After a week of all things Thanksgiving followed by a week-long cookie party, I thought it was the perfect time to get back to basics with a delicious, easy, meal-prep-able breakfast. CHUNKY MONKEY BANANA BAKED OATMEAL is calling. In all caps, because it’s just that damn good.
This chunky monkey banana baked oatmeal is seriously the best way to wake up in the morning. It’s easy to make, packed with whole grains, healthy fats & protein to keep you satisfied, and it pretty much tastes like your fav banana bread.
Sidney & Viggo loved every last bite (even without chocolate chips) of this so it’s perfect for kiddos, too! Prep this pan of breakfast goodness for the week (it’s freezer-friendly) and add the chocolate chips for good measure. Enjoy!
What is baked oatmeal?
Instead of cooking oats in hot water or milk like traditional oatmeal, we’re adding a few special ingredients and baking it right in the oven. The result is like a delicious mix of tender oatmeal and banana bread – a sweet, yet nutritious, healthy breakfast oatmeal you’ll love.
Baked oatmeal is perfect for meal prep; you can make it ahead of time and place it in the fridge for eating throughout the week, or freeze it for later!
Ingredients you’ll need for banana baked oatmeal
This easy banana bread baked oatmeal recipe uses simple ingredients with delicious mix-ins you’ll love. Here’s what you need to make it:
- Bananas: you’ll need 3 ripe bananas (with lots of brown spots!) to naturally sweeten the baked oatmeal and give it the right texture.
- Eggs: this recipe calls for two eggs to help the baked oatmeal bake up properly. I think flax eggs could work well, but I haven’t tried it. Let me know you do!
- Sweetener: along with the bananas you’ll just need a couple tablespoons of pure maple syrup.
- Baking essentials: you’ll also need vanilla extract, baking powder, cinnamon & salt.
- Rolled oats: the base of this banana baked oatmeal is made with rolled oats. Feel free to use regular, old fashioned rolled oats or gluten free oats.
- Mix-ins: the delicious, “chunky monkey” flavor comes from unsweetened shredded coconut, chopped walnuts and chocolate chips. Feel free to use dairy free chocolate chips!
Optional recipe swaps
- For the maple syrup: you could also use a couple tablespoons of honey, coconut sugar, or brown sugar.
- For the walnuts: feel free to use pecans or omit the nuts if you’d like.
- For the chocolate chips: you can also leave out the chocolate chips or swap for blueberries or raspberries!
Can I use steel cut oats or quick oats?
I would not recommend using steel cut oats or quick oats in this banana baked oatmeal recipe as the texture will be much different than with regular, rolled oats.
Can I make this banana baked oatmeal vegan?
You can try using a flax egg or two in this recipe, but please know I haven’t tested it so I can’t be certain, although I think it could work well!
How to make banana baked oatmeal
- Prep your pan. Preheat the oven to 350 degrees F and grease a 9×9 inch pan with oil or cooking spray to prevent sticking.
- Mix your wet ingredients. Add all of the wet ingredients to a bowl and whisk them until they’re well combined. Make sure to mash your bananas first though!
- Add the dry. Add all of the dry ingredients to the wet ingredients and mix well.
- Mix-ins. Fold in the shredded coconut, walnuts & chocolate chips.
- Bake it! Pour the banana baked oatmeal mixture into your pan and bake it until the edges are slightly golden brown.
- Top it. Add extra banana slices, chopped walnuts and a drizzle of maple syrup! Sometimes I love to serve it with a little warm or cold coconut or almond milk.
Ways to serve baked oatmeal
One of the great things about baked oatmeal is that it’s delicious served many different ways:
- Serve it warm with maple syrup drizzled on top.
- Add a dollop of almond or peanut butter for extra flavor (and a boost of protein!)
- Enjoy warm and pour some milk right over the top just like cereal. The milk becomes like chocolate milk thanks to the chocolate chips!
Storing & reheating tips
- In the fridge: be sure the banana baked oatmeal has completely cooled, and then cover your 9×9 inch pan with tinfoil before transferring it to the refrigerator. It will stay good covered in the refrigerator for 3-4 days, and you can reheat individual slices in the microwave for 30-60 seconds. You can also store individual slices in airtight containers for quick, on-the-go breakfasts.
- In the freezer: once the baked oatmeal has completely cooled, cut it into 6 squares and wrap each square in plastic wrap and tinfoil. When you’re ready to eat it, place the unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. If you’d like to freeze the entire banana baked oatmeal for later, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.

Can I use another form of milk or does it need to be coconut milk? Would I use the same volume if I subbed it?
Yes feel free to use any milk you’d like!
This looks amazing! Excited to try! I’m not a fan of shredded coconut, do you reccomend substituting it for something different or just leaving out of the recipe?
I would add a little bit more oats (maybe 1/3 cup) and it should be ok!
Delicious! So easy to make and so good! Fluffy and tasty.
I didn’t have chocolate chips, but I put dark chocolate glaze on top.
Walnuts and coconut really make a difference to this oatmeal banana bread.
Thank you for such a nice recipe!
Perfect! Glad you loved it!
Just made it for breakfast. Very good!!! Thank you!
Glad you liked it! 🙂
This was great. works as snack or meal in the house. athletes here loved as healthy bite. I used almond milk as sub and didn’t have coconut shreds and it was great as is
Absolutely! Glad it was a hit!
Just had my first piece this morning, delicious! Such a great workday breakfast.
