This gorgeous Thai quinoa salad recipe was originally posted in 2013, the year I met my now-husband. I don’t want to change this post too much because frankly, I want to keep the written memories here about our first date. It’s so sweet.
What I did change about this recipe were the photography, tips, and ways to make it gluten free & vegan. Whoo hoo!

So without further ado, here’s the story about how we first met:
I just got back from vacation in Arizona. I had so many fun nights I can’t even begin to tell you. The food, the margs, riding around in a red convertible, soaking up the sunshine, swimming at night, baseball games, Mexican food, Froyo, plus a trip to Sprinkles cupcakes!
I want to be on vacation for the rest of my life.
Funny enough, I also went on a date during my trip! (The most random things happen to me, I swear.) I met him through a friend and we hit it off. On our date, we went to the zoo, ate really good Italian food, and laughed hysterically. I don’t think he reads my blog, so in my opinion, it’s perfectly okay to talk about how sweet he was.
FYI: I told him about the life-changing cookies and I think he was sold.
Seriously you guys, I have to stop telling people about the flavor profile of brown butter and those freaking cookies; it’s just too nerdy. Especially on dates.
But but but! What I really need to do is to come to grips with reality and accept that there are no more margs or FroYo in my near future. All I need in my life now is a gorgeous healthy salad.

Ingredients in this Thai-inspired quinoa salad
I love that this salad can easily be vegan and gluten-free, and it’s incredibly crunch-tastic (not a word, but should be). There’s loads of goodness here: lots of veggies and a creamy peanut butter dressing with a hint of ginger is absolutely TO DIE FOR. Here’s what you’ll need to make it:
- Quinoa: as you probably know by now, the base of this salad is made with nutritious, hearty quinoa. One of my fav grains for salads!
- Veggies: this salad is SO colorful and loaded with shredded cabbage, red bell pepper, red onion, shredded carrots, cilantro & green onions.
- Nuts: I like to add extra crunch with cashews or peanuts (especially honey-roasted).
- For the dressing: that creamy peanut dressing is made with all natural peanut butter, fresh ginger, soy sauce, honey, rice vinegar, sesame oil & olive oil. I love Wild Friends peanut butter, and you can use the code ‘AMBITIOUS15’ for 15% off!
In the end, the ingredients all meld together perfectly and somehow the salad just works fantastically — plus it’s filling too! If you want to make this a complete meal or you’re craving more, I suggest adding edamame or chickpeas.
Oh and like pretty much everything else on this blog, I love it from the bottom of my heart. Duh.
Customize this Thai quinoa salad
Have fun customizing this salad with your fav ingredients or ones you have on hand!
- Choose your veggies: you can really use any veggies you have lurking in your fridge. Chopped broccoli or shredded brussels sprouts would be perfect in here.
- Keep it vegan: simply use agave or pure maple syrup instead of the honey in your dressing.
- Try a new grain: I think this salad would be lovely with couscous, orzo, farro, or rice noodles!
- Go grain free: you could also swap the quinoa for kale, or double up the veggies to make it a hearty, grain free salad.
Looking to add a boost of protein?
This Thai quinoa salad is the perfect base for your fav meat or plant-based proteins. Here’s what I suggest:
- 1 cup of edamame or rinsed, drained chickpeas
- Cooked, chopped or shredded chicken (try this Grilled Sesame Chicken)
- Cooked shrimp or salmon (try my Maple Glazed Salmon)
The best Thai quinoa salad in 4 simple steps
- Cook the quinoa. Start by cooking your quinoa until it’s nice and fluffy. Set it aside to cool while you make the dressing.
- Make the dressing. Heat the peanut butter and honey in the microwave so that you can easily mix them, then whisk in the rest of the dressing ingredients until it’s nice and smooth.
- Dress the quinoa. Toss a little bit of the dressing with your cooled quinoa so that it started to absorb the flavors well. Then fold in all of your veggies and toss with the rest of the dressing.
- Garnish & serve. Top the salad with cashews and extra green onions, then serve with a squeeze of lime juice and enjoy!

Storing tips
Keep this vegan Thai quinoa salad in an airtight container in the fridge for about 3-4 days. This salad can easily be made the day before, too, and will be delicious served the next day!
So yes, my husband and I met while I was on vacation. A week later, he asked me to send him the life-changing cookies, and now nearly 5 years later, we’re married. Cute story, huh?

