Years ago when I was first learning how to refuel my body after a workout, I would grab whatever snack was available in the gym’s vending machine. It was 2009, and everyone was still on the low-fat diet craze. I remember gobbling down bars with weird ingredients: fake fiber and sugar, plus plenty of ingredients I couldn’t pronounce. Shortly after the bars with insane amounts of fiber came on the scene; they were filled with fiber that isn’t even found in nature, but rather made in a lab. Those sketchy mofos.
Soon after I started making my own fiber and protein packed bars filled with simple ingredients and tons of flavor.
Enter: these homemade no bake coconut chocolate protein bars packed with real, wholesome ingredients and an excellent ratio of fats, fiber and carbs. AKA perfect for post workout, or a quick on-the-go snack.
Fall in love with these homemade no bake protein bars
I first made these coconut chocolate protein bars back in 2017 and they became a true AK staple. They are one of my favorite protein bars to make and keep in the fridge.
- Protein-packed. These babies are full of 10g of protein per serving from nut butter and your favorite protein powder, making them the perfect post-workout snack.
- Plenty of healthy fats. The nut butter, chia seeds and coconut all add the perfect boost of healthy fast to keep you full and satisfied.
- AMAZING taste. These protein bars are seriously good enough to enjoy for dessert! With rich dark chocolate, nut butter and coconut they’re almost like a healthy almond joy. They’re also naturally sweetened with a little honey instead of stevia or erythritol (commonly found in packaged protein bars).
What you’ll need to make these coconut chocolate protein bars
You’re going to love the simple ingredients in these amazing protein bars. They’re the perfect way to use pantry staples in a filling, delicious snack. Here’s everything you’ll need to make them:
- Peanut butter: the main ingredient in this protein bar recipe is peanut butter. The important thing to remember is to use a natural, drippy peanut butter made with just peanuts and salt. I love Wild Friends peanut butter: use the code ‘ambitious15’ for 15% off your order!
- Coconut oil: a little bit of coconut oil helps the bars stay moist and chewy with the addition of peanut butter. It also helps the bars set up nicely and offers the addition of healthy fats and flavor (hello a hint of coconut!) Do not skip it.
- Honey: I naturally sweetened these coconut chocolate protein bars with a little honey.
- Protein powder: I love me some regular or vanilla protein powder and especially love sharing how it can be used in things other than smoothies. I like to use Vital Proteins Collagen Peptides or Bob’s Red Mill. For plant based or vegan, I like Aloha and Four Sigmatic.
- Oats: get a nice chewy texture from rolled oats! Don’t forget them. Also, be sure to use gluten free certified oats if you’re GF.
- Dried fruit: I used dried cherries in this recipe but I think you could go with whatever is your favorite or skip it altogether! They are completely optional.
- Chia seeds: using chia seeds adds a boost of fiber, protein, omega 3 and crunch. I’m in love.
- Coconut: you’ll get another boost of healthy fats and wonderful flavor from unsweetened shredded coconut.
- Chocolate: gotta do it up with that drizzle of dark chocolate. YUM.
Make these protein bars your own
Feel free to mix and match the ingredients in these coconut chocolate protein bars. Work with what you have! Here are some suggestions:
- Choose your nut butter. I love using peanut butter in these protein bars but you can use any nut or seed butter you’d like! Just be sure it’s a natural, drippy kind that’s just nuts or seeds and salt. Sunflower seed butter would be wonderful for the kiddo’s lunch boxes.
- Get creative with dried fruit. I used dried tart cherries but feel free to go crazy with your fav kinds. Chopped dried figs, dates, or dried blueberries (MY FAV) would all be amazing! Or you can skip the fruit all together like I do most of the time.
- Keep them vegan: these coconut chocolate protein bars are naturally sweetened with honey but feel free to use maple syrup or coconut palm syrup to keep them vegan. Be sure to use dairy free chocolate chips for the drizzle, too!
Can I skip the protein powder?
I wouldn’t recommend omitting the protein powder as the bars won’t hold together very well. If you don’t have any protein powder on hand, feel free to add almond flour instead and mix it in until a soft dough forms.
Coconut & chocolate protein bars in 4 simple steps
- Mix the wet ingredients. You’ll want to mix together the peanut butter, coconut oil, honey & vanilla in a saucepan over low heat so they get nice and smooth.
- Add the dry. Stir in the protein powder, then fold in your yummy add-ins: oats, dried fruit, chia seeds and coconut. Add the “dough” to a lined 8×4 inch loaf pan and press it down evenly.
- Melt the chocolate. Add the chocolate chips and coconut oil to a saucepan over low heat and melt it. You can also do this in a microwave safe dish! Drizzle it over the bars.
- Refrigerate and enjoy. Put the bars in the refrigerator to set for about 1 hour, then slice and enjoy!
How to store homemade protein bars
- In the fridge: store these coconut chocolate protein bars in an airtight container or a Stasher Bag in the fridge for up to 1 week.
- In the freezer: feel free to keep them in a freezer-safe bag in your freezer for up to 1 month. If you do keep them in your freezer, be sure to leave them out on the counter for a few minutes before serving so that they soften up a bit.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 1/2 cup natural peanut butter (just peanuts + salt)
- 2 tablespoons coconut oil
- 1/3 cup honey (use coconut palm syrup if vegan)
- 1 teaspoon vanilla extract
- 1/2 cup vanilla protein powder*
- 1 cup oats
- 1 tablespoon chia seeds
- 2 tablespoons chocolate chips + 1 teaspoon coconut oil
- 1/3 cup unsweetened shredded coconut
- Optional: 1/3 cup dried tart cherries (or dried fruit of choice)
- Fancy sea salt, for sprinkling
Instructions
- Heat peanut butter, coconut oil, honey and vanilla in a saucepan over low heat. Mix together until well combined and smooth, then remove from heat and transfer to a large bowl.
- Stir in protein powder until smooth, then fold in oats, chia seeds, coconut and dried cherries, if using. Place in a 8x4 inch loaf pan lined with parchment paper.
- Add chocolate chips and coconut in a small saucepan and place over low heat until melted. Drizzle over the tops of the bars. Sprinkle with sea salt.
- Place in fridge for 1 hour before removing from pan and cutting into 10 bars or squares. Store bars in fridge tightly wrapped or in an airtight container for up to 2 weeks.