Absolutely! Glad you enjoyed!
I made this for breakfast and man…was it delicious!!! I switched out the coconut milk for almond milk. I served it warm with some fresh raspberries….also cut in to 8 slices because they were pretty big. My huband loved it too!
Perfect! Love that 🙂
This is really, really good – it tastes like dessert but it’s healthy enough to eat as a snack or for breakfast too. I only have a 9×13 pan so I did 1.5x the recipe and it came out perfectly at 45 minutes. I used some regular milk since I only had 1 can of coconut milk, and pecans instead of walnuts since that’s all I had. LOVE this!
Perfect! Glad you loved it!
Amazing recipe! I used a flax egg and added some plant based protein, what a yummy special breakfast treat!
Perfect! Glad you enjoyed!
I made this last night as breakfast for the week and I absolutely love it! It’s sweet and indulgent yet healthy, and the chocolate mixed in with all this goodness makes it the perfect breakfast to end 2020. I especially love topping it with peanut butter as the piece de resistance. I will definitely make this again in 2021!
So happy to hear that! Perfect breakfast or brunch!
This recipe is incredible! Perfect breakfast to prep for the week as I’m home with a newborn and a toddler. I added almonds instead of walnuts and it tastes good.
Absolutely! Glad you were able to prep this one!
This baked oatmeal was so delicious and soooo easy to make! Left out the coconut and used chopped mixed nuts for a delicious breakfast food this week 😍 thanks for the delicious recipe, Monique!
Perfect! Glad you enjoyed!
This was very good! Wow it far exceeded my expectations. As usual you’re recipes are perfectly balanced Monique! Not too sweet not too much of any one flavor. Really great breakfast!
So happy to hear that!
I am blown away by this recipe! It feels like we’re cheating (I made it for dessert), but I know how simple the ingredients are… We mixed in half pb and mini chocolate chips. My son suggested swirling warmed pb and jelly in it next time 🙂
Love that! So delicious 🙂
This recipe looks delicious. Can I use evaporated milk instead of coconut milk? Thank you.
I haven’t tried it but I recommend sticking with the recipe. Evaporated milk might be a little too thick, but let us know if you end up giving it a try.
This was so delicious and easy! We were running low on eggs (thanks pandemic!) so I decided to try with flax eggs. Amazing texture and so tasty. This is a new breakfast staple.
Perfect! Best way to wake up 🙂
Loved the bit of chocolate chips in this, not too sweet and so filling!
The perfect breakfast! 🙂
Absolutely delicious. I used 2 tbsp chia seeds in the wet mixture and let sit for about 5 mins while I gathered and mixed the dry ingredients. Also added raisins because I’m obsessed with raisins. Came out beautifully.
Perfect! Glad you enjoyed!
SUCH a delicious recipe!!! the best baked oatmeal i’ve ever made!!! so easy & it was the perfect breakfast meal prep! thanks Monique for the great recipes!
So happy to hear that! Perfect breakfast 🙂
Delicious!
Glad you enjoyed!
This recipe is perfect! I love the texture and the combination of all the flavors. I’ve meal prepped this the last two weeks and plan on making it again this Sunday! I can’t get enough!
Amazing! So happy to hear that 🙂
Sooo good!! I made this last week for us to have for breakfast throughout the week and we devoured it! It was super good with a little maple syrup on it!
Love it! Glad it was a hit!
This was absolutely delicious and super easy! I had it for breakfast all week, it kept me super energized and feeling healthy! I’m always looking for sweet recipes that don’t have a ton of added sugar and Monique always has amazing ones to try that are super tasty! I honestly make at least one (if not 7) of your recipes a week!
Love that! So glad you enjoyed and are loving the recipes here!
Again an other great recipe.
Since I found your website I have made so many of your recipes and all of them are delicious and easy to make.
I also love that they are low on sugar and carbs.
It was the first time I made the baked oats but not the last.
It’s great for breakfast during these cold winter months.
So happy I found you.
Amazing! So glad you’re finding recipes here that you love 🙂
Dude, my kids came back for seconds. That NEVER happens! They also asked me to make it again tomorrow 🤣 Fabulous recipe; made it exactly as is.
Amazing!! Love that 🙂
This was a delicious recipe. My family all loved it. I did use sweetened coconut versus unsweetened. I also increased the chocolate chips to a half of a cup. by doing so it was sweet enough I didn’t need to use the maple syrup drizzled on top. My husband liked it best though with the maple syrup also.
Perfect! Sounds delicious 🙂
Would it be ok to use full fat coconut milk instead of light coconut milk? Thanks!
Sure, that’s totally fine!
Made this for breakfast prep this week and it did not disappoint! So easy to make and minimal dishes (only one bowl)! Bonus my toddler loves mashing up the bananas so he was all to eager to help!
THIS IS AMAZING. And I made it without the maple syrup, walnuts, salt, and chocolate chips so my baby could have some. I can’t imagine how great it would be with chocolate! I might try some berries next time.
I’ve been a type 2 diabetic ever since giving birth to my last child 5 years ago. Breakfast is the most important meal as it starts your day. I made this in the beginning of the week and my daughter and I devoured it. We didn’t have to worry about making breakfast. This recipe didn’t cause any spikes in my blood sugar, in fact it stabilized me for the day. I’ve now made this for the 3rd time in 4 weeks. Thank you for all your hard work in perfecting these recipes. Every single recipe I make from you in 5 🌟
So delicious and decadent for breakfast! I froze a bunch of this for after my daughter was born and it was the best!
