be ideal but I made these this morning (very good!) with a food processor and they turned out great. That being said, if you use the largest magic bullet cup, it would probably be big enough for one serving.
I also made these using my food processor and they turned out amazing. 👍🏼

MY son is allergic to eggs, what can I substitute with ?
Only substitution I made was that I used nonfat plain Greek yogurt in place of the cottage cheese. I also added a tablespoon of peanut butter. These are fantastic!

Hi Caroline! You could use pumpkin or sweet potato, but they won’t be as sweet. You could also try out one of my banana-free pancake recipes here!
Any alternative to baking soda?
This recipe actually uses baking powder! If you’re out of that, you could try 1/4 teaspoon baking soda 1/2 teaspoon vinegar.

These were just ok. Definitely tasted “healthy.” My 3 and 1 year old boys did eat them, though. My husband said they were edible as long as he covered them in syrup and butter. Good for health, not so for taste buds.

Very nice but it is actually close to 490 calories and not at all 324 calories as stated. I am now wondering if I can trust any other given nutritional values on your website. I was so excited to try one of your recipes. I don’t think I will try anything else though, very disappointing.
Hi Phia! I just double-checked the nutrition here and got the same as I posted. If you’re calculating nutrition based on an online calculator I would make sure that the nutrition facts for each ingredient are coming from a verified source (rather than people inputting their answers).
I just double checked macros 1 by 1 on my fitness pal. Nearly dead on accurate. I got 2 kcal diff. Nutritional values are accurate.

I made these this morning for my diabetic mother and myself. Mom doesn’t like cottage cheese, so substituted ricotta. She loved them with a little whipped cream on top. I drizzled a little maple syrup on mine. Delicious, I will make them again. Used my Nutribullet to blend everything. Cooked in the electric skillet at 300 degree setting.

Gawd, these are phenomenal. The only change I made was adding a whole banana, just cause I love bananas, but that’s it. I honestly don’t think I’ve ever had a better tasting pancake in my life. Honestly just perfect.

Late to the party in these pancakes. I’m always a little disappointed by protein pancakes, but these ones are great texture and taste wise! Defrost some frozen blueberries in the microwave and mix in a little maple syrup to the berry juice and it’s the perfect topping.

So good. I added 1/3 scoop of protein powder and splash of almond milk to make it pourable from the blender. This will be a go to post work out breakfast.

When you blend all of the ingredients together in the blender, it becomes batter-like and smooth. Perfect consistency for pancakes.
Delicious and healthy! The whole family loved them. Super easy to whip up, the longest part was just cleaning the blender

I have made this several times and it is one serving, I use two egg whites, comes in less than 300 calories, I absolutely love it 😊

These are AMAZING. So easy to make and loved by both the omnivores in the house as well as those with severly-limited diets. We’ve had them for breakfasts, lunches and dinners. I use an ice cream scoop/cookie scoop to form little pancakes. Been sprinkling mini dark chocolate chips on them. We can’t use cinnamon so just doubled the vanilla for a bit more flavor. Batter is thick and much gets lost to the bottom of the Vitamix. My solution: At the end, I add some water, blend it in and pour out the thinned batter onto the griddle. It makes one large crepe-like pancake and none of this deliciousness goes to waste.

These pancakes are amazing! I usually don’t make pancakes because they make me feel sluggish and tired afterwards but with the protein in these, I don’t get that. They are so filling, tasty, and easy. I’ve made them almost every morning for the past week!

Hey, these were great, but I want to note for anyone counting macros, that the math listed didn’t add up. I had to double the recipe to get the protein per serving up. I used 1/2c Daisy low fat cottage cheese (13g protein & 90 calories), 1c of One Degree Sprouted Rolled Oats (18g protein & 420 calories), 2 vital farms eggs (12g protein & 120 calories), and a whole banana (1.3g protein & 105 calories). All of that made 2 servings. This all adds up to 44.3g protein and 735calories for one doubled recipe. Or 22.15g of protein and 367.5 calories per serving.
Hi – As for all my recipes, the nutrition facts are based on the ingredients I use. Each brand will have different nutrition facts so the info will vary a bit.