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Crunchy Cashew Thai Quinoa Salad {vegan, gluten-free}
Ingredients
- ¾ cup uncooked quinoa
- 2 cups shredded red cabbage, depending on how much crunch you like
- 1 red bell pepper, diced
- 1/4 cup diced red onion
- 1 cup shredded carrots
- ½ cup chopped cilantro
- ¼ cup diced green onions
- ½ cup cashew halves or peanuts (honey-roasted is good)
- Optional: 1 cup edamame or chickpeas
- Fresh lime, for a bit of tang
- For the dressing:
- ¼ cup all natural peanut butter
- 2 teaspoons freshly grated ginger
- 3 tablespoon gluten-free soy sauce or coconut aminos
- 1 tablespoon honey (use agave or pure maple syrup if vegan)
- 1 tablespoon rice vinegar or red wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon olive oil or more sesame oil
- Water to thin, if necessary
Instructions
- To cook quinoa: In a medium saucepan, bring 1 ½ cups of water to a boil. Add in quinoa and bring mixture to a boil. Cover, reduce heat to low and let simmer for 15 minutes or until quinoa has absorbed all of the water. Remove from heat and fluff quinoa with fork; place in large bowl and set aside to cool for about 10 minutes. You should have a little over 2 cups of quinoa.
- To make dressing: Add peanut butter and honey or agave to a medium microwave safe bowl; heat in microwave for 20 seconds. Add in ginger, soy sauce, vinegar, and both sesame and olive oil and stir until mixture is smooth and creamy. If you want a thinner dressing, simply stir in a teaspoon or two of water or olive oil.
- Add as much or as little dressing as you’d like to the quinoa. I always start out with a little bit of dressing and usually add more to suit my taste preferences. Alternatively you can save the dressing for later and add when you are ready to eat; however the flavors of the dressing usually soak into the salad so I love adding it to the quinoa first.
- Next fold in red pepper, onion, cabbage, carrots, and cilantro into the quinoa. Garnish with cashews and green onions. Serve chilled or at room temperature with lime wedges, if desired.

Cabbage! Yes please. I love that crunch and never thought of mixing it in with my quinoa for a tasty salad. Sold, add this to the list of items to try (soon).
Be warned… I suffer from vacation hangovers, I feel like the first few days post-vacation are just the hardest and everything seems terrible and you wonder how you EVER survived… then eventually you start thinking of the next vacation, even if it’s just an upcoming weekend 🙂

you can substitute peanut butter with tahini sauce…. it’ll still have all the asian flavors…..
Do you use the same amount of tahini as peanut butter??

Just made this and it is DELICIOUS!! Used bagged coleslaw that I had in the fridge, and chunky all-natural peanut butter. Also substituted liquid aminos for the soy sauce. Wow-thank you!!

Love the idea! Thanks so much! A little too much raw red onion for my taste, would dial it back next time. Also, if you like spicier dressing, add some sriracha (rooster) sauce to the dressing. Otherwise, a solid veggie option 🙂
I have NEVER had so many compliments on a dish I’ve made. I had to make a meal that would make kids, vegans, and carnivores happy. The kids loved it (and had leftovers for lunch), the vegans made a meal of it, and the carnivores ate it as a side dish with grilled chicken. Even the plumber who was called in to fix a Saturday-evening emergency enjoyed it. We packed him a to-go box and he called on my cell phone to say that he wanted the recipe!

Just made this for dinner tonight (letting it sit in the fridge for a couple hours), and it is delicious! I don’t have a microwave, so I made the dressing in a saucepan over low heat, and it worked just fine. I also couldn’t get my hands on natural peanut butter (I live abroad), and so I had to use Skippy. Sigh. It was fine, though, and I skipped the honey since I have all those unnatural oils and sweeteners. Great recipe — thank you so much!

Something acidic, like lime or lemon juice. I cannot have vinegar either due to yeast allergies, but I am allowed to have small amounts of Braggs Apple cider vinegar.

i love quinoa it has the perfect balance of carbs and protein unlike pasta or rice which is mostly carbs. And adding protein to my diet helped me slim down because protein fills you up and eliminates hunger so you eat less calories. And we all know that reducing the number of calories daily will help you slim down.