Delicous!! Subbed blueberries for choc chips and added protein powder- a delicious treat in the morning!
So easy, so good, and so customizable!
I had tried baked oatmeal (once before, not an AK recipe) and was NOT a big fan. But I was looking for a nutritious breakfast to prep for my husband and I that I could make on a weekend and have for the week (it’s real hard to find motivation to cook 3 meals a day, 7 days a week with a new baby in the house). About a month ago I found this recipe on IG, gave it a try, and now we’re hooked. Other variations of AK baked oatmeal recipes are good, but so far this may be our favorite!! Thanks!
Totally hear you on the 24/7 meals – so glad you found this one! Perfect meal prep breakfast 🙂
What a fun and delicious twist to making oats. My family loves this dish and I specifically like it, as I am a nursing mother to a newborn baby. Oats help my milk supply. The coconut flakes are key!
Absolutely! Love baked oatmeal for nursing 🙂 Glad it’s a hit with the family!
Absolutely! So happy to hear that.
This is my go to breakfast. I meal prep because I love to sleep and that way I don’t have to make my breakfast every morning. I make this at least 2 times every month. It lasts me the whole week. I love it!
This one’s amazing for meal prep! Glad you love it 🙂
This is my weekly breakfast meal prep. The bananas sweetened it enough for me so I omit the maple syrup and choc chips. Instead I add a couple tbsp of cocoa powder which is amazing. Love topped with a swish of almond milk each morning. Yum! Another amazing breakfast recipe!
I literally think about this baked oatmeal all the time. It is so so good. The perfect consistency warmed up out of the fridge! We love this to prep for busy week mornings!
Oh my gosh, so good and addictive! My MIL made this for me (like 5 days in a row) postpartum. Hearty and nutritious, bonus – my toddler and 4 year old loved it too! Loved it with a big scoop of peanut butter on top.
You all, this is AMAZING! Don’t think twice, just to make it! I did use these quantities but in a 9×13 and it still worked great. Plus it made my house smell so good… I wonder if I could get this in a candle scent… 🙂
I’ve made this oatmeal nearly every weekend for the last few months! My husband and I both love it, and I love that it feels a bit indulgent but is full of healthy ingredients. It’s been a great make-ahead breakfast for pregnancy.
Delicious! Made it this morning and my whole family including a toddler and baby loved it. Will be adding it to the regular rotation.
This was amazing. I’ve made baked oatmeal before and this was a bit of a different recipe than what I’d tried in the past. This did not disappoint. Delicious and filling. Tastes just like eating banana bread. Loved it and will definitely make again!
I have made this multiple times and will switch up the ingredients based on what I have – added blueberries instead of chocolate chips – and both ways were delicious!! I love baked oatmeal! I appreciate an easy to follow, healthy recipe any day! Thank you for your posts and sharing with us!
Such a delicious and filling breakfast treat. I also had an extra serving and froze it in a stasher bag and it came out great!
Since I found this recipe its been in my fridge I would say 90% of the time. I didn’t add any syrup or salt and I swap unsweetened almond milk for the coconut milk although the time I made it with coconut milk, it was absolutely delicious. It made me feel temporarily like I was having breakfast in Hawaii. I imagine you can use any kind of milk or add ins, but its great as is. I also now add some PB2 on stop. So delicious!
Love it!!
I combined this with the zucchini bread baked oatmeal: added about 1/2 cup peanut butter, two shredded zucchinis, and used soy milk in place of the coconut milk. I also skipped the maple syrup, sweet enough with super ripe bananas and the added chocolate chips. SO tasty! Been eating it warmed up with some greek yogurt all week.
Perfect!! So glad you enjoyed 🙂
This was so good! I have been looking for new things to make for breakfast and this is my new favorite! It’s also surprisingly filling. Highly recommend.
So glad you loved it!
Delicious! I made it with full-fat coconut milk as that is what I had. Did half cardamom as I ran out of cinnamon. This is my favorite baked oatmeal recipe so far.
Perfect! So glad you loved it!
I love to meal prep it for the week. Delicious!
So happy to hear that!
Followed this recipe exactly and it turned out amazing! Perfect Sunday morning breakfast topped with a little peanut butter and now I’m prepped for the week. Will definitely make this again when I’ve got some brown bananas lying around. Thinking it would be a great option to meal prep for baby too 🙂
So happy to hear that! Perfect breakfast and so great for meal prep!
Hearty texture and balanced flavor to keep you full and satisfied. At first, I was nervous the flavor would be too coconut-y for me, but predominantly banana flavor. Chocolate chips is a must add!
This is so delicious and filling! Love the texture and it made my whole house smell amazing while it baked!
Absolutely! Such a great breakfast.
SO happy I was able to use that lingering can of RF coconut milk I purchased for who knows what recipe lol. Made this in the start of a snowy Monday. What a warm and cozy breakfast! Topped with a little crunchy peanut butter with some greek yogurt on the side. Delicious and super easy to follow recipe!
Perfect! Best way to wake up on a chilly day 🙂
WOW! These are so delicious. Warm with a little maple syrup and slice bananas. SO good. I cannot wait for breakfast in the morning. Thank YOU. .
The best! Glad you enjoyed!