Love this recipe! I find with lots of recipes with oats in the blender like this, I end up having to blend for a long time, and there is still a bit of grittiness- which my texture-sensitive son hates. I now substitute oat flour- slightly less than the amount of rolled oats. The pancakes come out fluffy and delicious- so hard to tell the difference from a traditional wheat pancake!

I think you are incredibly talented. Your recipes look amazing (What I can see of them!!) Maybe it is my phone but your videos and ads cover up over half the screen. Reading the recipes is like trying to read thru a key hole. I tied to look at several of your recipes but it was the same problem everytime. These are the best pancakes! Make them for my kids in mini versions with 1 Tb of batter per pancake and they are fluffy and delicious! I make big batches of them and freeze for easy weekday breakfasts! Thanks so much for the delicious and healthy recipe!

These were so good!!! I have been trying to cut back on the refined sugars and sweets and found your recipe. I’m so pleasantly surprised at how tasty and satisfying they were for my sweet craving after dinner! These are delicious and easy to prepare, highly recommended!! However, I would say they serve 1 not 2, especially if you want to get any significant amount of protein.

I haven’t tried it but I bet it would work, you might have to adjust the liquid a bit to get the right consistency. Let me know how these turn out for you.
This recipe looks amazing! Just wondering if the nutritional information relates to 1 serving (2 pancakes) or 2 serving (4 pancakes). This really is the best pancake recipe ever. So delicious and nutritious!! I double the batch to make 8 pancakes each time. I even make waffles with this same recipe. So so good!!

I love these pancakes. They genuinely taste good and have a lot of protein. I do have to add some liquid to my batter like water or soy milk for it to to blend. Also, I would say they take a little longer to cook than normal pancakes.
Such a great, protein-packed breakfast! They are a bit thicker than regular pancakes due to the high protein ingredients – but love how fluffy they get 🙂

These Cottage Cheese Banana Oatmeal Protein pancakes are the best. Don’t be put off by the cottage cheese. You can’t taste it but it adds a fantastic level of protein! The recipe is super easy to make and I love adding blueberries to the top of each pancake as they are cooking. My favourite pancake recipe. 😊

Just tried these and was impressed…they’re quite delicious! I made a big batch to use up some ripened bananas I had and put them in the fridge and freezer. Then popped some in the toaster and spread some almond butter on top along with maple syrup…yum!

Made these following the recipe exactly. They came out very yummy with butter and syrup. My kids complained they weren’t like the traditional ones their dad makes, but they said these were still good and ate them all up. I like having pancakes but with the addition of protein! Tasty and easy breakfast I’ll make again.

I have tried many pancakes with oats and bananas but this is the best. Adding the cottage cheese for protein makes them ideal.
I can never get oat pancakes to work and these are no different. No matter how long or low I cook them the middle never seems cooked even though it’s hot. The texture is just not great. Had high hopes for these.
Sorry to hear that! Oats do create a much thicker batter, so I suggest using a spoon or the back of your measuring cup to spread each pancake out a bit on the pan. This should help them cook!

Made these today and added just a few mini chocolate chips. 2 year old gobbled up 1.5 and 42 year old gobbled up the other 1.5. Love how easy and quick. Next time I might try pulsing the oats separately a few times before mixing everything else in and see if I can get them smoother, but no one that ate them had any complaints! Thanks for another yummy and nutritious breakfast option!!

I don’t usually comment, but these pancakes are perfect for my 14 month old. We have done them with added blueberries and another batch with strawberries. I want to try them with almond butter. I make a big batch and then freeze them for an easy breakfast item. They don’t taste like a regular pancake to me, but they still taste really good and are a healthier version.

These are SO GOOD! They are light, fluffy, all while being moist (sorry) and with a great flavor. I used a whole small banana, so it probably had a more banana-y flavor than if I had used half per the recipe, but it was really yummy that way too! Truly the best consistency I’ve made of healthy pancakes.

