I’ve been on a real big breakfast kick lately and I just can’t stop EATING THIS FRENCH TOAST. OMG, it was so unbelievably good I actually found myself licking the plate. #help
Tony and I love doing big breakfasts on the days we wake up really hungry. Think hashbrowns, eggs, bacon and now my BEST ever french toast recipe, that can easily be made either healthy or indulgent — your choice.
There are a few secret ingredients that make this french toast truly extraordinary and out of this world addicting. Take a scroll, read the post and then whip up this french toast for your family (or just yourself) ASAP!
What you’ll need to make the best healthy french toast
This easy french toast recipe can be made a little bit lighter, using more nutritious, healthy ingredients but still taste just like the traditional french toast you know and love. Not only is this french toast dairy free, but it’s also perfect for customizing to make it your own! Here’s what you’ll need:
- Eggs: you’ll just need 2 eggs in this recipe to cook up the french toast.
- Dairy free milk: I love using light coconut milk from the can for extra flavor, but you can also use unsweetened almond milk, regular coconut milk, or any milk you have available (including cow’s milk!).
- Extracts: we’re using both vanilla extract and almond extract for a unique, wonderful flavor. The almond extract really takes it to the next level.
- Cinnamon: you’ll just need a bit of cinnamon to perfect spice the french toast.
- Sweeteners: we’re just adding a little brown sugar or coconut sugar to perfectly sweeten each piece of french toast. Coconut sugar is a bit of a more nutritious option, whereas brown sugar is more classic.
- Optional: add a hint of citrus by zesting one orange! Totally optional, but so dang delicious.
- Bread: the star of the show! You’ll need 6-8 slices of thick cut bread. If you want to make this a little more nutritious and healthy, go for a sprouted, whole grain bread!
- Toppings: feel free to get creative! I love a drizzle of pure maple syrup, banana slices and berries. A drizzle of nut butter is also delicious.
What’s the best type of bread to use for french toast?
I recommend using a thick white bread or brioche for this dairy free french toast so that it stays nice and thick and doesn’t get soggy. It’s best to use bread that’s a day or two old as well so that it holds up nicely. Some people prefer to even lightly toast their bread for a slightly crisp french toast on the outside. Up to you!
If you want to make this french toast a little bit healthier, I suggest using a sprouted whole grain bread. Ezekiel, Silver Hills Bakery and Angelic are all great brands we love!
My secrets to EXTRA delicious french toast
There are three ingredients that make the very BEST french toast a little more unique and so crazy addicting that you’ll keep going back for another slice. Don’t skip these if you want maximum flavor:
- Coconut milk. I absolutely LOVE using light coconut milk from the can for a delicious custardy, sweet flavor. However, I’d found that almond milk is just as great. Oat milk would be lovely, too!
- Almond extract. It sounds crazy but a little almond extract creates the most addicting flavor that will keep you coming back.
- Extra cinnamon. I use an entire 1/2 tablespoon of cinnamon in my french toast recipe and trust me, you’re going to love how it coats the bread and gets nice and toasty when cooked.
Making gluten free french toast
Feel free to use your favorite gluten free bread in this recipe! A thicker, fluffier gluten free bread is even better!
Can I make this french toast recipe vegan?
Unfortunately, I would not suggest leaving out the eggs as the french toast will cook much differently. If you happen to try out an egg replacer let me know how it goes!
How to make french toast in 3 easy steps
- Make the egg mixture. Whisk together the eggs, then add the rest of your ingredients (besides the bread + toppings) and mix together in a large shallow bowl.
- Heat your pan. Heat a griddle or skillet over medium high heat and add a tablespoon of butter. Butter is always best for cooking french toast. However, if you want to keep it dairy free, use a vegan butter or coconut oil!
- Dip, cook & enjoy! Lastly, dunk both sides of a slice of bread in the egg mixture for no more than 10 seconds total and place dunked slices on your skillet golden brown on both sides. Add your fav toppings and enjoy!
Tips for making the best french toast
- When you dunk your slices of bread in the egg mixture, be sure to only leave it in for 10-15 seconds total to avoid making it soggy.
- Cook your french toast over medium high heat with butter to ensure it gets nice and golden brown. The butter will brown while it cooks and create delicious flavor.
Fun toppings for french toast
The best part about this healthy french toast is the endless combinations of toppings you can add! Here are some yummy suggestions:
- Add a boost of protein with plain or flavored greek yogurt. We love vanilla!
- Top with any fruit you like: bananas, berries, sliced apples, pears, citrus fruits or make it tropical with mango or pineapple and coconut!
- Make a pb&j french toast by spreading peanut butter and jelly over the top of the french toast.
- Make this healthy french toast a little indulgent by adding whipped cream, maple syrup, a sprinkle of powdered sugar or even chocolate chips. YUM.
Can you freeze french toast?
Yes! This dairy free french toast is perfect to freeze for later.
- Let the french toast cool completely, then transfer individual slices to freezer-friendly bags. If you’re putting multiple slices into one bag, wrap each slice in plastic wrap or place wax paper in between the slices.
- The healthy french toast will stay good in the freezer for up to 2 months!
- To reheat: simply stick frozen french toast slices in the toaster or heat them up in the oven for 5-10 minutes until heated through.

My kiddos & I LOVE French toast, but this one knocks our everyday French toast out of the park. We’ve made it twice over the Christmas break since you posted it. The almond extract abs vanilla almond milk are the perfect addition!! The first time I made it I used challah from our local bakery. Today I used our standard thick multigrain sandwich bread. Thanks Monique!
Amazing! So happy you all love it!
I’m eating these right now and it’s literally the best french toast I’ve ever had!!! I’ve never had orange zest in french toast but it makes them 100% more tasty and flavorful! I didn’t have any brown sugar or coconut sugar so I just substituted in natural maple syrup instead and it was still delicious! Definitely will make this french toast recipe again!!! Thanks a lot Monique 🙂
Amazing! So glad you loved it!