Have done both ways- chocolate and blueberries. Honestly couldn’t say which one is better both are delish but I want to try carrot cake. Have you tried? If so how much carrot?? I was thinking of leaving the rest as is or sub pecans thoughts?? Thanks Monique! Hope your feeling good 🤰🏼
Try these carrot cake baked oatmeal cups!
I absolutely love this recipe! I have made it multiple times & have shared with many friends who have all loved it just as much as I do. A staple breakfast, so nice to have in the fridge for when I’m on the go. Thanks, Monique!
So happy to hear that! Best breakfast 🙂
This recipe is SO GOOD. I used skim milk and it still turned out perfectly. It’s delicious served warm with peanut butter and syrup on top!
Such a great breakfast! Love the idea of adding PB & syrup 🙂
How could I make this a low fat recipe
Thank you
I would love to make this but it is high in calories and fat. How can I make it healthier.
Feel free to leave the walnuts and chocolate chips out or check out my other oatmeal recipes that might better suit what you’re looking for!
Our family loves, loves this recipe! We discovered it during quarantine and it became our go to breakfast for weekends and remote learning mornings. It stores beautifully for reheating throughout the week (although it rarely lasts more than a few days). The recipe as shown is pretty perfect – we love to add warm almond milk and berries on top to make it even better. My teen girls now make It on their own.
So happy to hear that! Best way to wake up 🙂
Very yummy and super easy to make. I cut it into 9 servings instead of 6 and that was just the right amount. It would be wonderful with added syrup and bananas, but I am trying to lose weight, so I resisted lol. This way it was totally easy to budget into my daily calorie intake. Love that your recipes are healthy, flavorful, easy and that I can fit them into my daily total. Every recipe I have made from your site has been delicious!
Perfect! So glad you’re finding recipes here that you love!
I’ve been making this chunky monkey banana baked oatmeal for months now for breakfast and I love it so much. I usually make a lot and freeze the rest so every morning I just thaw one, serve it with some warmed blueberries and yogurt. 🤤 🤤🤤🤤
The best! Glad it’s a favorite 🙂
I’ve been making Ambitious Kitchen recipes for over a year, and I’ve never left a review. Planning on reviewing everything I’ve made though because the world needs to know how amazing every.single.recipe.is.
ANYWAYS. Made this, love this, will make this on a regular basis. I used an 8×8 pan and this turned out amazing. I’ve been looking for a way to spice up my relationship with oats and this was SO dang good. Super easy to make and I love that I can pull a slice out of the fridge for breakfast during the week.
Next time I’ll add chia seeds for an extra bit of fiber 🙂
Amazing!! So glad you’re loving the recipes here. Great idea to add chia seeds to this one!
This was delicious! My very picky toddler loved it and I love that it is naturally sweet but still healthy! I only had two bananas but it still came out perfect.
So happy to hear that!
So, so tasty! I definitely recommend this recipe! Thanks for sharing 😊
I’m so glad! Such a great breakfast 🙂
I’m loving all of your baked oatmeal recipes! (in fact, ALL of your recipes that I’ve tried, oatmeal or otherwise…) I made this with butterscotch chips and without added coconut, because that’s what I had/didn’t have on hand, and it was absolutely delicious. I’ll definitely try it as written too. I also froze some slices, and they were perfect microwaved later!
Amazing!! So happy to hear that. And that sounds delicious!
Made this morning (followed the recipe exactly) and it’s incredible! Intended on freezing some but have a feeling that it won’t last too long 🙂
So happy to hear that!
Delicious! Everyone loved it. I also did 1.5 times the recipe and cooked it in a 9×13 pan. Used flax eggs. This makes for easy breakfasts/snacks
Perfect! So glad you enjoyed!
This recipe is so good! We too it with some Greek yogurt, peanut butter and honey.
Love that! Perfect breakfast.
I made this dish for my husband who is a very picky eater for a man his age. He ate more of it than I did, it was amazing! We opted not to do any of the nuts and I added blueberries instead and it was incredible. I am currently making it again for my family who is here for my baby shower. Cannot wait to see how much they enjoy it tomorrow!
So happy to hear that! Perfect brunch 🙂
This recipe works perfectly! It’s the perfect healthy treat to have for breakfast! I love it and shared with all my friends!
So glad you love it!
Made this for breakfast this morning. I subbed almond milk, and Bob’s egg substitute for the coconut milk and eggs. I omitted the coconut flakes and maple syrup/sugar. I only used 2 c rolled oats, added 1/4 c almond flour and 1/4 quinoa flour and 3 TBLS hazelnut butter. Family loved it! Added chopped hazelnuts and vegan chocolate chips (Guittard). Super easy recipe. I will keep experimenting with it. Winner! Thanks!!
I’m glad those swaps worked out well! Great breakfast 🙂
INSANE. I don’t even like bananas and this recipe is DIVINE.
So glad you love it!!
The pan in the video looks bigger than a 9 x 9. Do I adjust cooking time for a 9 × 11?
It’s actually an 11×7, which comes out the same as 9×9. The baked oatmeal may come out a bit thin with a 9×11 so I’d recommend reducing the baking time a bit!
This was so so so good!! Perfect balance of banana, nuttiness and chocolate! Only had regular coconut milk but still worked out. Will definitely be making again soon yummmm
Perfect! So glad you enjoyed!
This recipe is amazing! Such a great breakfast for a breastfeeding mama. I added the shredded coconut and walnuts. I did use quick oats because that’s all I had on hand and it still turned out great! Will definitely be prepping this fre
frequently* 😉
Absolutely! So glad you enjoyed!