Would this be horrible if I only have dried cilantro, no fresh ginger and no sesame oil?
I Didn't have fresh ginger on hand either. I just used a half a tsp of powdered. I Didn't want to leave it out though, because it really does add that extra bit of wonderful. I just added more olive oil instead of the sesame.
@Angel, the answer is yes. Those three ingredients kind of make the recipe. Just my opinion! 🙂
Pinterest brought me here, and I happened to have all the ingredients except some veggies, that I easily replaced. The souce is way to sweet to my taste, which can be easily fixed, of course, but I loved the flavour and it's a perfect way to eat quinoa (and also cuscus!). Thank you for the inspiration!
I made this for a potluck with tahini instead of PB (allergic co-workers) and many people loved it. The leftovers were better, especially with a little sriracha 🙂

I was excited to try this….so excited that I forgot to buy the cabbage at the store. 🙁 I simply omitted it from the recipe and it turned out delicious, but I’m anxious to try it again with the cabbage added. I think it will add a nice crunch.
Made it on Sunday for lunches at work the upcoming week. Just a note to others that maybe do the same….leave the dressing off until the day you’ll eat it (this is probably obvious and maybe I just got too excited to wait). My cashews got a little soggy and by Wednesday I was missing the texture they originally brought to the salad.

Didn’t have peanut butter so tried with PB2 powder and flavor was still delicious! I over-cooked the quinoa a bit but it was still good the next day as a cold salad. I also didn’t have cabbage so just added more carrots instead. Overall, great recipe and I can’t wait to try it again with real natural peanut butter.

Just made this tonight and it was fabulous! Added chicken per my husband's preference for meat…but after eating, he agreed it would be just as good vegetarian. I also added a little red cabbage for color and more crunch, and edamame because I had it on hand. This will be a regular on our meal rotation!

I have made this salad 2 times now, not a fan of quinoa so I made it with couscous. Didn't have all the ingredients for the dressing so I used a bottled peanut sauce. Soooo Gooood!

Great recipe but I’d reduce the amount of soy sauce in the dressing. I like soy sauce but found it really overpowering and had to add more PB and honey to balance it out. Maybe 1-2 tbsps would be better?

I made this twice. For the 2nd time, I used brown rice fusilli pasta instead of quinoa. I used less cabbage and added in iceberg lettuce. Either way – a real winning recipe!
Really, really delicious… although I admit I had to make mods based on what I had on hand, such as substituting farro for the quinoa. My kids loved it too, which is a really big win! Fantastic idea to put a thai-peanut-ginger sauce over a grain. We love the flavor over noodles and tofu but never thought to try it in a grain salad. I’m allergic to peanuts too,what is the alternative to peanut butter?i read cashew or almond butter?where cani find it,or can we make at home?
Lots of grocery stores sell them. But it is easy to make your own. Toast nuts in the oven and then use a food processor until they reach the right texture, apx 15 minutes for 1# of almonds. Be patient, it seems like it will never become a butter! Toasting brings out the oil in nuts so it works better than raw.

Thank you so much for this recipe! I made it for lunch for my husband and I and we both loved it so much! I was a little weary of the lime in addition to the peanut sauce but I can’t believe how great a squeeze of lime was on it. This will definitely be added to our recipe rotation.

Made this for my vegetarian daughter, but my meat-and-potatoes son loved it too!! It’s very similar to my daughter’s favorite meal at a raw food restaurant. They do it with the quinoa still warm and pineapple.

Made this, it’s delicious! The dressing would also make a good satay-style sauce for grilled meat, veggies, tofu, etc. If I was going to use it straight like that rather than tossed in a salad, I’d probably use a bit less soy sauce and vinegar. But for this application it’s perfect.
I have NEVER written a review for a recipe yet-so for me to do so is a tribute to you. Thank you for your creative and ambitious recipes. This was easy and delicious. If I were to buy a similar (but not half and fantastic) salad at the co-op farm down the road, it would cost $5 easily for a tiny rectangular box of it. Can’t rave enough!

You can definitely used cooked quinoa! I would assume that you could freeze it!