They will last over a week in the fridge if they are properly covered. (I’ll add a note in the recipe too!) Also, if you want you can freeze them for up to 3 months (again, if they are wrapped). Enjoy!

These are great! I made a small tester batch tonight and they were delicious. The recipe is a great base and offers endless options to personalize it to your taste buds. I added pumpkin seeds for an extra crunch and swapped the honey for maple syrup. They didn’t even make it to fridge for the cooling process!

I think pumpkin seeds are the highest in protein of any seed. They would be great. Extra chopped peanuts would work also.

I love no-bake protein bars…. but can’t stand the taste of 99% of the protein powders. I was at trader joes the other day and they have a new pea-based protein powder (I didn’t know that was even a thing!). They mixed it into the little yogurt, fruit, and nut butter samples they were doing that day, and I couldn’t even taste it!!! I’m betting it would be awesome in these bars too! Love the fiber/fat/protein ratios in these, btw! My post-workout fatigue will thank you;)

If you substituted stevia (probably about 1/4 tsp or less) it would bring the sugar level WAY down. It is a low glycemic sugar anyway… I’m on a paleo diet and will try these next week w/o the honey. It still has carbs but I need some in my diet. HTH’s
I just made these into ball shapes rather than bars and my husband says they remind him of a no-bake cookie. Yum! I just used 1/2 c. protein powder and added 1/4 c. hemp seeds in addition to the other ingredients.