SO GOOD! Is it possible to make a recipe too often?! I make sure to always have this in my freezer for an easy and delicious breakfast!
No such thing! So glad you love it!
This is so delicious! Do you think it would work with a flax egg?
Glad you like it! I haven’t tested it but I think it should!
Our new favourite breakfast! I used almond milk, as I didn’t have any coconut milk, and it was absolute perfection. The chocolate chips, coconut and walnuts are such great additions!
Perfect! Such a great breakfast 🙂
Sooooo good!!! Added chocolate and rasberries and it was absolutely delicious! My 6 year old insistes I post a comment here because he wanted to make sure everyvody knew how good this is! Thanks for another amazing recipe Monique!!!
Love that! Perfect breakfast!
Made this preparing for baby number 2. i know Moniques recipes are all good and this is just another good one. I have been making her “skinny banana choc chip muffins” for years. they are always in my freezer. this bake is a nice change up from muffins and really yum and so easy!!! i use whole milk because i drink that not coconut milk. everything else the same
Amazing! This one’s perfect for prepping ahead of time 🙂 So glad you’re finding recipes here that you love!
This recipe is soooooo good! My husband (who doesn’t normally do the cooking) made it for me for Mother’s Day breakfast. Delish! He prepped it the night before and made it without the chocolate chips (I’m not big on chocolate for breakfast). It might be a new favourite and staying in the rotation!
Amazing! So happy to hear that!
Really tasty and easy to make! Didn’t have coconut milk, and regular whole milk was an easy tasty substitute. A nice healthy weekend breakfast that was loved by my 6year old!
Perfect! Glad it was a hit!
My kiddos beg for this recipe for breakfast. So yummy!!
So glad it’s a hit!
Amazing! I’ve made this so many times with any kind of milk and it turns out great every time.
So happy to hear that!
This was such an easy and tasty breakfast!!
So glad you liked it!
This was delicious and easy to make. Did the flax egg and it came out beautifully.
Awesome!! So glad that it worked well and that you enjoyed it 🙂
Just wondering I onky have quick cooking oats. How would I cook it using these
I wouldn’t recommend using quick oats in here, as they’d get pretty mushy. Sorry!
This recipe didn’t work at all. I followed it to a T, didn’t use any alternate ingredients. I used a 9×9 pan even though the pictures are of a 9×13??? It is gloopy, not baked through, and almost burnt on the outsides. I had to let it bake almost an hour before pulling it, but it still wasn’t baked on the inside. This was a waste of ingredients, time, and patience.
Hi, Juliet. So sorry to hear it didn’t work out. I usually use a 9×9 pan and have never had that issue with it not cooking through/burning on the outside. What material is the pan that you used? And you baked it at 350ºF?
This baked oatmeal is oooooooooh so delicious!! It’s almost like a moist, chewy oatmeal cookie. I made the recipe using 1 T. Splenda and 1 T. maple syrup; and I didn’t have canned coconut milk so I used the kind from the carton.
I really thought the Orange Creamsicle oatmeal was my favorite, but this Chunky Monkey version is maybe even better!!
Oh YAY I’m so happy you’re loving both baked oatmeals!! Glad those subs worked out, too 🙂
This recipe comes together so quickly and easily. It’s the perfect on-the-go breakfast or snack. I used almond milk instead of coconut milk because it was what I had on hand. I also baked mine in a 12×9 glass pyrex for 35 min. I cut them into long granola-sized bars and stored half in the fridge. The rest went in the freezer.
SO glad you love this one, Kat! Almond milk is a great swap 🙂 And good idea to freeze them!
Delicious!
Yay! Glad you loved it!
Obsessed with this recipe! We make it once a week. So easy and it keeps well for the next day(s). Thank you!
I used regular oats and it was SPECTACULAR. Thank you.
Love this baked oatmeal! I portion it out and freeze it. I had a slab of it today and added some chocolate protein powder mixed in with almond milk on top. So delicious and filling after my workout.
Best Breakfast Food Ever! Have made multiple times for family (gluten and dairy issues) and finally something we all love and can eat together. Taste is exceptional. Love the texture too. I omit maple syrup in recipe (unnecessary added sweet in my opinion) and serve with a drizzle over each slice. I use almond milk instead of coconut and blueberries instead of chocolate. Oatmeal, coconut, blueberries, walnuts…doesn’t get any better than that!
I made this again today to stash in the freezer for when our baby arrives! I’ve made this several times following the recipe as written, using all of the add ins, and it always turns out fantastic. I typically store some in the fridge for the week and freeze some for another week. Take out a piece from the freezer the night before and pop in the microwave in the morning- so easy and delicious! One of my favorites for breakfast 🙂
YUM!! I love baked oatmeal and this one delicious and fluffy.
Love this bread so much ! Cannot get enough of it. Love all the chunkines and just so hearty and filling!!
I’m so happy you love it, Michelle! One of my fav breakfasts too 🙂
I make this at least once a month and eat throughout the work week. Perfect use for those bananas you don’t get around to eating! When I wake up in the morning, I legitimately get excited knowing I have this yummy breakfast to look forward to. I typically warm a slice in the microwave for ~40 seconds and drizzle with maple syrup. So delicious and so fast!
Aw yay! SO happy to hear you love this one so much.
