It’s the best way to make sure your traditionally beige plate is filled with a little pop of color. I mean, we eat with our eyes first, right? So it’s time I introduce you to my new fav side dish: my sweet and savory maple glazed carrots.
Guys. These carrots are BEYOND amazing. Honestly I didn’t know such a basic vegetable could be so addicting, but Abra and I kept going back for more when we were lunching on them last week. Serve them up next to that big turkey, or just make them for a delicious side dish for your weeknight dinner. It’s always a good time to celebrate with feel-good food.

Everything you’ll need to make these maple glazed carrots
This recipe requires just about 6 simple ingredients but trust me when I say you’ll never want to eat carrots any other way after trying this. Here’s what you’ll need to make them:
- Carrots: yes, you can use all orange carrots, but I love the beautiful fall colors that rainbow carrots add to the table.
- Olive oil: you’ll need a little olive oil to help the carrots roast up.
- Maple syrup: because they’re maple glazed carrots, we’re adding some pure maple syrup.
- Garlic: get that savory, roast-y flavor with fresh garlic.
- Seasonings: we’re tossing the carrots with a little salt and pepper, of course.
- Garnishes: next, the creamy, crunchy combination (say that 5 times fast) of the goat cheese and pistachios. There’s something truly magical about this combo that makes every bite the perfect bite. I also like to add some lemon zest for brightness.

- Gorgonzola or bleu cheese

I love the texture and the beautiful colors of carrots, but sweet potato or even cubed butternut squash would be a great alternative if you have either on hand!
Storing tips
Store any leftover carrots in an airtight container in the refrigerator and feel free to enjoy straight from the fridge.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients

- 2 pounds rainbow or regular carrots, peeled
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 2 cloves garlic, minced
- Freshly ground salt and pepper
- 1 ounce goat cheese crumbles
- 2 tablespoons roasted pistachios
- Zest from 1 lemon
Instructions
- Preheat oven to 375 degrees Farenheit.
- Place carrots on a large baking sheet, drizzle with olive oil and maple syrup, and top with garlic. Roast carrots for 35-45 minutes until fork tender.
- Top with goat cheese crumbles, pistachios, and finish with zest from lemon. Serve immediately.

Hi Neyha! I would start with about a teaspoon (or a few pinches) and then you can add more once you taste them if you’d like!

These were a hit at Thanksgiving dinner! Took longer than expected because some of my carrots were bigger (finished them in the microwave). Will make again and have given out the recipe!

Hi there! I only have unsalted shelled pistachios at home. Do you have a recommendation on how to roast them and whether to roast them with or without salt?
Hi! You can toast them up in a saucepan for 5-10 minutes over medium heat. If they’re unsalted, it’s fine, just sprinkle a little extra salt over the carrots before serving!
Love these! I get compliments every time I make them! I definitely add in more maple syrup than it calls for, and use a Tuscan herb olive oil. Yummy!

Make sure all of your carrots are around the same size so they cook evenly! I subbed feta for goat cheese and it works well

My favorite addition to thanksgiving that will now be a staple at our house. Made the recipe as is. The flavor combination was incredible! My garlic got really dark so I scraped it away before serving. Next time I might add the garlic halfway through.

This is one of our go to side dishes! The goat cheese and the pistachios are so so good. I always chop the carrots down into fourths to make sure they cook more evenly.
Very yummy! I didn’t have goat cheese on hand, so I substituted with feta. Never thought of roasting carrots with maple syrup but it worked! Even my husband commented he would eat them again 🙂