Most likely this is due to the protein powder and/or peanut butter you used. If you find them crumbly then add 1 tablespoon more coconut oil and make sure to use an all natural nut butter (just nuts & salt).

Made these a couple nights ago. I’m not sure what I did wrong but mine were SUPER dry and crumbly. I ended up compacting them into a 1/4 cup so they would hold some type of shape then putting them into muffin papers and feezing them. They still taste yummy, but are very messy.

I had the same problem. I’m thinking it’s because I used natural peanut butter but had to scrape the bottom to get enough – most of the oil was already gone it seems. Maybe make sure your natural PB is fresh or add a bit more coconut oil!

You could try adding coconut oil next time. I’m guessing it’s the brand of protein powder you used OR the peanut butter you used. You want to use an all natural peanut butter with the ingredients just peanuts or peanuts & salt.

Yes, it’s necessary to keep them moist and helps to stick together. You could try using coconut palm syrup or date syrup instead.
Anyone try these with just putting the chocolate chips in the bars? Thinking they’d make a great snack for my son but the chocolate drizzle on tope screams “messy, chocolate seven year old fingers heading for his shirt or my couch” 🙂
I made these last night. I used regular peanut butter, and threw the chocolate (85%) into the mix once it had cooled a bit. I also used Stevia (1/4 tsp) instead of honey. It was so good that my husband ate half of them while I was out today (stinker). I will be making a double batch next time. BTW – I used old fashioned rolled oats not instant which may be why mine were gooey and others were crumbly.
I’ve made these twice now and love them! Next time I will add either try adding a little more coconut oil as mine were on the dry side (perhaps because I am using Sun Warrior vegan protein blend) or will try a whey protein powder!

Love these! Made them this afternoon. The batter for mine also got a little dried out so I had to add a touch more agave or honey, that seemed to fix the problem. As a result, I skipped the chocolate on top to cut the sugar. So excited to have these for breakfast in the morning – love good take away meals! Thanks for the great recipe.
I made these tonight and oh my gosh they are fantastic! I used quick oats and Bob’s red mill whey protein powder and I skipped the chocolate drizzle and threw the chocolate chips right in the mix to avoid the mess I knew I would make. The chia seeds add the perfect crunch, though I think I’ll try a crunchy peanut butter next time.
Is there a away to make this with less or no honey/sweetner? The bars seemed overly sweet to me, more like a dessert than a post work out snack. I don’t typically have packaged bars so I don’t know if that’s the norm. Thanks for the great recipe!

I make these bars for my sister-in-law who is borderline diabetic.
I double the batch and use only 1/3 cup of maple syrup…still plenty sweet and so much healthier than sugar.
I have used half almond butter and half peanut butter…delicious!
I add sunflower seeds to mine and dried blueberries or chopped dates.
All variations turned out well and were so tasty.

I’ve been looking for a good homemade protein bar for quite some time, I’ve bought them in the store and were never satisfied, I’ve even gotten recipes online to not like those either, but I have not given up. I came across your recipe today and looking at the reviews thought I would give this one a try, I use Premier Protein powder and based on what your replys were about the bars being crumbly I hope my powder stands up to create something awesome, I have everything on hand except the peanut butter so plan on stopping by Trader Joes on my way home, will let you know how it turns out.

Did not turn out as I hoped. I did use natural peanut butter (salt + peanuts), however the recipe didn’t state if the peanut butter had to be smooth. I had the crunchy one sitting on my shelf. Ended up making it a big glop. I tried to solve it by running through the food process to “smooth” it up… didn’t do too much. I had a tablespoon of cold water & that worked just a bit. I ended up finishing the recipe, but honestly it’s very dry. I also don’t think I would ever go for a recipe that has such a ‘raw’ taste to the oats.
This is an awesome recipe! I was able to lower the overall calories to 187 per square by using powdered peanut butter plus water instead of regular peanut butter- they turned out great!