Absolutely one of my fav breakfast recipes! I always sub blueberries for the chocolate chips and it still comes out fantastic. Perfect for meal prep during the week. I even cut the servings and froze them for coming home from the hospital with baby. It reheats so well!
Oooh love the idea of adding blueberries in here! So happy you love this one 🙂
This recipe is a weekly staple in my house. It’s delicious, simple and easy to make substitutions. I usually add ground flax and hemp seeds, sometimes swap the chocolate chips for a fruit (strawberries, blueberries), skip the maple syrup (bananas make it sweet enough for me), etc. It’s amazing warm or straight out of the fridge!
Those are all such great additions! Thanks for sharing 🙂
So delicious! I have made this twice in the last two weeks! Easy healthy and hearty breakfast. Great for meal prepping breakfasts for the week!
This is what I use for my base of all banana baked oatmeal. I usually use berries for my daughter and I and chocolate chips for my husband. I do tend to make it slightly sweeter for the berries version so I add a little more maple syrup and cinnamon but other than that love this!
Nice! Love both those mixins 🙂
Was hoping to make this as a muffin (easier to portion and freeze for me). Any suggestions on how that might effect bake time? I’m not so great at judging when baked oatmeal is done, so even an estimate is helpful. Can’t wait to try!
I’m not quite sure as I haven’t tried it, but you can just bake them until the edges are slightly golden brown and middles are set 🙂
Absolutely delicious! My kids usually do not love my baked oatmeal, but this was a big hit with the whole family. My Mom does not like oatmeal, but loved this. I used almond milk, because I was out of coconut milk, and chopped pecans sprinkled on top instead of walnuts. Thanks for this recipe!
So happy this one won them over! Appreciate the review 🙂
Hello All your recipes look so yummy but when I look at the nutrition the calorie count is crazy high. Is that per serving or is that the whole recipe?
I am a bit of a baked oatmeal snob,,,,i have tried so many in the hopes of perfecting my morning mealprep, but I don’t normally leave reviews, However, in this case I just had to comment on how good this is. I made a few tweaks based on what I had in the house….I used Almond milk instead of coconut milk, Also used very small amount the following:coconut, pecans, cranberries, mini marshmallows (cut in half) and sugar free chocolate chips. I also sprinkled the top with cinnamon sugar and the house smelled amazing as this cooked! Tasted even better right out of the oven! I will definitely be making this again. Thank you for sharing.
Thank you SO much for leaving a review! I’m so glad you enjoyed this one — sounds amazing 🙂
Breakfast staple in our house!
HOLY CRAP!!!! This was Amazing!!!! I could of eaten the whole pan !!
So yummy!! I used a smaller pan because I don’t have the suggested size. I wish I had used the 9×9 but it was still so great! Will make again!
Yay! SO happy you enjoyed it, Kate!
Hi Monique
I have been following you for awhile love all your recipes. I was looking for a baked oatmeal and came across your Chunky Monkey baked oatmeal bread. AMAZING is what I have to say. Made it for Christmas morning and since then my family has been baking it for breakfast. They freeze it for a quick breakfast on the go. I have made it several times myself. Everyone that tastes it wants the recipe. I love it with the chocolate chips and unsweetened coconut. Thank you !!
Oh I’m so glad, thank you so much!! Such a great one to freeze/reheat for quick breakfasts 🙂
Just made this for my family. We ate it with some Greek yogurt and maple syrup. So filling and delicious!
I’m so glad you loved it — yay!!
Would I be able to make this in a muffin tin?
That’s a great idea! I also have a really similar recipe for Peanut Butter Banana Baked Oatmeal Cups that you might like 🙂
Why light coconut milk instead of regular canned coconut milk?
You can use either! I often use light just to lighten up my recipes, but regular would also be great in here.
Easy and delicious! Now I need to try all of your baked oatmeal recipes!!
I love the overall sweetness and banana bread taste of this. It is just right!
YAY, I’m so glad you loved it! Thanks, Aaron 🙂
I just made this for my family brunch on Family Day. It was perfect for family members who don’t eat gluten, and I added a few extra chocolate chips…it was a huge hit and everyone loved it. I didn’t have coconut milk so used almond milk instead and it was great. I love all the GF recipes you share, thank you!
I’m so glad you all loved it!! And thank you, happy you’re finding ones you enjoy 🙂
Loved this. We make at least one of your baked oatmeal recipes every other week. Such great meal prep and so yummy!
I’m so glad!! Thank you 🥰
Delicious!! quick and easy to make. Loving your recipes
Thanks so much, Carole! I’m so glad you are 🥰
I recently made this recipe and I’m obsessed! Will definitely be making again for a meal prep breakfast sooo yummy and not overly sweet.
Oh I’m so glad to hear that! Thanks so much for the review, Maddie 🙂
Wonderful! I loved this recipe. I have been trying to increase fiber in my diet and this has been delicious addition. Froze well& I just pop a piece in the microwave for a quick healthy, delicious bfast! Thanks!!
I never leave comments but I was blown away by how good this was! I almost skipped adding the walnuts and I’m so glad I didn’t. Definitely add the walnuts 🙂
Great use for my extra bananas too!
Aw thank you, it means a lot! I’m SO happy you loved this!
YUM! Another delicious recipe. I omit the chocolate and put in frozen berries instead before baking. I make this as a weekday freezer staple and is very good even re-heated in the microwave!
Ooh love the idea of berries in here! So glad you enjoyed it, Jourdan 🙂
Made it for breakfast and it’s so delicious! Me and my husband are obsessed!
