As you may or may not know, I had the BEST weekend ever with all of my bridesmaids for my bachelorette party in Scottsdale, AZ. It was such a relaxing, rejuvenating weekend full of amazing conversations, girl time, hiking, tacos, margaritas, guac + all the chips. I swear to you, my belly needs a break from tequila for a while.
Just keepin’ it real.
Anytime I get back from vacation, I find myself craving veggies in any form: I want spinach stuffed in my smoothies, hearty salads for lunch and a BIG bowl of broccoli with dinner. Basically I am the Hulk.
Earlier this year I made the most AMAZING quiche with a sweet potato crust. Plenty of you fell in love with the recipe for good reason. So I thought I’d make a new version that’s packed with protein, veggies and a little kick of spice to keep the metabolism buzzing all day. Say hello to the best turkey bacon quiche!
Ingredients in this low carb turkey bacon spinach quiche
Meet the jalapeño, pepper jack & turkey bacon quiche in all of its glory. So beautiful, so delicious and savory. Oh and guess what? There’s also a POTATO crust involved which makes me giddy inside. Here’s what you’ll need:
- Eggs: because we’re making quiche here, people!
- Yukon gold potatoes: to make that delicious, gluten free crust. You can also use sweet potatoes.
- Turkey bacon: for an extra boost of protein and savory flavor. You can, of course, use regular bacon if you’d like.
- Veggies: feel free to get creative. I used red bell pepper, roma tomatoes, spinach, and jalapeño (for a kick of heat).
- Milk: a little milk will give the egg base extra fluff. Feel free to use any milk you’d like (I used almond milk).
- Salt & pepper: remember to season those eggs.
- Cheese: I love the spicy flavor of pepper jack.
The best part about this healthy turkey bacon quiche recipe is that it’s totally customizable. Add your favorite veggies, cheese or keep it dairy free! I think broccoli and mushrooms would be delicious in here, too.
Customize this easy turkey bacon quiche recipe
You can easily make different flavors of this low carb turkey bacon quiche Here are a few suggestions:
- Turkey bacon quiche lorraine: traditional quiche lorraine typically has cooked bacon, caramelized onions and swiss cheese
- Spring veggie: 1 bunch asparagus, cut into pieces, 2 cups arugula, 1 bunch green onions, 1/2 cup shredded parmesan
- Southwestern: 1 diced green bell pepper, 1 diced red bell pepper, 1 diced jalapeño, 1/2 cup shredded Mexican cheese (top with avocado, cilantro & hot sauce!)
- Broccoli cheddar: add 1 cup finely chopped broccoli + 1/2 cup of shredded cheddar cheese
- Spinach + feta: 2 cups spinach, 1 roma tomato + 1/2 cup feta crumbles
How long will this quiche keep in the fridge?
This easy quiche recipe will keep in the fridge for up to one week, so you can enjoy a healthy, easy breakfast or lunch all week long. I’m not going to lie… usually I’m not a huge fan of savory breakfast recipes (bc I eat them for lunch instead) but this quiche has been a game-changer for me. I love eating it with avocado, cilantro and hot sauce or ketchup. Simply place the completely-cooled quiche into an airtight container (or completely cover the pan) and store it in the fridge.
When you’re ready to eat it, just reheat individual slices in the microwave for 30-60 seconds. You can also reheat slices in the oven at 350 degrees F for about 5-10 minutes.
Freezer-friendly turkey bacon quiche
- To freeze quiche: let the turkey bacon quiche completely cool, then transfer individual slices to freezer-safe bags or containers for up to 3 months. You can also freeze the entire quiche at once if you have a large enough freezer-safe bag or container.
- To reheat frozen quiche: you can either let the quiche slices thaw in the refrigerator before reheating them in the microwave, or you can simply place them straight into the microwave and heat them for about 1 minute. To reheat an entire frozen quiche you can put it back in the oven at 350 degrees F for 30-35.

Jalapeño, Pepper Jack & Turkey Bacon Quiche with Potato Crust
Ingredients
- Coconut oil cooking spray
- 3 yukon gold potatoes (the small ones), cut into 1/8th inch slices
- 8 oz organic turkey bacon
- 1 teaspoon olive oil
- 1 orange or red bell pepper, diced
- 1 large roma tomato, diced
- 1 jalapeno, seeded and diced
- 1 (5 oz) bag/container organic spinach
- 1/4 teaspoon salt
- Freshly ground black pepper
- 6 eggs
- 1/3 cup unsweetened almond milk
- Salt
- Freshly ground black pepper
- 1/2 cup shredded pepper jack cheese
Instructions
- Preheat oven to 375 degrees F. Grease a 9 inch pie pan with nonstick cooking spray. Add potato slices all around the base and sides. Cut some in half if you need them to fit on the sides. Spray the potatoes with additional nonstick cooking spray. Bake for 20 minutes. Once done, remove from oven and allow to cool for 5 minutes. Keep heat in oven.
- While potato crust is baking, cook the turkey bacon. After turkey bacon cooks, remove and transfer to a plate and set aside.
- Add olive oil to the same skillet you cooked your turkey bacon; saute jalapeno, diced tomato, and diced bell pepper for a few minutes. Then add spinach and saute for another few minutes, or until spinach wilts. Remove from heat and set aside.
- In a medium bowl, whisk together eggs, almond milk, salt and pepper.
- Add veggie and spinach mixture over the crust, then tear bacon and place on top of veggies. Next pour your egg mixture over the top. Sprinkle cheese on top along with an additional sprinkle of salt and pepper.
- Bake for 35-45 minutes or until egg sets and puffs up and becomes nice and golden. Remove from heat and allow to cool for a few minutes before cutting into 4 slices. Enjoy!