Seriously love this recipe. I surround it with Red Curry Chicken w/butternut squash. It's a hit!!
I made this with variations due to being on vacation with limited items. For dressing, small can of pickled jalapenos in blender with soya sauce, fresh garlic and ginger. Then poured into a jar and added the oil and melted peanut butter and shook.. For salad, no nuts so used small can of peas and they weren't mushy, and added chopped spinach stems for crunch and toasted sesame seeds (no sesame oil). Used a bit of chopped brocolli. Also sprinkled some curry powder. The red cabbage made it look just like the picture and it soooo delicious. Try some variations if you don't have everything listed. I too a picture but don't know how to post it here.

I made this last night with red quinoa and a pre-made GF/V peanut sauce (from San-J brand) due to laziness, and it was PERFECT! I love cold quinoa salads, but I think this may be my new favorite! It’s so easy to pull together too. I cooked my edamame and quinoa at the same time earlier in the day, came home to chop vegs (which you could also do before hand), then just added the pre-made dressing and lime juice. i will definitely be making this again and again!

This salad is seriously delish! I think my husband will love it — he’s taking it for lunch today, I didn’t have cabbage, so subbed some very finely chopped kale which I’d massaged with rice bran oil and a bit of rice vinegar. Next time I will get some cabbage, though.
Also, my quinoa turned out really bitter, even though I had rinsed it before cooking. It was really nasty and I didn’t want it to ruin the salad. I decided to try rinsing the cooked quinoa. I rinsed it in my fine mesh strainer (in small batches), pressing it against the mesh with the back of a big spoon to squeeze the water out. I then dumped it into a wide saute pan and heated it on medium-low for a few minutes to finish drying it out. That did the trick! Nutty-tasting quinoa without that icky bitter taste.

Recipe looks great but why are you promoting use of a microwave? So not necessary for the dressing or anything else for that matter and definitely NOT healthy : ) I make a very similar dressing using almond butter and there is absolutely no reason to use a microwave (ever). You can use a whisk or a blender. Sorry for the negative post – I just hate to see someone promoting healthy eating and suggesting use of a microwave : )

Really good salad, and so pretty, but the onion really overpowered the flavor. Next time I think I would leave the red onions out. And maybe add some bean sprouts on the top for a garnish. Will definitely make again

Just finished making this for probably the sixth time. It’s my husband’s favorite, and I’m partial to it as well. I love the different textures and filling qualities of this healthy meal. I don’t do anything different to the recipe minus the color of the bell pepper – I buy whatever is on sale – tonight happened to be orange. The flavor is delicious and I absolutely love it. I doubled the recipe so we can eat this for lunches this week – it’s so good.

This recipe is amazing!!! I have it for dinner two nights a week. It tastes kind of like an Indian chaat. We try to incorporate fresh raw ingredients in all our dinners, and this recipe really hits the mark! I made a few minor changes to the sauce: more honey to taste, added chili pepper flakes, used rice wine vinegar instead of red wine vinegar, and used powdered ginger rather than fresh.
Just wanted to say that this is one of my absolute favorite go to recipes for something quick and delicious. It requires me buying minimal extra ingredients because I usually have most of them in my kitchen and it’s just SO good. 🙂

My wife and I gave up gluten and dairy a few years ago (for her health). We’re also leaning vegan now. I do the cooking at home and this is one of my favorite Summer meals. I do replace the Red Wine Vinegar with Rice Wine Vinegar (more authentic Asian). Otherwise, it’s perfect.

I made this last night for a girls night at my house. I made the dressing the day before in m viatmix so it was blended really well… and I added hoisin sauce at the end because it tasted a little too soy sauce-y for my taste. Everyone loved it, and my kids have requested it already for this weekend. I also was a little short on time, so I went through a salad bar to get the shredded carrots and cabbage. LOVE THIS RECIPE!

