Years ago I set out to make you a meal prep breakfast that wasn’t just eggs or oatmeal (though I do love both). Since I’m a huge fan of restaurant-style breakfast sausage, I decided to make you a delicious, healthy version of sausage patties with juicy blueberries and a hint of sweet maple syrup.
These maple blueberry turkey sausage patties are filled with lovely herbs and spices and are bursting with blueberries in every bite. They’re super easy to make and freezer-friendly, too, so here’s your sign to skip the Jimmy Deans and keep a stack right in your freezer!

What makes these turkey sausage patties healthier?
Compared to their pork sausage counterpart, these homemade turkey sausage patties are much leaner and have less fat than the traditional pork version. However, they definitely don’t skimp on juiciness! They have incredible flavor, are freezer-friendly, and cook up in less than 10 minutes.
Ingredients in this blueberry breakfast sausage
These deliciously juicy turkey sausage patties are filled with flavorful herbs and spices, plus a wonderful hint of sweetness. Here’s what you’ll need to make them:
- Ground turkey: because these are turkey sausage breakfast patties, you’ll need some 93% lean ground turkey. You can also use ground chicken!
- Maple syrup: these sausage patties get a hint of sweetness from pure maple syrup.
- Herbs & spices: add amazing flavor with fresh garlic and sage, dried thyme, ground cumin, ground ginger, allspice, cayenne pepper, salt & pepper.
- Blueberries: you’re going to LOVE the bursts of blueberries in every bite. Feel free to use fresh or frozen!
- Oil: you’ll need a little olive oil or coconut oil to cook the sausage patties.
The key to keeping turkey sausage moist
You may be wondering how to keep these turkey sausage patties from drying out upon cooking, and I’ve got the answer! It’s critical to use a 93% lean ground turkey. If you use too lean of turkey meat, the patties will end up tasting dry. A little fat adds flavor and moisture, so be sure that you do not use extra lean ground turkey or ground chicken.
How to make blueberry turkey sausage
- Mix the patties. Start by adding all of the ingredients besides the blueberries to a large bowl and mix everything well with clean hands. Then, carefully incorporate the blueberries into the turkey sausage mixture.
- Shape the patties. Form 8 even-sized patties about 1/3 inch thick. Make sure the blueberries are nice and tucked into them so that they don’t pop out while cooking.
- Cook & flip. Cook the turkey sausage patties in a skillet with a little oil over medium heat for about 5 minutes. Then flip and cook 4-5 minutes more until they’re fully cooked.
- Serve & devour. Serve your blueberry breakfast patties warm with all of your go-to breakfast sides! See below for plenty of inspo.

Storing tips
Store any leftover breakfast sausage patties in an airtight container in the fridge for up to 3-4 days. Simply reheat them in the microwave or on a skillet when ready to serve.
Make them ahead and freeze them for later
- Freeze before cooking: shape your turkey sausage patties and place them in an airtight, freezer-friendly bag or container. If you’re stacking the patties I’d recommend putting wax or parchment paper in between the layers so that they don’t stick together. Freeze for up to 3 months. To reheat, you can either let them thaw in the fridge before cooking or cook them directly from frozen – you may just need to cook them a bit longer from frozen.
- Freeze after cooking: let your breakfast patties cool completely before placing them in airtight, freezer-friendly containers or bags. As I mentioned above, put wax or parchment paper in between the layers of patties if you’re stacking them. Freeze them for up to 3 months. To reheat, let them thaw in the fridge before reheating in the microwave or on the stovetop for a couple of minutes on each side. You can also reheat these directly from frozen – I recommend doing so on the stovetop.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 1 pound 93% lean ground turkey (do not use extra lean)
- 2 garlic cloves, finely minced
- 1 tablespoon pure maple syrup
- 1 tablespoon fresh chopped sage (about 4 medium sage leaves)
- ½ teaspoon dried thyme
- ½ teaspoon ground cumin
- ½ teaspoon ground ginger
- ¼ teaspoon allspice
- ¼ teaspoon cayenne pepper
- ¾ teaspoon salt
- Freshly ground black pepper
- ⅓ cup fresh or frozen blueberries
- 1 teaspoon coconut oil or olive oil (for cooking)
Instructions
- Place all ingredients besides the blueberries and oil in a large bowl and use your hands to mix until well combined. Add in blueberries and gently incorporate them into the meat. Form into 8 even sized patties, about 1/3 inch thick. Make sure the blueberries are tucked into the meat or they may pop out upon cooking.
- Add 1 teaspoon coconut oil to a nonstick skillet and place over medium heat. Add turkey patties and cook for about 5 minutes then flip and cook for another 4-5 minutes or until fully cooked.
- To prepare a plate, pair two breakfast patties with 2 fried eggs. Drizzle sausage patties with just a tiny bit of maple syrup and enjoy! Serves 4, 2 patties each.

I finally got around to making these and they were so good! My kids gobbled it up in minutes. I didn’t have fresh sage so I used 1/2 tsp of ground sage in line with the other spices, and the flavor was on point! This will be in our rotation for sure! Thanks!

Wondering how these would hold up if I excluded the garlic and all seasonings besides salt? I figure it might be kind of bland. But we have some issues with garlic, black pepper, and spice in our family so I usually just keep it to salt as far as seasonings.
They should hold up just fine, but you’re right, they might not have the same bold flavor! Still could be good though 🙂
These are my go to for a quick breakfast or protein snack. I’m following the AIP protocol so I eliminated the allspice, cumin, pepper and cayenne and they are still super yummy!

I made these using extra lean turkey, because that’s what my husband brought home from the grocery store. I added an egg white to improve the moisture content, and they turned out beautifully. The fresh sage added a wonderful scent, and the blueberries provided a nice little pop of sweetness to nearly every bite. Overall, they were unexpectedly delicious! These didn’t last long in my house. I’ll be making them again and again.

These are great to meal prep for the week. Paired with 2 eggs, makes a very filling and high protein breakfast. I used 1/2 tsp ground sage instead of fresh. I would do 1/4 tsp cumin or none at all next time, as I think it adds a slightly odd flavor that doesn’t mesh with the rest. But overall very good!
Another absolute winner! I loveeeee that this is made with everything I typically have in the pantry, prep was literally 2 minutes and kid/parent approved! I airfried a couple and pan fried a couple and I’d def recc pan frying. SO MUCH FLAVOR. My 1yo devoured them and I may have eaten a couple standing over the pan also 😛 thanks again AK for always being so consistent – never a bad recipe!

I made this with the recommended turkey, and everything else, but I added some Worcestershire sauce. I made extras and froze them uncooked in the freezer. I made one for lunch and it was sooooo delicious. Will definitely keep in my rotation. Will try the apple one next. Thank you!
I was looking for a sausage patty recipe so I could make homemade McGriddles and I’m so glad I found these. I made them smaller than the recipe (I got 14 out of one batch) and they’re so tasty!!!! I used ground chicken and added a bit more frozen blueberries but otherwise stuck to the recipe to a T. I cannot wait for breakfast sandwiches next week! Will definitely make these again soon!