We love these! I’ve made them so many times are they are always perfect, I actually just doubled the batter and baked them in 2 mini loaf pans at 350 for 25 minutes. They turned out great that way too!

I do not like cottage cheese, but these are absolutely delicious. I made ahead for my little guy hopefully he likes them. This will be my go to pancake recipe going forward honestly. So much better than normal pancakes in both taste and ingredients! Also easy to double triple or quadruple to freeze, and cost effective. I used maple syrup in place of vanilla because that’s what I had.

These are easy to make and delicious! I’m not much of a pancake person because I don’t like the blood sugar crash I get after eating regular pancakes. I don’t get that with these! I make a double batch and then cook them up to have on hand. I eat 2 or 3 with a scoop of Greek yogurt and fruit-the perfect breakfast. Tasty and healthy too!

One thing we have a little trouble with is they don’t always cook through. I’ve found some ways around this but I’ve been wondering how this would bake up like in a 9×9?
Loved the idea of a high protein breakfast but these had very little taste. I followed directions & topped with stewed strawberries & blackberries. When I added some maple syrup then the pancakes tasted ok. I love oatmeal but not in my pancakes.

I would like to make this… I am GF so i tend to make a lot of GF food for my kids, but my dtr is allergic to oats, which eliminates a common sub I used to use all the time. For recipes like this, and other oat based baking, do you have a GF recommendation to sub out the oats? Ive tried almond meal, for sure not the same!
Hi! Hmmm the oats really do make the base for these pancakes. Try these almond flour pancakes or coconut flour pancakes instead!

I’m not the sort of person to comment on recipes but I just had to because these are amazing as it seems that every pancake recipe has protein powder and these were super fluffy and were the perfect portion with leftover banana to have on top with the addition of peanut butter for a perfect combo.

Been making these for years and didn’t think I could love them any more than I already do….until today when I put them in my mini waffle maker. It worked better than my toxin-free nonstick skillet which always burned them slightly.
My blueberries were frozen and a bit chunky for the waffle maker. So I tossed them in the batter and blended until they became smaller chunks.
One thing I swear by…I always add the baking powder last — after fully blending the other ingredients — and just blend as much as necessary to fully incorporate. This keeps the pancakes and waffles nice and fluffy!

I was suspicious of how much baking powder to use. I followed the ingredients anyway because I trusted it would hopefully balance out. It came out tasting very much like baking soda. I should’ve used half as my intuition nudged me. Otherwise I think this would’ve came out tasting better.
Sorry to hear that! Many of my other pancake recipes using even more baking powder but I’ve never noticed it affect the flavor. It should just provide the perfect amount of fluff!
I was hesitant to try another protein, banana pancake recipe but needed to use the cottage cheese in my fridge so I decided to try this morning. What a game changer! These tasted like regular pancakes and were delicious.

I am not big on pancakes but I wanted to find a high protein alternative to my usual scrambled eggs. Well, these were great! I followed the recipe and added a tsp of chia seeds and blueberries. Thank you!

These pancakes were ok. They tasted fine but I felt they could’ve been a tad sweeter; my kids usually eat pancakes plain but these will need syrup or a spread. I am the type of person to reduce sugar in recipes, rather than add to them. Also these were quite flat. I typically cover the frying pan to get pancakes to puff up but even that trick hardly worked on these ones.
These are meant to be less sweet than traditional pancakes so that you can drizzle some maple syrup on top, but the key is to make sure your banana is SUPER ripe to get that natural sweetness. Make sure to cook them on medium low, too, so that they cook up nice and fluffy!
I love these pancakes! I always double the recipe and make enough for me and my daughter (16 month old) to eat. I add blueberries because they are her favorite! I just love how fluffy the pancakes come out. They taste like a wonderful blueberry banana bread pancake! I love that adding the cottage cheese gives it a bigger protein boost both for me and baby!

Can a 1/2 cup of flour be used in substitute to the oats? I am trying this recipe this weekend, but have whole wheat flour at home and no oats.
I haven’t tested these with whole what flour so I’m not sure how the texture will turn out! The oat flour you make by blending the oats tends to be more absorbent than regular flour.