Just made this and it was easy and soooo good! I added red chilli flakes to the dressing and used a bag of mixed julienned red cabbage, carrots and broccoli and it was great 🙂

Just one thing, as someone who is trying to lose weight due to BP issues, and I’m also on a BP med that advises that I avoid high sodium so the med works better to flush my system of retained fluids, I notice that in the nutrition section, you fail to give the sodium content of your recipes. I know your post is older, but I wanted to let you know that I made this salad for the first time a few years ago and have shared the recipe with no less than 100 people. I bring it to pot-luck lunches, or outdoor gatherings, since I’m typically the only non-meat-eater. EVERYONE who tries it, LOVES it. I’m vegan but I brought this dish to a mostly meat-eating BBQ last night. EVERYONE loved it and I shared this link with one of the guest already. Made a few small tweaks and it was DELICIOUS! Cooked the quinoa in coconut milk and some lime and I lightly stir fried the veggies in peanut oil to make them easier for my toddler to chew. Will definitely make again!

Anyway, I went looking for a some bowl recipes after trying out a couple of diet web sites that simply would not work for me.
I think I can build meal plans around your recipes, balance them carefully and get through many healthy meals with little effort and some more careful planning.
I will still have to watch my choices as I have many food intolerances. But your site seems to be the first site that has inspired me enough to really get started.
So I have chosen a couple of recipes for the week and made a game plan that I think I can stick to, even on my worst days. Sadly, I am unable to exercise but I have been inspired by your story.

This was ok. def do not add cilantro – it ruins it. I also don’t think it needs that much sesame oil. The lime is a must and some celery might be nice too. Makes quinoa taste much better that’s for sure.
I’ve found this recipe to be fabulous as-is (it’s one of my all-time most popular!) It’s great for adjusting to your taste preferences though, too 🙂

Hi Monique! I went Vegan as my New Years resolution. Thinking I would last a month. With incredible recipes like yours I have remained a Vegan. I made this incredible Thai Quinoa salad for my friends Birthday potluck party. It seemed everyone loved it including me and my non vegan BF. I added chickpeas and the BF added some chicken from the potluck and loved it. I will be making it for my family’s Easter get together.

At the top of the recipe, you indicate it tastes better the next day too. Do you keep the sauce separate then so that it isn’t soggy the next day or do you mix it all in together and the next day it isn’t soggy?
I’ve been reading through the comments trying to find the same answer. Many people do seem to eat it leftover but I wonder about adding the sauce in all at once? I would like to make it the day ahead of when I plan to bring to a barbecue.
Have not read all the comments but did scan before sending this one – it’s in regards to honey not being vegan. So you could call this delicious looking recipe vegetarian but not vegan and then have notes on what swaps to make it vegan. Perhaps the vegans who commented are still learning or subbed something else like maple syrup or agave nectar to make it vegan.
Yes you can use agave or maple syrup to make it vegan – super easy! 🙂

Yet another win from Ambitious Kitchen! I made this salad the first time and it was soooo good. I didn’t have cilantro or green onions and it still tasted yummy. Then I made it again (with the cilantro and green onions this time) but with some substitutions for dietary restrictions – swapped the quinoa for rice and used GF soy sauce. My friend has since made it for her family and swapped shredded brussel sprouts in place of the cabbage since that’s what she had on hand. I’ll be keeping this in the regular rotation!

I was blown away by the flavor and texture combination in this recipe! Super easy to make (especially if you buy pre-shredded cabbage and carrots) and keeps well in the fridge. This would be an awesome potluck dish. Who needs Sweetgreen when you can have this!

I can’t tell you how many times I’ve made this, but it’s fantastic. I always add Chickpeas for protein and to make it a one bowl meal. I’ve also made the dressing countless times for other things like Poke bowls, salad rolls, salads, and wraps.

I made this recipe during the CO-VID isolation, so I had to modify with ingredients that I had on hand. Besides the sauce and the quinoa, I also used carrots, cashews, edamame, chickpeas, and I added chicken. It was still delicious! Can’t wait to taste it with cilantro, lime, and green onion. I’m thinking that it will take this dish to the next level. I also used aminos instead of soy sauce to cut back on sodium, but it just doesn’t have the flavor that soy sauce does. Also, I will thin the sauce more next time. Thank you for the tasty recipe!

I made this recipe with regular cabbage, slivered almonds, and without bell peppers, it tasted great! It’s also a great recipe for lunchs because the cabbage really soaks up flavour overnight in the fridge, but the nuts do get slightly soggy.