YAY I’m so glad!!
Perfect yummy grab and go breakfast! Like an oatmeal casserole, but firmer. It was great reheated in the microwave with a bit of peanut butter.
I thought it time to finally review this recipe after making it at least 10x! This recipe is absolutely wonderful, especially if served with a bit of peanut butter on top. I have made it with all types of milk, all turn out just fine except full fat coconut milk – that I found to be too rich.
I just made this! So easy to put together and really, really delicious! A new way to use up my ripe bananas. I’m going to make this for a family brunch.
Woohooo! Glad you loved it, Krysia! Hope the fam enjoys it, too 🙂
This is so freakin good! I made it for my family and they loved it! Its quick, easy and nutritious. I always add 1 heaping scoop of @toneitup Vanilla Plantbased Protein and a bit more liquid and it turns of perfect everytime! Cut into 9 squares and everyone can take in their lunches.
So glad it came out great with the protein powder + that you all loved it! Thanks for commenting 🙂
You don’t have to think, just bake this right now. You won’t regret it! Everyone loved it, even my finicky kids!
YAY so glad to hear that! TYSM for the sweet review 🙂
I would love to make this banana baked oatmeal dish, but cannot find how much rolled oats to use. The amount is not mentioned in the ingredients.
Hi! If you jump to the full recipe at the bottom of the post you’ll see that it uses 2 1/4 cups rolled oats 🙂
This recipe was perfection- My family and I really enjoyed it! No modifications were made. Thank you for this keeper!
YAY! Happy to hear that it came out great 🙂
Look amazing!
This is the best baked oatmeal recipe! Great as is but if you love rice pudding swap out the chocolate chips for raisins and you will NOT be disappointed! YUMMM! My new favourite add in. I also sub egg replacer for the eggs as I am allergic.
Must try!
Fabulous! So glad you are loving this recipe, Debbie ❤️
Super yummy, made this with flax egg and it worked great
So happy to hear that!
Made this exactly as instructed and popped it in the fridge overnight. Stuck it in the oven as I preheated for about 50 minutes and it turned out perfectly! By far the best baked oatmeal we’ve ever tried (and we’ve made a lot)!
Love it! So easy and delicious 🙂
Another great recipe! I only had half the (reg) coconut milk, so used plain greek yogurt for the rest. Perfect!
I’m glad that worked out well! Such a great breakfast.
Made this in a pan once and then in silicon muffin molds. Substituted the coconut milk with oat milk and increased the syrup to 3 tablespoons. Wonderful results and came out great as muffins!
Perfect! Great idea to make muffins!
Very good. Made with pecans as that is what we had on hand. Did not serve with extras to be mindful of calorie count.
Great! Glad you enjoyed!
Love these overnight oats for a yummy and filling make ahead breakfast!
The best breakfast! So glad you are loving this recipe ❤️🙂
Dessert for breakfast! OMG! Healthy and delicious. Everyone LOVED it. Adding to my rotation.
So happy to hear that! Glad you are loving this recipe ❤️🙂
I have tried it and it is delicious but I wonder is it 457 cal per serving?
I made this on our first week of trying recipes from Ambitious Kitchen (It came with the 1 week meal plan). My crew has loved it! I had to make it again for week two. I can’t believe how well it holds up if you make a double batch as well. We bagged individual servings so anyone could grab a bite when they were ready for breakfast. I had it with and with out the maple syrup and both ways are really great.
Thank you sooo much for this recipe ! My twins loved it and I also made double choco peanut butter oatmeal baked , they loved it too..! I think I will try all your oatmeal baked recipe haha , also my next goal will be flourless chickpea muffins 🥰🥰 and plenty more haha . You’re amazing 🤩
Ah thank you so much! So glad you are all enjoying these recipe ❤️
So yummy, thanks.
Could this be made in muffin cups like your baked oatmeal cups?
Sure! I haven’t tried it, you will definitely need to adjust the time, I would suggest maybe 20 minutes? But keep an eye on it and watch it closely as you will need less time for muffins. Enjoy.
Made this up a few days ago! My daughter had sent me the recipes and I’m so glad she did. Enjoying the Chunky Monkey Oatmeal very much. Nice alternative to the regular Banana Breads. Easy to make, very tasty and filling. Only thing I did different was use Almond Milk as no one in my area carried coconut milk. Recipe is a keeper and definitely a make again! 😊
Like eating a cookie for breakfast, so delicious!!!
Working our way through all your baked oatmeal recipes and this my be my most favorite one yet! My toddler loves it too! I used a full fat coconut milk and left out the chocolate chips. It’s literally making this snow day tropical and warm at home.
Totally one of my faves too! Glad you are all loving this one ❤️
I have made 3 of the baked oatmeal recipes from your website now. All very good. I made this one tonight. I used overripe bananas that had previously been frozen, subbed regular 2 percent milk for the coconut milk, omitted cinnamon and used Lily’s sugar free chocolate chips. I am eating it warm from the oven as I type this. I am officially a huge fan of baked oatmeal now. I eat a small portion when I want something sweet instead of indulging in something far less healthy.
My family loved the banana bread. I left the choc chip out and it was fab. I also did muffins and added raisins. Both versions are great. Thnx for sharing
This is my third time making this recipe – I love it! I didn’t have any walnuts this time so I just left them out. Do you recommend storing this in the fridge to eat over a couple of days (if it lasts that long, that is!)?