Sounds like your bachelorette party was a blast. I was in Chicago for work the last week, and even though I didn’t do too bad eating-wise, I definitely hear you on wanting all the vegetables (and water too). This quiche sounds like just the thing to get me back on track!

I made this and it is amazing! Didn’t have jalepeño, so I used crushed red pepper. Swapped in sweet potatoes for gold potatoes, threw in some leftover quinoa, and some kale too. Great way to use up veggies – thanks for sharing.

Any round pan should work! I would just be careful using glass (it can cause things to burn more easily).

This was delicious! We were surprised how mild it was despite the jalapeno and pepper-jack cheese. I might increase the jalapeno or add some red pepper flakes next time.

Great recipe yet again, Monique! Thank you! I lessened it to 6 slices of turkey bacon (6 oz) and found it to be plenty!! . Next time, to make the recipe have a bit more egg in it (and less veggie dense in every bite), I will proportionately increase the # of eggs, almond milk, salt and pepper. Just my husband and I – our own personal preference!
I also baked the potatoes longer than 20 minutes and made sure they were fork tender before the proceeding steps. I wanted to ensure that they would be fully cooked in the final product 🙂

Delicious! I doubled the jalapeños, but I didn’t really taste them, so I think next time I may leave out the tomatoes and possibly do 3 jalapeños. The first time I made it I had problems with the cheese cooking too much, so this time I waited until the quiche was cooked and then added the cheese and let it sit a few minutes in the oven (turned off) just until the cheese was melty. We will definitely make this recipe again, Thank you!

Okay, I’m not a quiche fan. Something about baking egg just weirds me out. However, this quiche I decided to give a try. I mean, all the ingredients are ones I love, so why not!
This is the first quiche I have really liked!! It’s great! Also great to meal prep for the week!
This is a very versatile quiche. We had it for dinner tonight and my husband and I both loved it! I didn’t have almond milk, so I used regular milk. I also added 1/2 cup sliced green onions (tops and bottoms). Also didn’t have a fresh jalapeño, so I substituted pickled jalapeños. I know we’ll be going back to this recipe again and again. For breakfast or dinner, it’s great. I also love all your substitution ideas so it can be changed around a bit.
My husband and I love this for dinner. I had to substitute a couple of things so as not to go to the store. I used pickled jalapeños, cheddar and gruyere cheese, regular milk and uncured bacon. I may have taken some of the healthy out of it, but I did use the veg’s you recommended. It was delicious! I am making it tonight, a week later, haha.

Could not wait to make these so I just used the ingredients I had on hand. I only had 4 slices of turkey bacon so i added some pre-cooked chicken that I had on hand to get up to the 8oz of meat in the recipe. I seasoned the meat with 3T of canned chopped mild green chillies ( not a Jalapeño fan) and I T of salsa to give it that mexican flare. Also seasoned with TJ’s onion salt, chili lime seasoning, South African smoke seasonings blend and some cumin. I only had about half of the recommended spinach and 3/4 of a red bell pepper so i added about 1/2 cup chopped onion and 2 chopped garlic cloves to the vegetable mix. ( Saved my tomatoes for the salad I was making to go with this dinner).
My eggs were small so I added 2 more. Dusted the top with Nutritional yeast & paleo powder grain free almond & flax mix and used 1 heaping cup of grated pepper jack for the topping.
This cooked up beautifully in my convection oven in just 30 minutes.
Best quiche EVER!!!! Thanks for the inspiration – our new favorite and when I have more turkey bacon will do that for a breakfast quiche!!!
I made the jalapeno pepper jack quiche. Due to allergies, I left out the jalapeño, I substituted coconut milk for the almond milk, substituted 8 Oz cubed turkey hot dogs for the turkey bacon and used plain jack cheese. It was delicious 😋

I made this for a ladies brunch and it was a big hit! I’m not much of a crust person and my body does better without gluten, so I loved the idea of the potato crust! I don’t think I put enough potatoes on the base. Next time I’ll slice them thinner and layer them, overlapping a bit, because they will shrink when they bake. It still turned out great though and held together for serving!