Question: Do you have a good suggestion to make this nut-free, but still have a dressing? A good substitute? Can’t do peanuts, cashews, almonds, or walnuts. We can do pecans, pistachios, pine nuts, flax seeds, hemp seeds, sesame seeds, and Brazil nuts, though. Not sure if any would be a good sub. :/
Try a sunflower seed butter or tahini (from sesame seeds)!

Just made this salad and could sit down and eat the whole bowl. Love it!! Had to make a couple changes. I made it for lunches at work and I work in the public and don’t like onion on my breath. So added an extra pepper. Didn’t know I was out of carrots so increased the cabbage. And I put in a large portion of edamame. I hope this lasts me the week but it might not. Awesome recipe. Thanks for sharing. Oh I can’t eat cilantro so left it out.

Delicious! I found this online today and made it for lunch. The only thing I didn’t add was the cabbage (only because we don’t have any in our fridge just now). It was a fabulous lunch, my husband ate extra helpings he liked it so much. Great with the added edamame.

Hands down the greatest recipe find of 2020! I typically double or triple this when I make it because it’s so good, better the second and third day after soaking in the dressing, and perfect for easy, healthy and tasty lunches during a busy workweek. I always make more dressing than called for by ratio because I think it’s dry otherwise (and it’s that good), and I add a lot of red pepper flakes for more kick. I also use almond butter instead of peanut butter and that’s a delicious swap.

This is a winner. I made it as-written, except I used agave instead of honey, and low-sodium soy instead of gluten-free. And I did add the chickpeas. I meal prepped it and made 8 servings.
My only improvement would be to increase the calorie count; 260 isn’t enough. I added some thai-inspired tofu to get it to about 400/serving

I didn’t have all the ingredients mentioned (no red wine vinegar so used white wine vinegar) and used salad leaves and roasted red peppers for main ingredients with left over chicken. Amazing. Def doing this again and can’t finish the meal (which is unheard of!!!)
This is a meal prep staple in our house. We make it at least once a month! My only suggestion is that you use a runny, natural peanut butter!
This salad has been a meal prep staple for me for the past two years, and I am still obsessed with it. It is so easy to make and the ginger peanut dressing is absolutely amazing.
One of my favorites. I look forward to make it when the weather (in New England) gets warmer. Fresh, light, colorful, crunchy. I like to add some marinated tofu for a delicious work lunch that lasts me days!

My 10 month old had just the quinoa and dressing and he couldn’t get it into his mouth fast enough. Husband loved how crunchy it was. I added some baked tofu as well and it was great!

I just made this and it is fantastic! I cooked the quinoa in the Instant Pot 1:1 ratio of chicken broth/quinoa 1 minute hight pressure and slow release for 10-12 minutes. Perfect every time & easy peasy. My whole family was very impressed by this salad and I love that it is gluten free! Thanks for sharing.

This was delicious! I used almond butter, coconut aminos, maple syrup because that’s what I had. I added hot peppers and red onion for a kick. Delicious the next day for lunch! Edamame and quinoa provide a ton a protein and fiber which kept me full. I topped it with avocado because why not!

This is a very light salad. I served chilled – great for summer. I added the edamame. I used all of the delicious peanut sauce. Also, I didn’t have red cabbage so I just used the slaw from a slaw kit.

This is so unbelievably tasty, I’m greedy so I made this into 4 portions. I put 3/4 of the sauce mix into the quinoa and then saved 1/4 and made it a thin dressing for on top! I fully recommend, I’m not usually a massive fan of peanut butter but I can’t get enough of this. It lasts me 4 lunches over 4 days and gets tastier every day!

Oh Monique! You did it again!!! This salad is fabulous! Fresh, crunchy, and super flavorful! I threw on some baked tofu, for a bit of protein, but otherwise followed the recipe exactly! This is a beautiful salad and I’m making it as a celebration of Spring and healthy eating. I love how colorful it is! My sister is a vegetarian and loves Thai food and my daughter loves Thai as well. I doubled the dressing because I could tell that it was going to be super delicious!!! And it is! I steamed frozen edamame in the bag and added salt, pepper and lime zest to it before tossing it in the salad. It adds protein and a beautiful green color. I had to leave out red onion so the hubby would eat it. I have plenty of chopped green onion to serve on the side. Will top with more of that yummy dressing, honey roasted peanuts and lime when serving. Thanks for the fab recipe!
Delicious! We added chicken to it to make it a main dish. I used almond butter since my kids are allergic to peanut butter.