Glad you’re loving this recipe! Yes, I recommend storing in the fridge in an airtight container 🙂
Wonderful breakfast recipe that we all love!
YUM! I am so glad you are all loving this recipe ❤️
I’m just curious about the gluten free. I wasn’t able to get them in my store. I can order them online, but I got regular rolled oats. I’m just wondering if it will ruin the recipe.
Nope, those should work just fine!
Can coconut cream or hemp milk be used
I haven’t tested this recipe with either of these but I feel like the hemp milk should work, you might need to adjust the quantity depending on the consistency of the mixture. Let me know how it turns out. Enjoy!
Hi! Can you make this recipe in advance the night before? Any tips/tricks?
Hi Emily! You absolutely can. Make the recipe as stated above and let it cool completely before covering and placing in the fridge over night. To reheat, you can pop back into the oven or microwave individual sliced! Hope you enjoy it!
This came out great. I used a 9×13 pan for smaller portions. I added chia seeds, ground flaxseed and just a few chocolate chips and cinnamon granola to the top. I used unsweetened almond milk because I didn’t have coconut. And about 2 small teaspoons of coconut oil for the flavor. I tend to have a sweet tooth at night and won’t feel too guilty munching on this.
Sounds absolutely amazing, so glad you’re loving this oatmeal and it turned out great for you with your additions 🙂
Loved this recipe – so delicious warm out of the oven for breaky.
YAY! So glad you’re loving this recipe, it’s seriously a go-to for our family, never fails to impress!
I adde peanut butter and flaxseed:)
Can you substitute the egg somehow and make this vegan?
You could try a flax egg in this recipe!
Followed the recipe as written and it was perfect. So good and filling. Used Lily’s chocolate chips.
YUM! So glad to hear that you are enjoying this recipe and it turned out great for you, Mandi! ❤️🙂
That’s a great recipe, indeed!
In the process making it, following your very explanatory & detailed instructions, I modified the quantity of couple of the ingredients: Almost doubled the coconut 🥥 and tripled the cinnamon; I’m a fond lover of both!🤗.
I also added Greek currants and a variety of frozen berries to the mix.
I substituted chocolate chips with crumbled pieces of couverture chocolate👌
I used Greek honey instead of maple syrup, but I’ll definitely try that as well.
The outcome was one of the best moist ‘fruitcakes’ I’ve ever tried! Furthermore, I find it pretty innovative and original to having a cake without any flour and butter❗️The combination of oats and bananas as its base ingredients is superb!
Your serving suggestions are most helpful and inspiring👌
Can’t wait to top it with peanut butter❗️☺️
Thank you for sharing.
Best Regards from Greece! 🇬🇷 🤗
Ah this is so great! Thanks for sharing your feedback, glad you loved this recipe and it turned out fab for you ❤️
I did not have coconut milk, so I used oat milk, added cocoa nibs and toasted pecans. Very warming and satisfying on a wintry day.
Perfect! Such a great winter breakfast.
Let’s be honest here. This is a dessert not a healthy breakfast. With the amount of sugar from the ripe bananas, sweetener, chocolate chips- and the carbs from the oats- this is definitely not a good first meal of the day. This will send anyone’s blood sugar soaring.
This is dessert at the end of a meal. And a delicious dessert it is.
Everyone’s definition of “health” is different, and I’m all about using natural sweeteners from fruit + just 2 tablespoons of maple syrup 🙂 You can absolutely feel free to omit the chocolate chips if you’d like, or, of course, enjoy this for dessert!
I have made this for years now, using your base recipe and changing it up to our cravings. Blueberry-white chocolate chip-cardamom-almond extract is our favorite variation. We can make it thicker by adjusting the amount of oats… Up to an additional cup without having to increase the baking powder. These are better for traveling or on-the-go breakfast. We can make it creamier by using a smaller/deeper cooking vessel and keeping the amount of oats the recipe calls for.
Thank you very much for this very important staple recipe… 💕
Perfect! Love the idea of adding different flavor mix-ins!
I added cocoa powder and reduced the syrup. Amazing recipe!!
I made this recipe yesterday and had it for breakfast this morning. I typically don’t like coconut but the flavor isn’t overpowering. The recipe was easy to make. It was just sweet enough and it was filling. I loved it!!
The perfect breakfast! Glad you enjoyed 🙂
Made this last night so the kiddos could have it for breakfast- my son ate some for dessert instead!
I used flax in place of eggs and worked perfectly fine! Thanks 😊
Love it! Perfect breakfast or treat 🙂
Beyond delicious 😋 This is “happy breakfast” for sure! Flax eggs worked great, almond instead of coconut milk too – and I was running a little low on oats, so I used approximately 1/3cup cooked millet. Could see cooked quinoa, barley or buckwheat working just as well. Finding myself thinking “I need more chunky monkey in my life!” Your zucchini chunky monkey muffins will be next!
Perfect! Love this one, and hope you love the muffins, too!
This is the best baked oatmeal recipe I have ever tried. I always come back to this one!
So happy to hear that!
My family loved this oatmeal bake. I halved the chocolate chips and felt okay with giving it to my toddler. I was surprised at how fluffy this came out too. I’ll be using this recipe as a base in the future for sure.
Perfect! Glad it was a hit!
Made as is. I prepped for busy weeks and it’s been on repeat. It keeps me full and I feel good after having this breakfast.
So happy to hear that!