My fam LOVES French toast, and this version quickly has become our favorite recipe. The mix of almond and vanilla extract with the almond milk/coconut milk was delish. We used challah and it was perfect.
So happy to hear that! Love using challah 🙂
It won’t let me put 5 stars but this recipe is just that. This French toast recipe is so good and just what the week old bread in the cabinet needed. Thank you!!!!

Absolutely! Glad you enjoyed 🙂
the best french toast I have ever eaten!! We used a loaf of brioche and it was to die for !!!!!
I’m so glad!!
Made this for my mama today on Mother’s Day and she was BLOWN away! She always used to make the classic, quick french toast for me so this was a glammed up twist for her! Went with the lite coconut milk instead of a different milk and I truly think it made the dish!
Amazing! Love the idea of using coconut milk. Glad it was a hit!
Loved this recipe. The vanilla flavor and orange are amazing. My family loved this french toasts. Thank you Monique for sharing your recipes. Your recipes never disappoint.
So glad you enjoyed it and that you’re a fan of my other recipes! Thanks for the love 🙂
This was amazing! We used almond milk and didn’t have almond extract but the flavor was amazing. Husband working from home could smell it downstairs on and came up to snag a few pieces!
I’m so happy you guys loved it, Kylie! Yay!
I made this for the family at the cottage this summer, and they insisted I make it again before everyone left! Absolutely the best French Toast I have had.
10/10 for a French Toast WIN! I used Sourdough bread and man it was tasty! I went ahead and used the whole loaf so I could have plenty in the freezer. It’s a family hit now!
Awesome! So happy that you guys loved it 🙂
Oh my goodness!! This is the best French Toast EVER!!!! I put half coconut ,half almond milk because that’s what I had in the fridge. Monique does it again, Her recipes are the bomb ❤️
I made this today using brioche bread, whole milk, and no almond extract. My husband said “better than a restaurant” and my picky toddler actually ate some.
Easy and delicious recipe
I’m so glad you loved it, Suleima!
This recipe needs one more egg!
Totally fine to add an extra egg if you need to/if your bread is super absorbent!
Going to try this regardless but, do you have a nutritional amount for sodium?
Sorry, we don’t calculate it because the amount of sodium can vary so much depending on the brand of ingredients you use. Hope you enjoy this recipe, though!
Delicious recipe! Made this French toast for my mother’s birthday, and she said it was so tasty she didn’t even need any drizzle of maple syrup. We loved how the butter made it crunchy on the outside yet soft inside. Served with a side of Greek yogurt, berries, and banana slices — was the perfect brunch!
Nice! I’m so glad to hear that you and your mom loved it–thank you! ❤️
So great! I can’t wait to make these again and again!
So good! Had leftover French bread boxed up from dinner out at a French restaurant and oh man this recipe was perfect for it! So delicious exactly as written and can’t wait to make again!
Oh yes that’s perfect! I’m so glad you loved it!
Wow. Best recipe for french toast I’ve ever tried. Family 100% loved it. The almond extract really adds something. Used challah I was saving for french toast, and oatmilk. I’m completely in love with this recipe. My husband had seconds and he has never had seconds when I make french toast! My picky son who hates new foods, loved it.
That makes me SO HAPPY! Thank you, Jen! I’m thrilled the whole fam loved the recipe 🙂
Delicious! I used the brioche loaf from Trader Joe’s and it was perfect.
Absolutely delicious.. Best and only French toast I have ever made.
Perfect! So glad you found this recipe ❤️🙂
Just made this morning. With this recipe I was able to make 8 peices of french toast (2 per person). My family loved it! It is true to its name… ” The French Toast WE Can’t Stop Eating”! It was so good. The only differance I did was used Lactose free milk and used brown sugar. Great job! This will be my new way of making French Toast.
Literally the best I have ever had! We did not have coconut or almond milk so I used 2% dairy and swerve instead of brown sugar. It was so good! Definitely making it again.
This is pretty good, however I used Dave’s white bread, which apparently, is terrible for French toast 😅 it basically always makes French toast casserole because it gets soupy. For highly absorbent bread, I’d recommend adding 1 egg to this recipe and only very quickly dipping it into the mixture then shaking it off. Otherwise, very good!
This recipe was amazing! The flavor was great and my family loved it!
This recipe is not dairy free, since it calls for butter. I clicked on it because it claims to be dairy free.
As mentioned in the recipe, Jessica, I would recommend subbing vegan butter or coconut oil for this recipe to make it DF. Hope you give this recipe a try.
No modifications; guaranteed hit for all!
What did you do with the orange zest?
If you want to use it, you can whisk it right in with the rest of the wet ingredients.
Was absolutely delicious! My husband loved this and he normally isn’t a big fan of French toast. I had really thick bread and decided to use a little bit more than a cup of almond milk, maybe an extra 1/8 of a cup and used 2.5 eggs (1 egg was super small farm fresh). Anyway, it was so yummy and loved the addition of almond extract.
Amazing! So glad it was a hit!
This dish turned out delicious! I usually do not make French toast, but I came across this recipe and decided to try it. I followed the recipe exactly as written and decided to use the 1/2 cup orange juice, 1/2 cup almond milk suggestion. My husband and kids absolutely loved it! I served the French toast with a side of breakfast sausage and mixed berries. This is now a new favorite in my household. Thanks, Monique!
Love that! Such a great breakfast!
This was so good! I used some sourdough sandwiches bread made a few days before, didn’t have any almond extract to add but it was still the best French toast I’ve had! Im going to get the almond extract to try for the next time.
Perfect! So glad you enjoyed!