Another AK winner… a well developed recipe with a lot room for customization. The dressing has a great flavor profile and salad has a vibrant color to boot. I didn’t have green onion or edamame beans but it was still delish… the only sub I did was on the extra teaspoon of oil I added toasted sesame oil which gave a nice richness to the dressing. This was a wonderful and flavorful dinner! I added edamame and chick peas for protein. Since I don’t eat any oils for health reasons I left it out of the dressing and it was still excellent! I also added cucumber and it added even more crunch, which is always good! Very delicious!

This salad is everything! So darn good….very flavorful and guilt free. I added the optional edamame and added crushed red peppers to the dressing to bring some heat. The store was out of red cabbage so I bought a bag of coleslaw mix and just used that…otherwise I followed the recipe. Will see how the leftovers hold up for lunch the rest of the week, but I will definitely make this again.

Ugh cilantro! Is there anything I could substitute for that? It looks so good but I really hate cilantro or parsley because they both taste the same to me.
This dish was incredible! I added chick peas to give it more protein and crunch. Doubled the sauce and mixed half in with the quinoa/veggies and used the rest to drizzle on top of each bowl. I also sauteed the red onion before adding, only because raw red onion can be a little strong for me. I will be making this again and again!!

this is one of my all time favorite meal prep recipes. ive made it so many time si have the grocery list and recipe memorized. the only modification i do is add chili paste or chili oil to the dressing just to add a little spice 🙂

I just made this and I am letting it chill a little before I eat it. I used a broccoli slaw in place of the cabbage and carrots and added a little sweet chili sauce to the dressing. Sample bite was delicious.

Absolutely delicious! I divided it into 5 containers for my work lunches. Perfect! I shared the link on my FB page and a friend made it the next day, using cauliflower rice instead of the quinoa. She loved it! I’m going to try that next time to add more veggies and reduce calories. I am loving your website and look forward to making more of your recipes!!

I had company with many different dietary choices visiting at the same time, One a vegan, one a vegetarian, one a carnivore and two who wouldn’t eat Mexican, Asian or Indian foods. One wouldnt eat casseroles but liked salads., I made this salad and they all loved it.!!, For the d the recipe in half and added used chickpeas, For the rest of us I added chicken breast. It was a major hit. I have since taken it to a pot luck with the same success. It is definitely a great summer picnic recipe to make because there is no mayo to spoil in the heat.

I quadrupled the dressing recipe because I like it saucy! Also I added cayenne to the dressing to give it a little kick – but Sriracha would work well too! Made the red onion and cilantro on the side to spare my husband who detests both! Love it – like spring rolls without the rice paper!

This recipe was a total win at my house! The flavors are excellent, and the texture combos perfection.
I used a little extra cooked quinoa and tossed my veggies in the juice of 1/2 lime before adding in the quinoa. I also used roasted, salted cashews that were already halved/chopped. The edamame was a wonderful addition as well.
But the sauce…it’s so delicious! The fresh ginger really makes this dish shine, so I definitely recommend taking the extra few minutes to peel and grate it instead of using bottled or paste versions.

I made this as written and added a can of chickpeas. The dressing is absolutely delicious and I will be putting this into my regular rotation. It stores well and I took it to work in my lunch for the two days after making it without a change in taste or texture.

This recipe was amazing!!! Such a hit at a dinner party we had – everyone loved it. Such great flavor. Love how many veggies are in it and the colors are beautiful. I had a sweet potato I needed to use and threw that in too. The cabbage crunch is amazing. Going to add this into our weekly rotation.

This is the best salad I’ve made in a LONG time! I made a double batch of dressing because I LOVE peanut dressing so much! I have lunches prepped for an entire week! Serving with seasoned braised chicken breast.

Every time I make a peanut sauce, it usually isn’t so good. Always feels like it’s missing something. However, this one was amazing. I used toasted sesame oil and it added so much flavour. Just waiting for my quinoa to cool so I can mix all this goodness together. I’ve never been disappointed by any of your recipes so far. Thank you. 😊