Honestly, it’s the first time ever I comment on a recipe online, but those things are DELICIOUS!! I only regret making them because I can’t stop thinking about eating ALL OF THEM. It is true that they fall a little bit apart, but I didn’t have enough PB as it is required in the recipe and I didn’t want to add more coconut oil, so I am sure that that is the reason. I’ve tried for so long to find a protein bar recipe that has enough protein and also tastes good and I think this is the one. Love it

Hmmm did you use a natural, drippy peanut butter? Perhaps try reducing the oats a bit next time or adding a bit more coconut oil!
These taste amazing but I think the wet to dry ratio is off. I don’t think that’s a fault of the recipe as much as the fact that different protein powders and peanut butter can vary. That said, I have a very drippy peanut butter but still only ended up adding half the amount of oats to avoid it being too crumbly. I had to add some applesauce to moisten it up enough to form bars. It worked though. I would just advise others to slowly add the dry ingredients until it comes together.

This recipe came out perfect for me! I need and love a great protein bar but cannot tolerate the artificial sweeteners and some other ingredients in mass market brands! Love it! Hemp protein powder bars are a rich source of healthy fats and fatty acids, particularly omega-3s and omega-6s. Hemp is also an excellent source of vitamin E, phosphorus, magnesium, sulfur, potassium, sodium, iron, calcium, and zinc. I made these bars this weekend for my teenage son for a quick and healthy snack and he loved them.
I didn’t have any issues with consistency, they weren’t dry at all and held together perfectly. I used a vegan hemp protein powder in mine and also added about a quarter cup of raw pumpkin seeds. I ended up using a little more chocolate chips and poured a thin layer on top instead of the drizzle.
These were quick and easy and I will definitely make them again.

I’m not a fan of protein powder, so I used almond flour instead per the recommendation and these turned out beautifully. Absolutely no problem with things sticking together and the bars are such a tasty treat. I also messed up and added the coconut to the dough rather than to the chocolate topping and it worked out just fine. Next time I make this I’ll probably use slightly less honey since they were very sweet (though my husband thought the amount of sweetness was just perfect).

I sub half of the protein powder for brewers yeast and make these into “boobie bars” for breastfeeding. An all time favorite!

I have made this bar before and it was delish but I would like to have more protein. Can you advise what would be the ratio if I add more protein powder? I do t want to add more fat though. I love the idea of chia seeds as I eat this every day for breakfast. I love all your recipes!

This recipe is very similar to my energy ball recipe but making in bars is so much easier! I love this recipe. It also works great without protein powder. I don’t like my current powder in it so I just leave it out. The recipe still sets up just fine. Delicious! Thanks for sharing it.

I just made these after eyeing them for a while! I doubled the chocolate to have a thick top layer of chocolate and used dried cranberries in place of cherries, and they are perfect! 🙂

Well, he changed his tune in a hurry. These protein bars are now a staple in his lunch everyday and I’ve written down the recipe so that, hopefully, someone else can make a batch to share. 🤷♀️ (I didn’t have protein powder, so I substituted with almond flour)

Recipe was super easy to make, but its screaming for some more moisture. I added another tablespoon of Coconut oil and these went from Gobi desert to delicious. I also used a chocolate peanut buttahhhh whey powder and nixed the chocolate chips. Super tasty!

Great recipe and flavor is awesome, however mine came out super dry and crumbly the first time. The second time I added another tablespoon of coconut oil and 3/4 cup peanut butter and it fixed em right up. Friends with Benefits chocolate peanut butter protein powder and omitted the chocolate chips and it is killer! Thanks again!
These totally give no bake cookie vibes! What a treat! I use sun butter instead of pb…just homemade roasted and blended sunflower seeds. I used organic Orgain vanilla protein powder. I didn’t add dried fruit but I did add about 1/4 c of pepitas. The kids were begging for another!
